I wonder if doing a 50/50 blend of Victoria's keto flour and parm cheese with the egg whites would give you a less salty less cheesy but wholly satisfying hush puppy. Worth a shot? Or maybe a 1/3 each of parm, VKF & straight coarse almond flour (like Aldi's) would give a more cornmeal like texture (with egg white as the binder).

I think I would add a tablespoon or two of almond flour to the real Parmesan recipe cause I don’t care for pork rinds but it might make them breadier like a real hush puppy. Looks good!!

I found myself digging the filling out and eating the crispy shell. Now I think I need to try frying something with parmesan and egg whites as the breading.

I know it sounds weird, but I once made a keto cornbread by using a blended can of baby corn since baby corn is mostly "cob" lol, therefore low in carbs. Maybe something like that can be done here? Some blended baby corn? 😂 🌽

I line Airfryer with parchment paper (crumple to make it more placeable) to avoid contact with toxic non stick coating. Possibly not stick to pan either. I wonder if reducing cheese and adding pork rind powder would make difference?

(That’s all the Parmesan I had that was already grated 🥴) I have had hush puppies before, years ago, and can’t say that the texture was right. However, as I finish writing this, I am also finishing (eating, that is) off the Parmesan pearls. Absolutely love them! Thanks so much for this recipe. So easy, even frying in oil though I do plan on trying it with the air fryer. I did use Parmesan that had potato starch as an anti caking agent, so there was no problem of the egg white not being absorbed. I usually use 100% cheese in recipes so I will be experimenting with additional acceptable ingredients to take up the egg whites. Thanks again for a recipe I would have missed as I don’t pay attention to TikTok nor Instagram.

I watched this video, and decided to change it a bit. I used half Parm(canned), and half almond flour. Also used a tsp of baking powder. They turned out great! More bread like. Anyway, just putting this out there. 😊

I saw this video the day it came out and was sooo impressed. I got the supplies and I just made them. OMG they are good. I used italian seasoning with the onion and garlic powders. Didn't have any corn bread flavoring. OMG, OMG, and OMG. I have never had hush puppies so no idea what they taste like. Again OMG, these are good. Thank you, I don't tic toc or instagram, you tube is about it for me. By the way I did use the green can.

I am heading into year 8 of keto and 1-2 times a year I go searching for new recipes just to keep it fun/interesting and so that I have tasty things to bring to gatherings. This is an awesome recipe. I made the the packaged parm version in avocado oil. Wow. My only reservation is how salty they taste! I am also going to try other cheeses - including cheddar and mozz.

Hello!👋 After I finished watching your video, I went in the kitchen to make some. I only had grated Pecorino Romano so that's what I used , and 2 egg whites. I beat up the egg whites with the fork and added some crushed black pepper, I don't like cheese with garlic powder, then add cheese untill I got the right consistency. Rolling the balls I was looking at the egg yolks and thinking, what if add those too ? So after I rolled half of my cheese dough I added the egg yolks and of course it was too wet so I was thinking what if I add some pork panko (crushed pork rinds) so I did, and form the balls. The plain cheese + egg whites came out nice like yours with the cheap parmesan, puffed delicious fried cheese 😋 Then I fried the ones with cheese +crushed pork rinds + 2 egg yolks, they didn't puffed as much but they were definitely bread like , peppery and delicious, they also didn't had too much of the cheese flavor and I think they are more similar to the hush puppies. I hope you try my idea too. 🤗
I'm from Canada so I've never had a "hushpuppy"; however, I do love pretty much anything fried. So, I'm wondering if you added a little bit of coconut or almond flour (like maybe a tablespoon) f it would make it breadier (sp?) haha. I think I'd try coconut flour first. I think I'll make a batch with your recipe minus the corn extract and replacing the parsley with dried basil or oregano or Italian seasoning. I plan to dip them in marinara as you suggested. I'll also try a small batch with some Victoria's keto flour (bamboo fiber version) added to your recipe using the parsley and adding a little pork panko for the grittiness of cornmeal (but not so much they taste of pork rinds). Hoping they come out more like hush puppies. 🤞🏻🤞🏻
You should call them South American cheese bread! That is what they look like. I can find them at Trader Joe’s and these would be so much cheaper. I am going to have to try these. They look so good.
I wonder if a spoon of one of the fibers (acacia, bamboo etc) might help the texture with an adjustment of the egg white amount. Id likely up the seasonings too (garlic lover), maybe try something with a more robust flavor profile instead of the parsley. Thank you for sharing and inspiring :)

Keto Pork Rind Tortillas

also, stir you corn essence drops into the egg whites, not the batter. It will mix much better that way

For the non-sawdust wood version add maybe 1 or 2 tsp of Coconut Flour and change the texture!

I did use Parmesan that had potato starch as an anti caking agent, so there was no problem of the egg white not being absorbed. I usually use 100% cheese in recipes so I will be experimenting with additional acceptable ingredients to take up the egg whites.

I watched this video, and decided to change it a bit. I used half Parm(canned), and half almond flour. Also used a tsp of baking powder. They turned out great! More bread like. Anyway, just putting this out there. 😊
You could try adding zanthan gum to the 100% paramasan recipe that should thicken it up

You can put a little piece of parchment paper down in the air fryer. doesn't "fry" as quickly but keep it from sticking.

I saw this video the day it came out and was sooo impressed. I got the supplies and I just made them. OMG they are good. I used italian seasoning with the onion and garlic powders. Didn't have any corn bread flavoring. OMG, OMG, and OMG. I have never had hush puppies so no idea what they taste like. Again OMG, these are good. Thank you, I don't tic toc or instagram, you tube is about it for me. By the way I did use the green can.
I love making these. So delicious. I just use the whole egg though. White and yolk. Never could figure out why the recipe calls for only the whites.
So a thought. If you want to go 100% parm, how about whisking in just a tiny amount of coconut flour to help absorb the liquid? And yep, I knew you weren’t using enough cornbread flavoring lol. Looking forward to trying this recipe!

This is an awesome recipe. I made the the packaged parm version in avocado oil. Wow. My only reservation is how salty they taste!
I am also going to try other cheeses - including cheddar and mozz.
I use parchment paper developed for the air fryer. It might have made a difference in your air fryer experience.

Hello!👋 After I finished watching your video, I went in the kitchen to make some. I only had grated Pecorino Romano so that's what I used , and 2 egg whites. I beat up the egg whites with the fork and added some crushed black pepper, I don't like cheese with garlic powder, then add cheese untill I got the right consistency. Rolling the balls I was looking at the egg yolks and thinking, what if add those too ? So after I rolled half of my cheese dough I added the egg yolks and of course it was too wet so I was thinking what if I add some pork panko (crushed pork rinds) so I did, and form the balls. The plain cheese + egg whites came out nice like yours with the cheap parmesan, puffed delicious fried cheese 😋 Then I fried the ones with cheese +crushed pork rinds + 2 egg yolks, they didn't puffed as much but they were definitely bread like , peppery and delicious, they also didn't had too much of the cheese flavor and I think they are more similar to the hush puppies. I hope you try my idea too. 🤗

I'm from Canada so I've never had a "hushpuppy"; however, I do love pretty much anything fried. So, I'm wondering if you added a little bit of coconut or almond flour (like maybe a tablespoon) f it would make it breadier (sp?) haha. I think I'd try coconut flour first. Thank you, Wes! I'm definitely making these for a snack tonight when I watch a movie. I think I'll make a batch with your recipe minus the corn extract and replacing the parsley with dried basil or oregano or Italian seasoning. I plan to dip them in marinara as you suggested.
I'll also try a small batch with some Victoria's keto flour (bamboo fiber version) added to your recipe using the parsley and adding a little pork panko for the grittiness of cornmeal (but not so much they taste of pork rinds). Hoping they come out more like hush puppies. 🤞🏻🤞🏻

You should call them South American cheese bread! That is what they look like. I can find them at Trader Joe’s and these would be so much cheaper. I am going to have to try these. They look so good.
I might try adding some minced canned baby corn to get closer to Hush Puppies. Also I’m gonna try grated daikon to see if I can get my TOT fix.
I wonder if a spoon of one of the fibers (acacia, bamboo etc) might help the texture with an adjustment of the egg white amount. Id likely up the seasonings too (garlic lover), maybe try something with a more robust flavor profile instead of the parsley. Thank you for sharing and inspiring :)
Wes - take your hero bread ends, dry them, pulverize them, then add them to your cheese / egg mix - that will get them to be more bread-like.
