- Today, my family requested chile rellenos and sopa de fideo. Cheese chile rellenos are a wonderful meatless dinner idea. The sopa de fideo is another childhood comfort food. This entire meal is a labor of love, but it's totally worth it.

INGREDIENTS
6 poblano peppers
6 large eggs
8 oz low moisture mozzarella cheese
1/2 cup flour
1/2 tsp onion powder
SOPA DE FIDEO
8 oz vermicelli
1/2 small onion
4 cups water
3 Roma tomatoes
3 cloves of garlic
1 1/2 chicken bouillon
1/2 ground cumin
sprigs of cilantro
salt & pepper to taste

Chile Rellanos are my favorite!
My respect and admiration for Mexican women soared to the Heavens when i first learned what the “process” is to make these, my most favorite of all the Mexican food. To have them come out perfectly like this I don’t believe there’s any shortcuts. My mouth is watering just watching you make these. I made them exactly once 😳, and then decided I would try very hard to always live near a really good Mexican restaurant! 😂. Now, I’m hungry 😋

She’s an amazing cook! Since i’m not amazing, I will try this but everything that went into the blender I will replace with tomato sauce. So toasted vermicelli, onions, tomato sauce and water should make a really good meal.

Your Rellenos look wonderful. I haven't made then in a long time. Sometimes I would make them a little different. I would dust them in flour, dip in beaten egg and then cover them in flavored bread crumbs or Panko and fry them. Yum. Have a wonderful day.

I char my poblanos in the air fryer at 400 for 12 minutes. Removing the skin is soooooo much easier than roasting on fire or under the broiler.
