I made this coconut poke cake!! One of our favorite recipes was a coconut cream pie. I had a San Diego restaurant recipe. We cannot eat that anymore!! It was our 47th wedding anniversary so I made this special cake to replace that all-time favorite dessert. This poke cake was a hit. He ate it all week long. !!
Is it OK to use the whites and yolks in the cake Carolyn? I usually make cake without frosting to enjoy with my coffee. Sometimes, I will spread a very thin amount of Smuckers sugarless strawberry, raspberry, blueberry, or peach preserves on top of my piece of cake, instead of frosting, and it's wonderful! ... Peace! 🎼❤☮
You probably could use whole eggs in the cake if You don't want the custard part which uses the yolks. Only way I would separate an egg is if the yolks are used in same recipe ☺️ I LOVE custard so I will be separating mine this time 😅

Have you ever tried to whirl the shredded coconut in a food processor? I find that a few pulses chops it enough that it doesn’t have that “stringy” texture…assuming that’s why you don’t care for it…it’s more like cracker crumbs at that point. Worth a try! 😊

I made this cake, and I loved the whipped topping, but the cake seemed too dense, and the pudding a touch too thick. Is that the result of overmixing the cake and overcooking pudding? It's not bad, but I feel like I need some practice with the almond flour and sugar substitutes. It definitely doesn't behave like a traditional cake.
@@AllDayIDreamAboutFood hi Carolyn, I didn’t see your reply till now…I actually mixed 1 1/2 scoops of vital protein collagen and the rest coconut flour to equal 1/3 cup as recipe called for…it’s looking good sooo far, I will keep you posted…also I didn’t have coconut extract so I replaced it with rum extract in pudding…figured rum is yummy with coconut…so when it’s all assembled I will tell you how it comes out…thanks again for your yummy recipe
@@AllDayIDreamAboutFood well Carolyn my cake with the vital protein collagen powder came out soooo good, light not gummy very delicious…what I did was measured 2 full scoops of powder into 1/3 measuring cup and the rest coconut flour and that was my substitute for whey protein powder in your recipe…it worked beautifully for me, I baked my cake longer till set and edges browned…thanks for the recipe my friend absolutely loved my poke cake…she’s not on KETO and was pleasantly surprised had 2 squares with tea…loved it…she’s like that’s KETO?? Lol 😂 I said yep sure is… she loved it…Thanks ❤️

I normally use a butter knife to get a big enough hole and not run the cake!!! But I love your method too!!! 😂

coconut cream is the solid part out of a can of coconut milk.
It is part You can whip for a non-dairy topping also.
