Wow, I've never heard of Poke Cake before, despite growing up in Florida and Georgia with grandparents in two parts of Alabama! Looks interesting for sure!
Just a hint for those who might not like the texture of the almond flour cakes and breads: let the batter rest, without the bkg pdr, for at least 4 hrs so the "flour" hydrates. The reason is that it's NOT true flour. It's crushed nuts really, and the pieces need to get softer so they can be better blended with all the other ingredients during the baking. I often bake with nut "flours" but no one can tell because I let them soak in either the recipe water or the nut milk before I add the rest of the wet ings. If it wasn't for the non-sugar sweeteners, my son and his friends couldn't tell the difference between these and regular flour.
When I make regular Jello cake I freeze the cake then pour the hot jello in. It goes into the holes easily but since its froze it don't make the cake soggy because the Jello sets faster.
For anyone trying to avoid aspartame...Make your own strawberry jello... Super easy... Strawberry koolaid packet, sweetener of choice, gelatin, water. I guess it still has the red food dye but at least you can choose your sweetener.
Wes, I have to say that I watch a lot of RUclipsrs do their taste tests, and it is invariably my least favorite part of their videos-and I always ask them (though they can’t hear me), “Why the heck would I want to watch you taste something?” Not so for you-I love to watch you try your creations. I’ve been watching you a long time, and when you get “the look” that says “this is awesome,” I’m right there with you! :)
Oh my goodness, so I stopped doing keto about two years ago, maybe more and I have gained more way in the last two years than I ever have in my life. I have been so miserable, so I’m jumping back on the keto wagon. But I used to watch your videos all the time, and I just have to tell you… You look amazing!!!! I thought you looked great several years ago, but when I saw you again, I barely recognized you. I knew your sweet, southern accent. If you didn’t have a husband and you were straight, I’d be hunting you down… Just kidding, I’m not a stalker. But you do look amazing honey. I’m so proud of you.
When I tell you to make this, IM SCREAMING MAKE THE COCONUT ONE. WOW. im eating it while typing this out and I can't get enough of this cake, it's the best dessert I've ever had, let alone low carb! OUTTA THE PARK BRAVO!
If anyone's looking for that SPIRAL WHISK, here you go! 🙂 Spiral Whisk: amzn.to/3XQMod1 My Amazon Shop: www.amazon.com/shop/highfalutinlowcarb (We are a participant in the Amazon Services LLC Associates Program, an affiliate advertising program designed to provide a means for us to earn fees by linking to Amazon and affiliated sites.)
I'm a HUGE fan of All Day I Dream About Food's peanut butter poke cake. I've made it a few times and it's a personal top 3 and a huge hit when I share it with my friends.
I am glad you're back. I haven't seen you in awhile. I used to binge watch as I fell asleep. I had dreams where you were talking to me but ignoring my questions.😆
🥰 Yes!!! I love Carolyn's, Coconut Cream Poke Cake! I drooled watching you taste it 🤣. I've also made her cinnamon roll poke cake that I love as well. She has four other poke cakes, on her blog, that I haven't made yet. Great video, Thank you, Wes 😊
We don’t have poke cake in Australia but I’m sure going to try it - I don’t see why I can’t have jelly and custard in the one cake put half the holes in, fill, set and do the other half, - trifle cake - yay.
For those interested, Amazon carries a supposed keto sugar-free jell-o under the Simply Delish brand. It's sweetened with erythritol and colored with beet (this is the only no-no). It's also plant based (not gelatin, which is animal based). The only other questionable ingredient is carrageenan.
Love your comparison videos and appreciate all the work you put into them. I think it would be helpful if you cut a slice that actually represents the calorie count per serving. It is hard to imagine what an accurate small piece looks like. The large slices look pretty but may not be worth the bigger amount of calories no matter how good. I do low carb but find I can’t ignore calories particularly when it comes to desserts which are easy to overeat just like their sugar/flour counterparts. Thanks again for all your helpful content.
LOL! LITERALLY!! Loved you taking the coconut poke cake off camera saying, “I’ll be right back…”😂🍰 I’m a new follower and I have enjoyed every single video of yours I’ve watched. ❤ I’m currently in the middle of a 72 hr sardine fast, but you can bet a 20 dollar gold piece that I’ll be trying many of the recipes that have been winners!
Wes you are looking great! I've been a fan for years but haven't seen your videos recently do to falling off the keto wagon and therefore not needing low carb/keto recipes. It made me happy to see you doing so well! P.S. Your country gravy recipe is a keto staple in my house!
Oh gosh. This takes me back to my teenage baking adventures. I was so fancy with my poke cakes! Also. No self respecting southerner would cut more than 16 servings from a 9x13 pan lol. Great video, as always ❤️
To get 30 servings out of a 9x13" pan, you need to make the slices approximately 2x2". Roughly the size of a brownie (although I make my brownies 1x1" and get 16 servings from an 8" pan).
I want to make all of your baked goodies, and love watching all of your videos so much!! But erythritol freezes my mouth (And for some crazy reason makes me really tired the next day after eating it, the white or brown sugar options, and all blends with it in it) Do you, or anyone on here, have any other options that measure the same or might work for me? I neeeed sweets sooo bad 😭 *Or will this cook up the same if I just leave out the sweetener? And then maybe I can just sprinkle a little of my go to on afterwards?
I love poke cakes and these recipes are fantastic. Love all of Carolyn's recipes. Cant wait to try them both. After all its summer and who doesn't love a good poke cake.
I just shared with my mom because while my mom and step dad aren't keto like I am they are trying to be low carb for medical reasons same as me and won't give up sweets any more than I will. Though I usually get my sweet kick from teas, fruit, sweet veg, and yogurt bowls/smoothies. I do like my occasional dessert like these as a treat. That said, recipes like this I think would help my mom and step dad transition from standard diet since they are more stubborn creatures of habit than I am. I love ur food battles and reviews. It gives me ideas sometimes to try for myself as well as ways to hopefully help my parents improve their own health
Good night. I think I gained 10 pounds just watching you make those cakes! Gosh I haven't had a poke cake in forever. Thank you wes for sharing and your sacrifice for us. 😁
Lol I love that the truth is all over your face always. No hiding if something is crap or amazing. Also bless you for testing these for us, directing traffic to the originators, and for the love of cheese thank you for scraping the bowl free of all the dang cake batter and other stuff! 🎉🎉🎉
👋🏾Hello from the Panhandle Wes! I loved your reaction after that second taste test. I swear you were about to give a praise! 🙌🏾 Saving this recipe to faves because WHO doesn't want a taste of childhood?! 😊
I never had coconut cream pie until college dorm days!! Dont think I've had it since!! Most definitely have to try Carolyn's recipe, as well as coconut poke cake!! Tyfs!!
you did cut a bigger serving size cake on the poke cake so the carbs count change. but I look at your size and calculate it's about 6 to 7 net carbs per serving. not the 2.6
The only concerning thing about the poke cake is Jello contains maltodextrin, which is made from corn, wheat, rice or potato starch and has a very high glycemic index. It's can easily spike your glucose and throw you out of ketosis, if you are aiming for weightloss.
Make your own strawberry (or whatever flavor trips your trigger) jello - it's do-able from fresh or frozen fruit, OR freeze dried fruit powder and gelatin
They're both beautiful! I love poke cakes. I've been making mine with the King Arthur Keto cake mixes and they turn out fantastic every time. I will try both of these too so I can use up some ingredients I have in the pantry.
I love your videos and the cakes look delicious, you make me smile the way you react to the taste testing, well done, your a great cook and a big thank you to the creators of these cakes, I also love that Southern drawl of yours. ❤😎 🇬🇧🏴🇺🇲
I love that drawl too! Being g a southerner living in Florida, i get asked all the time where I'm from. Listening to Wes sounds like home to me. Seeing him speechless was enough to convince me to try these!
Can I just say, you make me smile. You make me feel like I can do this. Like I can leave a sugar addiction behind and make low carb sustainable for my lifetime. So, thanks!
Wes I love your videos and the effort and integrity you put into your recipe replications. And the honesty of your reviews is great. I’ve got a couple recipes I’d love to get your take on as you clearly have an expertise in this area and I want to know how to work to improve them. I know you’re probably crazy busy, but if you have time I’d love to see what you think sometime. Keep it up my friend! 😊😊😊
Perfect timing, Wes! My church is having a potluck this Sunday, and I have almost all of the ingredients already for the Jello poke cake. Thanks so much! Hugs, Kim
I’m trying to help my dad who’s 86 not to eat so much sugar and I think doing a strawberry poke cake with this recipe would be amazing and he’d never even know he wasn’t getting all that sugar. Thank you so much for showing us this.
I used to make strawberry Jello poke cake when I was a kid. The icing was Dream Whip + instant pudding. If I made it now, even Keto, I would eat the whole thing 😂
Looks absolutely awesome but more importantly, you said both were out of the park! So I am standing here with my mitt on waiting to catch my piece!!! Okay…I guess I have to make my own! Thank you, Wes!
I wonder if there is an alternative to the sugar free jello that doesn't contain aspartame? My biggest issue with aspartame, sucralose, etc. is what they do to your gut biome. Erythritol, allulose, monkfruit are natural sweeteners and from things found in nature. Aspartame and sucralose are totally artificial and are from accidents resulting from attempts to make insecticides or fertilizers or other things that were not for human consumption. Great video. Always nice to see one of your video alerts pop up on my table. 😊
@@HighfalutinLowCarb I've never have any luck with anything involving gelatin that isn't commercially packaged like Jello. 😂 I can make keto pudding but a jello sub, yeah, no. 🙄
Wow! I just watched your pecan pie video and then jumped to this one. You look great congrats! I lost about 60-70 pounds within the last year myself! Cutting out sugar for sure was great for me!
Love your reaction when you love the results of the recipe you try. Can you try the newest mashed potato recipe from Chris cooking Nashville. So many great reviews but would love your reaction
Yes! Great idea Angela =) Would love to see/hear what he thinks. So far, the reviews I've heard have been fantastic, though I've yet to make it myself. Have you tried it yet?
I made them and the whole recipe is too much because they are okay on day one but the leftovers…not so much. They become a little clumpy and for the effort, I’ll stick with cauliflower.
I’ve been out all day running errands in this unbelievable heat Such a treat to finally sit and watch your newest video I just happen to have some ripe juicy strawberries on hand and I will make the strawberry poke cake tomorrow Looking all cute like always
Thanks, Wes! Both of these look delicious - the strawberry for that childhood delight and memory and the coconut for its elegance. I'd actually rather make the coconut one, but I bought the jello to make a strawberry refrigerator pie with and then got lazy and just shared the strawberries and whipped cream with my dog. So, the strawberry poke cake it is! Summer has arrived courtesy of Wes and Highfalutin' Low Carb! ❤
I tried out CarbQuick in two much older videos. Once for pancakes and one for a casserole. I’ll link below so you can watch if you’d like! My CarbQuick Review: ruclips.net/video/_wCl-TlXip8/видео.html Pancake Battle: ruclips.net/video/yw0N2aJQ0vo/видео.html
I make 2 ingredient biscuits with Carbquik (basically 2C Carbquik, 1C heavy cream) and put them in my cast iron skillet to bake in the oven. I'll also add stevia and cinnamon to the batter with a little more cream to make a topping for any kind of cobbler (ie. blackberry or peach). Everyone loves them!

Wow, I've never heard of Poke Cake before, despite growing up in Florida and Georgia with grandparents in two parts of Alabama! Looks interesting for sure!
💚
Just a hint for those who might not like the texture of the almond flour cakes and breads: let the batter rest, without the bkg pdr, for at least 4 hrs so the "flour" hydrates. The reason is that it's NOT true flour. It's crushed nuts really, and the pieces need to get softer so they can be better blended with all the other ingredients during the baking.

Well this was interesting. Thank you for that tip.
Do you soak it in the fridge or on the counter? 🤔
Thank you for the tip
Whoa ive never tried that. I definitely will next time. Thank you.
When I make regular Jello cake I freeze the cake then pour the hot jello in. It goes into the holes easily but since its froze it don't make the cake soggy because the Jello sets faster.
GENIUS! 😮
Thank you very much for sharing this hint with us. I am going to try it.❤❤
Terrific hack, thank you.
Brilliant!

Also it really saves us all trying several recipes I know that if Wes approves them that is one more spending the money for the ingredients for❤
I always add gelatin to whip cream to stablize it when using it on cake that is not going to be eaten all at once 😊 23:34

@carolferguson I just went & looked up where gelatin comes from/how it's made 🤢 I had no clue! Needless to say, I won't be having Jello anymore! 😩
Put a layer of chocolate puding inbetween the cake and whipped cream! Awesome.
You could make hibiscus tea jello then you’ll get flavor and color

They're both beautiful! I love poke cakes. I've been making mine with the King Arthur Keto cake mixes and they turn out fantastic every time. I will try both of these too so I can use up some ingredients I have in the pantry.
Coconut cream sounds good not crazy about strawberry jello artificial flavor maybe raspberry?
I think almost any flavored jello would work well. Lemon or raspberry, especially!
I love your videos and the cakes look delicious, you make me smile the way you react to the taste testing, well done, your a great cook and a big thank you to the creators of these cakes, I also love that Southern drawl of yours. ❤😎 🇬🇧🏴🇺🇲
Thank you so much! 🧡💛
So, thanks!
Carolyn’s cake looks awesome and definite try!
It is SO incredibly good!!
Tastes like childhood!!!! LOVED that. So want both if these right now. Yum. Thanks again for all you do. Your reaction for these said it ALL.
Thanks, Tricia! :-)
I had a friend that used thrive market!! She got some stuff for me couple times as well!! I definitely need to try them sometime.
*The combination of flavors and textures is making my mouth water. Can't wait to try this recipe out!*
It's so good! :-)
I just discovered your channel…you are fabulous…I am binge watching your videos …love your personality!
Yay! Thank you! Welcome aboard, Rhonda!
Perfect timing, Wes! My church is having a potluck this Sunday, and I have almost all of the ingredients already for the Jello poke cake. Thanks so much! Hugs, Kim
OH MY GOODNESS those look so good, considering one of those for my bday next month but maybe in cupcake form..
I’m trying to help my dad who’s 86 not to eat so much sugar and I think doing a strawberry poke cake with this recipe would be amazing and he’d never even know he wasn’t getting all that sugar. Thank you so much for showing us this.
Hi i,m from Puerto Rico and love your videos. Thank You😊
I used to make strawberry Jello poke cake when I was a kid.
Your reactions are so honest
I wonder if there is an alternative to the sugar free jello that doesn't contain aspartame? My biggest issue with aspartame, sucralose, etc. is what they do to your gut biome. Erythritol, allulose, monkfruit are natural sweeteners and from things found in nature. Aspartame and sucralose are totally artificial and are from accidents resulting from attempts to make insecticides or fertilizers or other things that were not for human consumption. Great video. Always nice to see one of your video alerts pop up on my table. 😊
I cover this a bit in the video. :-)
You can use a clear gelatin like Knox and some kind of fruit juice
Just don't eat it often and you will survive
@@HighfalutinLowCarb I've never have any luck with anything involving gelatin that isn't commercially packaged like Jello. 😂 I can make keto pudding but a jello sub, yeah, no. 🙄
Amazon carries a supposed keto sugar-free jell-o under the Simply Delish brand. It's sweetened with erythritol.
You can’t go wrong with any of Carolyn’s recipes 😊 @alldayidreamaboutfood
Wesley, when I need a cheery pick me up, I can always count on you, kid you crack me up tasting these...LOLOLOL
looks so delicious!!!!! thank you!!!
Hope you enjoy!
Wow! I just watched your pecan pie video and then jumped to this one. You look great congrats! I lost about 60-70 pounds within the last year myself! Cutting out sugar for sure was great for me!
Fantastic!!! Thank you for sharing 💝💝
My mother in law makes the strawberry one, but traditional. My wife loves it. You just made my wife one very happy lady!
Wonderful! Come back and let us know if she approves! :-)
I love Carolyns recipes. It was you that lead me to her channel ❤
Im new and here to stay!!!❤ love your videos!
Thank you! Welcome aboard and make yourself at home. Really appreciate you watching and commenting! 🧡🙂
My mom always made chocolate cake with strawberry jello. I'm going to try this recipe.
These serving sizes are the reason why keto friendly treats are for VERY special occasions.
Thanks Wes, they both are oh my short list🍰
I would love to know how the topping on the second cake turned out w/ the added cream cheese.
I’m making one with both the jello and cream poke 😊
I really love your introductions!
Thank you! 🙂🙂
What induction cooktop do you use or recommend?
What a hunk! Looking great, just came back to watch you.
Can’t wait to make both of these. Thank you so much for all that you do❤️
Gramzero gelatin mix is sweetened with Stevie.
I'm a Thrive Market customer because of Wes !! I love their spices alot !!
when you make your cakes you can spread more into the corners
Love your reaction when you love the results of the recipe you try. Can you try the newest mashed potato recipe from Chris cooking Nashville. So many great reviews but would love your reaction
Yes! Great idea Angela =) Would love to see/hear what he thinks. So far, the reviews I've heard have been fantastic, though I've yet to make it myself. Have you tried it yet?
I made them and the whole recipe is too much because they are okay on day one but the leftovers…not so much. They become a little clumpy and for the effort, I’ll stick with cauliflower.
Yes I tried it but it wasn’t successful for me do to not having right equipment but now that I do I am going to attempt again.

I recently saw the keto twins make pierogi with leftover keto mashed potato so maybe you can use yours for that 😊
Thank you! I've missed the poke cake since I moved from AL. I forgot all about it.
I'm so glad to see you again. I've missed you.
I’ve been out all day running errands in this unbelievable heat
Such a treat to finally sit and watch your newest video
I just happen to have some ripe juicy strawberries on hand and I will make the strawberry poke cake tomorrow
Looking all cute like always
Thanks, Wes! Both of these look delicious - the strawberry for that childhood delight and memory and the coconut for its elegance. I'd actually rather make the coconut one, but I bought the jello to make a strawberry refrigerator pie with and then got lazy and just shared the strawberries and whipped cream with my dog. So, the strawberry poke cake it is! Summer has arrived courtesy of Wes and Highfalutin' Low Carb! ❤
Thanks, Lucinda! Sounds like your doggo appreciated your decision as well! 🙃🐶
OMG Wes both of these cakes look absolutely delicious! TFS! God bless
Thank you! Can’t wait to try these!
🌞🍓🥥🌞
Oh! I will be making both of these this summer. They both look so deeeeelicious!!!!
I am sure the creators of most of the recipes you feature are very happy with you.
Both recipes look delicious, I have to try them, but I am going to use Greek yogourt or cottage cheese for the frosting
Have you ever made anything with Carbalose flour or Carbquick? Would love to get your opinion on that. Thank you.
I tried out CarbQuick in two much older videos. Once for pancakes and one for a casserole. I’ll link below so you can watch if you’d like!

@@HighfalutinLowCarb I saw those! I've been a fan of yours for a long time!
Awesome ima make keto ducan Hines coconut poke cake with unsweetened flakes and zero sugar whip cream 😋
What brand of stainless sauce pan are you using, Wes? I’ve looked everywhere for pans without a separate disk on the bottom?
