I just followed your instructions here and made the very best chile rellenos I ever tasted. Absolute perfection. My egg coating was light and fluffy but had the perfect crisp on the outside. Wish I could share a pic. I will say this meal is a little time consuming to make but WAY worth it. I'm not Mexican but several in my family are and they all were blown away. My stepfather (78) said it reminded him of his mothers and we took a moment to pray for her. Thank you.

I grew up next door to a Mexican family that owned a restaurant. My parents took us there like 3 times a week. I ordered the chili rellenos every time. They were small and so delicious, I've made it my goal to try every restaurant I go to to find them again. Making them at home would be awesome. The family moved away as we did, but they became my extended family and we talk all the time. They were the best part of my childhood.

Claudia, I have watched quite a few videos on Chili Rellenos where the Chilis fell apart, perhaps overcooked prior to stuffing, but your video, young lady, is by far THE BEST. Absolutely perfect. As a lover of Mexican food and culture. At 79 being Scottish I have mastered Tamales and Enchilladas, but cannot wait to try your Chile Rellenos. Your instructions made it seem simple. I'm not a real fan of rellenos because of the egg batter but let me just say THESE WERE AMAZING! The batter was light & crisp & I almost cried when I tasted the sauce. It had so much flavor! I love these chile rellenos & will definitely be making them again. I cooked this today for my friends and they went crazy. I have a pizza oven so I took my chilis to meet their fiery doom at 900 degrees. It worked perfect! I let the sauce reduce by a little more than half and this was definitely the right choice. Make the sauce first 9:27, let it simmer, and move along with the recipe while stirring occasionally. 10/10!

Oh my word is this the best chile rellenos my husband and I have ever had and that includes eating a relleno at many restruarants. I made this and it was absolutely out of this world. I put my relleno in a bowl and sauced it like Claudia did, my husband put his on a plate and sauced it. They were both perfect. The sauce is amazing and we have decided to put it in some of our home made Spanish rice. Thank you Thank you Claudia. Just absolutely Devine!!!!!!!. Do yourself a favor when you make these and follow the sequence that she does it in, I didn't and was a bit back asswards and will do in the sequence that she does it in. You absolutely can make the sauce a day ahead of time. I fired the rellenos and then let them cool, I cooked them in the morning and we reheated the rellenos in a 400 degree oven for 15 minutes and they came out absolutely perfect. My husband and I feel like we ate a meal from heaven. Please try this recipe and enjoy all the wonderful flavors.

Well, this wasn't my first rodeo where chile rellenos are concerned, but following your recipe yielded my best result. I love eating them, but even with your excellent instructions, I'd never call them easy ... maybe once a year is enough, while buying at a restaurant the rest of the time. Melting the cheese first provided me with a "why didn't I ever think of that" moment. So much easier stuffing the poblanos with the cheese the consistency of warm putty. The worst mistake I made was not having my fry basket already heated in the oil before putting the battered peppers in, so the first two stuck to the basket, but the next two came out pretty close to perfect. Thanks for the recipe, and you have a great site and are inspirational!

I made chile rellenos for the first time ever last night after watching your video. My oldest son (35) announced after a few bites that they were better than any Mexican restaurant in our area. And it's one of his favorites, so he's quite the connoisseur. I had expected it would take several attempts and some adjustment to get them to where we might like them, but this was a winner first time out of the gate. Thanks!

I live in China, and, being from So Cal, I miss this dish. Here in China, our cheese options are very limited, but our chile options are unlimited, so we can susbstitute mozarella for the cheese (the only other option unless you order online is the local version of Kraft singles). Great technique here.

In 1968 a family moved from Oaxaca to California next door to us.
Mom loved to cook and made friends with our neighbors.
As a result she learned all the most important Mexican dishes.
    Chile rellenos were my favorite.
I haven’t had anything close to my moms since.
    Except mine.

I am so glad to see somebody make them authentic. This was a fond memory growing up. Our Dad would make these for us fairly regularly. He had been stationed close to the border in the military, when he was younger. Very unfortunately, you have to order "chilis pablanos", in restaurants to get anything similar. If you order "chile rellenos", you get a little pile of seasoned beef and a few pieces of pablano.

This was a great recipe. I was never able to keep the egg coating on the chilie while frying them. A quick tip to roast the Chile was in the oven. The flour coating was magic. I accidentally ripped a few of the poblanos and the egg coating still kept everything together. Thank you Claudia. Your a life saver. I shared this with my Mom and she was amazed too.

I made this, but with a meat/rice/veg/cheese filling. It came out delicious. It was quite a bit of effort, and cleanup. But you taught me well, Claudia! My household thanks you (and all your helpers).
Original post: I have to try this! I probably am not half the cook you are- but please allow me to make an observation and a suggestion: When you were slicing the onion, you dragged your chef's knife across your cutting board while holding it perpendicular to the surface. That's a problem for two reasons- it will dull your knife quickly and you might wind up with wood shavings in your food (they won't hurt you, but you probably don't want them there). There are two easy solutions: Lay the knife on its side at about a 10-15 degree angle, and gather the onion onto it (what I usually do), or to just pile up your sliced food on the board- turn the knife over and use the back to scrape the board, instead of the sharp edge.
Now I can finish watching and enjoy the rest of your demonstration before I try it myself. Thanks!
