Edited to update! I no longer weigh out my 2.0 flour, I just scoop and level (biscuits were coming out like hockey pucks! 🤣), I also don’t add any more flour or cut them out. I use the exact same recipe below, but I spray a 1/4 cup measuring cup with cooking spray and drop them onto a silpat. They have been coming out perfect! Wes, try another version of biscuit using Victoria’s 2.0 bamboo/almond flour, they are so good! I bake in a 425 convection oven for 12 min and have also subbed homemade Greek yogurt for the sour cream. I also mixed every bit of it in the food processor with the dough blade, super simple. I do weigh my “flour” at 84 gm/per cup needed as it always seems light when I scoop the flour. *I no longer weigh this, just scoop and level 3 cups* recipe by Brett Railey. 3 cups New Standard 2.0 flour (almond/bamboo) 4 1/2 teaspoons baking powder 3/4 teaspoon salt 1 cup sour cream 3/4 cup heavy whipping cream Additional flour (maybe 1/8 cup in a sifter) to dust my working surface and the biscuit mix as I "worked it" by patting it out and folding it over onto itself (4 times). Mix dry ingredients together in a bowl with a whisk, then fold in the sour cream with a spatula until mostly incorporated. Begin pouring the heavy whipping cream into the bowl while using the spatula to incorporate it until there are no more dry crumbles in the bottom of the bowl. The mix will be tacky at this point. Dust your working surface with flour blend and scrape out the biscuit dough onto the surface. Dust the top with flour blend until you can pat it into a 1" tall round without it sticking to your hands. Fold, dust and pat the dough over onto itself (like closing a book) 4 times finally ending up with a 1" tall round of dough. I used a 3" biscuit cutter (you can use whatever size you have or the rim of a glass dipped in flour) and got 7 and a half biscuits if you count the ugly biscuit I made from leftover scraps (waste not, want not) at roughly 3.2g net carbs each. I baked them in a 450 degree over for 12 minutes but watch yours until they are appropriately browned as ovens vary. I didn't use nor need any sweetener for browning Both sour cream and heavy cream are cold.

I love you, guy!! This was a fantastic video that I really appreciated, so thanks very much for making it. I would also love to know what pots and pans you use, if you care to share.
Oh yes.ive just found your channel.its been almost one year that ive stop keto when my mom past away.its been 4 days that im back on keto an i found you.what a blessing.you gonna help me so much with those recipe on your channel. Thank you
I love Victorias 2.0 flour it work wonders the only thing about keto recipes is how many eggs go into them and with her flour with the egg whites protein things can be to eggy tasting, so I went to my old recipe box and made ginger snaps substitute flour for the 2.0 flour and sugar for (in this case I used Alouse) and they came out wonderful my hubby ( a die heart sweet addict) was shocked when I told him they were sugar and flour free. So now I am having a blast with my old standard recipes.
Just a quick reminder: If you want cookies (and other things) to be crispy, you need to use an erythritol blend as allulose doesn't crisp up - it might brown up - but it doesn't crisp up. (Victoria has a vid on her channel about the "ultimate" sweetener for baking.
Great List. Gotta get one of those wisks. I use unbleached parchment sheets that are the size of my baking sheets. They are flat in the box, no folds. Makes life easy!
Thanks for the great info! Learned about some things to help on the journey (Splenda Magic Baker, NutPods, Oxo pastry brush). Saw a nice Spiral Whisk at HomeGoods for $2.99. Looked to be good quality. Oh, the parchment!!! I usually get the Kirkland but the tear off is really bad, and it's too big for the sheet pan, so will look into your rec! Best wishes!
I too made those ATK biscuits after seeing your video. Wow. Sold. Victoria has since moved on to Einkorn flour. Since I am quite happy with the bamboo fiber flour 2.0, maybe the crowd will go forward with 3.0 and I can start finding the bamboo fiber again. Thanks for suggesting these smaller items. I am going to try out several of them. Hope you and your loved ones have a Happy New Year!
It's Wes Shoemaker day for me. I tuned in to watch the Biscuit Recipe again...cuz I finally had time and ingredients. Just ate two, warm from oven, did not disappoint! Now I'm ready to try making something with the remaining flour...thinking popovers! Then, your gadgets and gizmos....I picked up through your links the Magic Baker, the Oxo Silicone Brush, the perfected xanthan gum and I would have bought the Oxo Brownie spatula, but it's sold out. I'll try that another day. Thanks Wes, you're my favorite and I'm loving your journey. Happy New Year!
15:33 Since I don't use avocado oil anymore, I got my hands on an animal fat spray! Wagyu Beef Tallow spray! It's pure! Nothing else but the wagyu beef tallow.
I'm always so excited when i see you created a new video. I've been on a diet break since November. Now I'm getting back on track. But I'm not sure that i want to lose much more weight. At 170 i feel very small because i was in middle school the last time i was this small. Lol
The most perfectly timed upload ever. Re-starting keto after a journey of experimenting with low fodmap and ayurveda for digestive issues. My entire keto cabinet had expired and been tossed. Needing to resupply, this video is such perfect timing 👌 thanks so much! 😃
Been following you for years and love your videos! Am a bit surprised you chose Thrive Market as your sponsor though. They are far more expensive than getting the same products, especially keto and low carb, than even Walmart and Amazon, plus local grocery stores. We're talking same brands and sizes. You pay a membership too. Tooooo many gimmicks and codes for seemingly discounted prices but you're still paying more! You deserve better sponsors. 🤭🙈
I agree, if he wants to promote Thrive, he needs to talk about exactly what he gets from them. For me money is very tight, so I buy the cheapest things I can find.
I use bamboo fiber for almost all my cooking. I can not use any almond flour do to my son's allergy. And bamboo fiber has been awesome. I make mug cakes and brownies with it when we want something sweet.
Have you checked out the bamboo flour from India? After buying some that cost a pretty penny, l had found it for sale by an Indian company for dirt cheap. Thought I'd try it next time.
@@beverlyclark1994 I looked for bamboo flour or fiber through Google and it had different companies that sold it. So, l kept looking through them and found some very cheap ones that came from India. That was after l already bought that experience German brand. If by chance you purchase some tell me how you like it. It would be interesting and cost effective to know.
I no longer support Amazon and so many RUclipsrs rely on this marketer for products they promote. I prefer searching for smaller companies (US) or any company but Amazon. I research company philosophy and business practices and Amazon has completely turned me off. So, I will investigate other places to shop for these great recommendations. Love your channel!!
@@docholliday4546 Because I feel that strongly about the subject and because until recently, I thought this was a FREE forum. Apparently, there are many, Amazon included, attempting to curtail free speech.
I just found your channel this week and absolutly love it. We are new to the low carb way of eating. My wife and I are both in our late 60's and pre-diabetic. We have started baking with almond flour but quite frankly don't mind the taste, it's the texture we dislike. Can we run the flour through the food processor to make it much finer and still expect the same results in the recipes? Thanks Dave
I checked today $24+ for the bamboo fiber. I loved that Nut Pod had eggnog for December. Will love the precut parchment cause I use the 1/4 sheet pan in my oven!
For some reason you haven’t popped up on my feed in a while, but you are looking really great! And as somebody who has been on keto for a little over five years now, I love all of us OG’s still working it! The keto life is working for me and I love you and your content!
I just love watching your show! You are unfailingly honest, and everything you put your stamp of approval on has been spot on! I already have most all of the gadgets you are recommending, but there's always room for a spiral whisk! 😊❤
I have been purchasing cage-free/pastured eggs...did notice the orange color of the yolks, but noticed a bad odor. thanks to you, I now know what the odor is.
Thank you, Wes! Love your videos! If you are ever in the Ojai area check out Ojai Olive Farm. They grow organic olives and make their own oils. They have a tasting room on site plus partner with a balsamic vinegar producer. Really fun to visit the farm even though it’s a bit tricky to find it. Just give them a call to get directions. I visit them once a year to stock up. It’s the only oil I use. Fun to visit the area. Ojai is a low key small town and close to Santa Barbara. Might be a fun weekend getaway for you and your sweetheart.
WOW! That sounds amazing and right up my alley! We have been traveling up that way more lately, so this sounds like a fun day trip. Thanks for sharing, Karen! Hope you are well. Happy New Year!! 🧡🧡
Thanks for the tips. I agree about mixing different types of sweeteners. Adding a little stevia to a predominantly erythritol based recipe (and vice versa) makes a more natural sugar taste for me. Just recently started using allulose and found the same thing.
Aloha & Mahalo for all you do...🍍🍹🥥 I have to thank you for your recommendation of the Kitchamajig... A few months ago (maybe prime day?) you posted a link to it on Amazon & because more is always better, I purchased a 3 pack for $11... I LOVE THIS ITEM... Thanks for all your suggestions💐🌴🌺
Good luck on your ride! I use to also do the rides - I have friends living with HIV and I lost a cousin who had hemophilia when we were around 11 years old. It was the early 1980's and he wasn't allowed to return to school. Thank you for the informative video!
I did a video on this a while back. Showing people the stuff that I used to make my kiddo life successful. Course I don’t eat that way anymore. I’m carnivore so I don’t need most of the stuff I showed, but it certainly does help people.
Great question. All of them are shelf-stable, but I have always stored my coconut flour and almond flour in the freezer. They contain fat, and I find it stays fresher for longer in the freezer in an airtight ziplock bag. I keep the oat and bamboo fiber in the pantry, because they don’t contain fat that can go rancid. Hope that helps!
thank you Wes. You have given me some good ideas. Love the whisk. Think it will make a good choice for my first purchase. Love the instrument that brakes up the meat with an up and down and a twirling motion. Actually purchased mine at the Dollar Tree the black one doesn't melt and yo can't beat 1.25
i got some useful info from this video, thanks! I saved a Fry Daddy scoop when I tossed the appliance about 40 years ago. It’s great for removing bones from stock. It doesn’t have a wooden handle like the Kitchamajig, but I prefer the wire handle. And that handmade spoon is cool, but I just use a flat tipped silicone spatula to scrape the pan when I stir thick liquids.
Wes, I only recently started following you. You are just amazing and funny and so true to the Low Carb Keto lifestyle. I love so many of your recipes and reviews and challenges. I would like to issue you an official challenge! I think your viewers and myself will truly love it. I really enjoyed watching your three part series on the "Best keto pizza crust battle" from two years ago. I think you should do a keto pizza crust video review using Victoria's New Standard Keto Flour 2.0! I have personally made a pizza crust with her flour and I can say hands down there is no other crust that can compete. The pizza is amazing. All I can hear you saying in your review is lets address the 3 T's. Taste is a 10, Texture is a 10, time is a 10. Please make this happen. I look forward to you accepting this challenge. Thanks for all you do, and all you review.
I just want to tell you that i love your personality and demeanor.. your so informative and thorough, and honest… please keep doing what your doing. And I will order off of amazon if it supports you in anyway…Love from Ohio, Cindy
Hi there, newbie to your show. I have seen about 6 episodes and am having fun with you! Regarding the handmade spoon, I believe it was Sunny Anderson from the Food Network who first mentioned it and I THINK it was on the show called The Kitchen. I am a big fan of Sunny, I love her because she is such a real person and always upbeat. She is also very approachable and will respond to her audience. I try not to stalk her so she won't think I am weird. HAHA! Her food is delicious, though it's not low carb or keto. P.S. Sunny is a lefty!
NO, NO, NO! LOL. I *sometimes* put a cheap wooden spoon in the dishwasher, but it truly ruins them. This spoon is a $40 handmade work of art. I quickly hand wash it after each use and oil it with cutting board oil a few times a year when I oil my boards. 😊
Cooking with Mel in Australia has made her own bamboo fiber and CK flour blend with bamboo, almond and beef gelatin. Affordable but for those who live in that part of the world. Shipping to U.S pricey
I really like the sauce whisk from pampered chef because of its silicone coating. I can use it in my nonstick pans without worrying about scratching. If I am not using the nonstick skillet, it still works but I prefer the ones you mentioned since they are better at getting the stuck particles that increase flavor. It took me awhile to get used to the silicone brushes but it’s all I use now. They’re great! The stir spoon looks interesting. Never seen it before. Your suggestions are great. Learned much of this by trial and error. Your info is great for others who are starting out in the kitchen. Have a great new year!
I purchased the magic garbage can and love the automatic top for when you have messy hands and packaging. I love it so much I also purchased a smaller version for the bathroom.
I did manage to get the bamboo fiber, wow what a mess it makes…lol. I have made Keto Upgrade cinnamon rolls with it, so good! Have not tried Victoria’s blend yet to make the biscuits. Thank you for sharing your favorites!!
I recently seen a bag of stevia. I looked at the ingredients and it had maltodextrin in it. But the packets of stevia didn’t contain it. And it was more expensive in the packets. It’s so irritating that companies do these to people.
Happy New Year Wes lookin good....I LOVE this video you showed some products that I will be purchasing especially that wooden spoon and the brownie spatula LOL Definitely!! and I am dying to try Thrive Market...I have already mixed up and use Victorias NUT FREE 2.0 flour and made a loaf of bread that rose and toasted and tastes nice...cant wait to do dream bisquits... .....Thank you for your honesty and may God bless you with health, happiness and continued success on RUclips and in your Keto/Lowcarb Journey.........Julianna NC

3 cups New Standard 2.0 flour (almond/bamboo)
4 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup sour cream
3/4 cup heavy whipping cream
Additional flour (maybe 1/8 cup in a sifter) to dust my working surface and the biscuit mix as I "worked it" by patting it out and folding it over onto itself (4 times).
I didn't use nor need any sweetener for browning
Both sour cream and heavy cream are cold.
I too ended up with hockey pucks. Thank you!! for this recipe.
Thank you
You got this! Wishing you all the best and sending condolences for your mom. 🧡
Thanks, Janice! 🧡
Scandinavian to use a spiral whisk all the time
Thank you , all very helpful 🥰
I too made those ATK biscuits after seeing your video. Wow. Sold. Victoria has since moved on to Einkorn flour. Since I am quite happy with the bamboo fiber flour 2.0, maybe the crowd will go forward with 3.0 and I can start finding the bamboo fiber again. Thanks for suggesting these smaller items. I am going to try out several of them. Hope you and your loved ones have a Happy New Year!
She still uses the bamboo fiber in the einkorn flour recipe
Well, darn. I am just tired of buying new stuff so I will stick with what I have. @@RosemarieHallameyer
I stick with her almond flour bamboo fiber flour recipe . 😊i won’t be using eikorn recipe since it’s wheat and not keto.
The bamboo fiber is $25... How much is used?
Amazon has been having bamboo fiber and I think blue diamond has it no also
Love your channel.
This is perfect timing Wes. I'm climbing on the keto wagon again today😊
Haven't looked at your channel in a few years. You're smaller! You look great!
Wow! Thanks, Marcy! Happy New Year! 🧡
I have a vintage kitchen Mac gig found at thrift store . My mother had one when I grew up
Hold on to and treat it well! They are prized possessions these days! 😊
Lol
You can't get too thin on keto, as long as you eat plenty of protein.
Sacrificial first slice! Love it.
I so enjoyed watching you. 😊
Thank you! Appreciate the comment. :-)
Love what you are doing. I appreciate your favorite baking food products. Totally trust you. Thank you and God Bless. Y
The most perfectly timed upload ever. Re-starting keto after a journey of experimenting with low fodmap and ayurveda for digestive issues. My entire keto cabinet had expired and been tossed. Needing to resupply, this video is such perfect timing 👌 thanks so much! 😃
Wes, you look fantastic! Love your channel and your informative help in our keto journeys! All the best in the New Year!❤
Been following you for years and love your videos!
What do you use instead of Avocado oil or spay I am allergic to Avocados. Thank you
I like the coconut
I use bamboo fiber for almost all my cooking. I can not use any almond flour do to my son's allergy. And bamboo fiber has been awesome. I make mug cakes and brownies with it when we want something sweet.
Have you checked out the bamboo flour from India? After buying some that cost a pretty penny, l had found it for sale by an Indian company for dirt cheap. Thought I'd try it next time.
@@CynthiaSelf-eh6ul bamboo flour and bamboo fiber are the same thing from what I have read. Where did you see it so cheap?
@@beverlyclark1994 I looked for bamboo flour or fiber through Google and it had different companies that sold it. So, l kept looking through them and found some very cheap ones that came from India. That was after l already bought that experience German brand. If by chance you purchase some tell me how you like it. It would be interesting and cost effective to know.
I loved raising our own chickens, the eggs were so deeply orange and tasted great. ❤
And I'm finding that ordering directly from the companies is often cheaper than buying their products on Amazon.
@@docholliday4546 Because I feel that strongly about the subject and because until recently, I thought this was a FREE forum. Apparently, there are many, Amazon included, attempting to curtail free speech.
@@docholliday4546 Back at ya!
Thank you for your opinion. It is helpful to me.
@@docholliday4546 So, I take it you're NOT a fan of free speech? Sad.
Hey Wes, I watched you video of your favourite things from 5 years ago and I noticed that you are much leaner today, bravo.
Thanks Dave
You need a research oxalates, you definitely don't want to overdo almonds in your diet.
I checked today $24+ for the bamboo fiber.
I loved that Nut Pod had eggnog for December.
Will love the precut parchment cause I use the 1/4 sheet pan in my oven!
I like the brownie spatula as a replacement for the usual off-set spatula for smoothing batters, frosting items, etc. Great video.
Oh, that's great idea!
For some reason you haven’t popped up on my feed in a while, but you are looking really great! And as somebody who has been on keto for a little over five years now, I love all of us OG’s still working it! The keto life is working for me and I love you and your content!
Thank you for this!
I never know where to start or with what. This helps more than ya know! 🙌
@@HighfalutinLowCarb happy new year to you too!
We love to visit Ojai when in CA. Such a beautiful and charming town. We will visit the olive farm next time!
I really like the Splenda blend. No aftertaste and does great in baking.
Thank you so much! I love to watch you!❤ I made chaffles , and want to get stuff you showed! Hope and pray you have a great New Years!!
Thank you, Pam! Hope you have a great New Year as well! (Save a chaffle for me!) 🙂
Future battle request-2024 pie crust. Is there one that’s at all close to a flaky pastry?
Great video. Love your content. 🤗🤗🤗
Yes, that spiral whisk is amazing!
Thanks for the tips. I agree about mixing different types of sweeteners. Adding a little stevia to a predominantly erythritol based recipe (and vice versa) makes a more natural sugar taste for me. Just recently started using allulose and found the same thing.
Yes. That’s what these blends offer. They are combinations of multiple sweeteners already mixed together. :-)
THANK YOU WES!!!!
Thank you so much! 🧡
Aloha & Mahalo for all you do...🍍🍹🥥
I have to thank you for your recommendation of the Kitchamajig...
Thank you for riding for the cause! This will be my first year, but I’m very excited. And nervous! :-)
I love your new video. You are such a blessing. Thank you.
You are so kind! Thank you, Nancy!
I did a video on this a while back. Showing people the stuff that I used to make my kiddo life successful. Course I don’t eat that way anymore. I’m carnivore so I don’t need most of the stuff I showed, but it certainly does help people.
One of your BEST videos!!! I plan on buying several of these items :) Thank you, Wes!!!
Thank you for this! I paused the video and ordered the bamboo fiber before there's a run on it again 😊
Haha! Wise decision! 😜
Thank you bunches! You are looking fabulous! Have a wonderful 2024! It’s going to be a GREAt year!
This was one of your best videos! Very informative and helpful! I only wish Thrive Market was near me.
Thanks so much!
Question, do you store your nut flours in the refrigerator, also do I need to store things like oat fiber and baking items in the refrigerator?
Great question. All of them are shelf-stable, but I have always stored my coconut flour and almond flour in the freezer. They contain fat, and I find it stays fresher for longer in the freezer in an airtight ziplock bag. I keep the oat and bamboo fiber in the pantry, because they don’t contain fat that can go rancid. Hope that helps!
great video as always, I want to wish you and your husband a happy new year and a lot of health
Thank you so much. Wishing you a wonderful New Year as well! XOXO
Hold up, is he married to a man?
love your channel. keep up the good work and thank you
Loved it!
Hi there! New to your channel, but enjoyed learning about the products.
Thanks for stopping by and leaving a comment. Welcome aboard!
As a heads up, I have been finding parchment paper sheets at both the Dollar Tree and the 99c Store, so keep an eye out for them. 😍
Thanks for that information, I will search for them tomorrow.
I love your videos. Your awesome!! Do you have a video on what you eat in a day or your favorite things to eat?
I just got my bamboo fiber from Amazon. Thanks for all of the recommendations!
thank you Wes. You have given me some good ideas. Love the whisk. Think it will make a good choice for my first purchase. Love the instrument that brakes up the meat with an up and down and a twirling motion. Actually purchased mine at the Dollar Tree the black one doesn't melt and yo can't beat 1.25
Dear Wes, Have a blessed and happy new year!!!
Looking good! 😊
Thanks for the recommendations, Wes!
i got some useful info from this video, thanks!
Have missed u so much!! Great 2 c u again❤
Can you include a link to the video
Glad to see you in another quality video missed seeing your videos
OMG! I WAS ABLE TO GET THE ZIMMERMAN BAMBOO FLOUR TONIGHT!! HAPPY NEW BAKING YEAR!
WOO HOO! :-)
I use the Wholesome liquid Allulose to make my whiskey sours. Lemon juice, Wild Turkey 101 and Wholesome liquid Allulose and I'm ready for bed. LOL
Yum!! Would probably make a mean Mint Julep, too! 😋
Bro! I gave up the occasional Amaretto Sour because of the carbs. With your suggestion I'm going to enjoy one again! Thanks so much!
I didn't think I was going to learn anything but I did. You look great by the way… Good job!
Yay! Thank you! Appreciate you watching and commenting. 🧡
Gosh great ideas! Appreciate your input.
Thanks Wes! Always quality content and presentation! Great timing for me!
Thank you so much for this Wes❤ Let’s do 2024. COME ON!!
I also have a kitchamajig thingy. My mom has hers too. They are aweome.
Good to see you and have a blessed 2024
Finally managed 2 sub 2 ur channel, so happy❤
Yay! Welcome aboard! :-)
Amazon has the bamboo fiber. $24.90 for 2lbs
Great video! Do you put the hand made stir spoon in the dishwasher?
NO, NO, NO!
Thanks Wes. I loved this video. You explained everything so well. I really appreciate the info.
Love the gadgets.
Thx
I really like the sauce whisk from pampered chef because of its silicone coating. I can use it in my nonstick pans without worrying about scratching. If I am not using the nonstick skillet, it still works but I prefer the ones you mentioned since they are better at getting the stuck particles that increase flavor.
It took me awhile to get used to the silicone brushes but it’s all I use now. They’re great!
The stir spoon looks interesting. Never seen it before.
Your suggestions are great. Learned much of this by trial and error. Your info is great for others who are starting out in the kitchen.
Have a great new year!
Make any recommendations for a food food thermometer?
This was very helpful. Thank you so much! Happy New Year!
Thank you for this video. Great ideas ❤
Glad it was helpful!
I have all of these items except maybe 2!! Looking up the Treen spoon now. Thank you and Happy New Year to you and your family!
I purchased the magic garbage can and love the automatic top for when you have messy hands and packaging. I love it so much I also purchased a smaller version for the bathroom.
I didn’t know there was a smaller version! 😮
I did manage to get the bamboo fiber, wow what a mess it makes…lol.
I have made Keto Upgrade cinnamon rolls with it, so good! Have not tried Victoria’s blend yet to make the biscuits.
Thank you for sharing your favorites!!
I am going to make those cinnamon rolls tomorrow. Glad they worked out for you!
Thank you, Wesley! Happy New Year! 💋💋
Publix has a low carb 1g per serving creamer. Trust me its good. Carmel and hazelnut. Very flavorable. It has the Starbucks label on it. Its 1g carb for 1 Tbsp compaired to 5g for reg creamer.
ATK biscuits were worth the expense!!! My husband's Christmas biscuits and gravy were a huge hit!
Love hearing that! 🧡
