    The first one is more like a Reese's peanut butter cup. I don't mix it together. I use a small square mold; start by first pouring in some chocolate (melted), then peanut butter, and top it with chocolate (melted). Place in the freezer for 10-15 minutes and you are done. I place them in a ziplock bag and keep in the freezer for a quick, cool treat. I believe I got the idea from Joe Duff.

    This might be an Easter treat, the last one. I haven't decided if I want to add the chocolate to my diet yet. I have lost 48 pounds since September by not eating anything that tastes sweet.

    AWESOME!!! I can hardly wait to try version #3! I would very much like to see some fudge recipes that use unsweetened baking chocolate bars instead of the very pricey pre-sweetened chocolate chips. I would like to have the control over the amount of sweetener and the flavor of the sweetener I use as well as significantly lowering the unnecessarily high cost of being forced to use packaged chocolate chips. Thanks for this wonderful video!

      Same for me! Too much erythritol makes me sick. I made some Peanut butter meltaways with just the PB and white choc chips from Lily's, and I could only eat 2 pieces. If I ate more then I was GI sick. I have yet to try unsweetened chocolate bars. But obviously it's near impossible to find white chocolate without sweeteners. Even looking for "yogurt dipped" anything isn't even yogurt or chocolate anymore - it's a blend of sugars, corn syrups, and wax!

      @@AJtraductora Cocoa powder plus either cocoa butter and/or coconut fat plus sweetener of your choice (allulose or stevia in careful small measurements) makes regular chocolate at half the price of Lily's. White chocolate is just cocoa fat plus sweeteners. It's easy to make your own. Unsweetened Baker's chocolate already has the cocoa butter in it, just melt it down and add the sweetener you're good with. Just go easy on stevia, it can get too sweet and weird fast.

    I just finished making two batches of chocolate, one with walnuts. I make my own sweetened condensed milk (2 cups heavy cream & 1tsp liquid sweetener cooked down for 20 mins)then just add a bag of Lilly’s whatever flavor you want. Hardens in the fridge in less then an hour then freeze it. I make it for Mr as I don’t have a sweet tooth.

    Allulose browns pretty fast. When making condensed milk I don’t add the allulose until the milk is starting to thicken.

    With the condensed milk, I bet you can make the third with 100% dark chocolate and add Coco butter and a bit more sweetener.. Will be cheaper.

    I love making keto fudge. I have a different recipe you are welcome to try anytime. 3/4 cup butter, 1 cup creamy peanut butter, Melt in microwave for 1 minute. add 3/4-1 cup Swerve powdered and stir really well with a whisk. Add in 2 cups of powdered peanut butter (I prefer PB2 with cocoa) and 1 tsp vanilla. Stir well. Pour into a buttered 8x8 baking dish. Refrigerate. While chilling melt 1/2 cup sugar-free chocolate chips with 1/2 tsp of coconut oil for 1 minute then stir, if not smooth microwave for another 30 seconds. Pour melted chocolate over the fudge and spread evenly. Chill until set. Trust me, you want to try this.

    I love fudge! I used to make the cheater kind, a container of frosting & a bag of chocolate chips or whatever kind you want & microwave. Chocolate frosting & peanut butter chips, yum or chocolate/chocolate with mini marshmallows & a crushed graham wafer crust mixed in. So great when camping. Third option sounds the best for sure.

    Thanks for doing all the work… I can’t wait to try fudge number three! I would stir toasted walnuts into the whole thing and sprinkle the top with a little tiny bit of flaked salt. It’s good to know how to make homemade sweetened condensed milk too.❤❤

I have my recipe of #3 fudge chilling now and the little bit on the spoon I tasted is awesome. I know it will make my guests very happy.     First of all … sooooo nice to see you back, Wes!!!! You have certainly been missed by many!!! And OMG I was so happy to see that the recipe using the homemade condensed milk came out so well, I had my fingers crossed. AND, even more pleased that I should be able to use “milk chocolate” chips rather than semi-sweet or dark chocolate … I much prefer my fudge that way!!! And, to have wonderful chocolate treat that doesn’t melt all over my fingers? PERFECTO!!! Thank you!!! ❤

    I tried the third recipe. We don't have nice options for chocolate chips so I substituted 125g of 90% chocolate broken into pieces, I used moser roth from aldi. That recipe has been a great addition for me as the condensed milk makes a beautiful hot pouring custard if taken off the heat a little early. I will be trying to temper an egg yolk to add to it, maybe 2 for a thicker custard and one that sets when cold. I'm not a huge fudge fan and the result for me was more like a set ganache so I will be using this as a chocolate fudge coating for cakes!

    hello, thanks for new recipes of chocolate fudge ! Mine is quite the same as the first one but I put some Tahini (sesame paste) instead of peanut butter, then some erythritol, and I sprinkle sesame seeds on top (or almonds or whatever I have in my keto pantry). It is also delicious. I try not to have too many peanut butter available in my home because I have almost an addiction to it .....

    Love watching your videos. I like your new kitchen. A few days ago I melted some “no sugar added” chocolate chips and blended in some chopped mixed nuts I had on hand. I added a little Swerve and put them in a silicone candy mold. I’ve got one left. I’m going to try one of the fudge recipes next. I have the ingredients for all 3.

    Awesome review. I've been doing a variation of the 1st recipe for years. PB, chips and heavy cream. Microwave the PB amd chips. Then stir in heavy cream. I usually just make a small batch for 2 servings. So good!😋

    My Walmart sometimes carries Believe brand chocolate chips. I buy those whenever possible. Sweetened the same way as Lily's, the bag is a couple ounces heavier, and a dollar cheaper.

      I just bought those but haven't tried them yet.
      I did think it was kinda bad labeling that the front said stevia sweetened and when I looked on the ingredient list there were two other sweeteners that were in it in larger amounts than the stevia.
      But, what're ya gonna do?

    The best regular fudge recipe I ever made called for an unusual ingredient, Velveeta cheese. It was creamy, yet chewy, and the cheese barely has any flavor of its own anyway. So you don't really taste it. I've often wondered if that recipe couldn't be converted into a low carb version. Of course, the Velveeta is not healthy, but neither is fudge if you get down to it. I've also wondered if cream cheese would work. I'd think you'd taste that more, but that's not necessarily a bad thing.
    The one thing I found with the Velveeta fudge is you can never tell people what is in it. Some people are just too suggestible. They would go from raving over how delicious it was and saying it was the best fudge they'd ever had to spewing it out and gagging once you told them what was in it. Suddenly the most delicious fudge in the world tasted just horrible. I wanted to slap people. 😅

      Oh, she'd have done the regular version. But all you'd need to do is change the sweetener from sugar.

      @@Lucinda_Jackson that was what I was thinking myself. You could even make it as sweet or not as you want. Some fudge is overly sweet to me. The nice thing is you use plain cocoa, so not too expensive to make either.

    Low carb milk with cream cheese brick and 2 c water, blend and refrigerate, looses tang after a day in fridge, lasts about a month in fridge. Less water, thicker texture.

    Did you use the Lily’s milk chocolate baking chips or the Lily’s semi-sweet style? I’d like to make it the same as the test to begin. The recipe doesn’t specify.
    Can’t wait to try this recipe! I bet it would also work with the white chocolate chips for some different variations.

    The parchment only needs to go up the two long sides to make the sling. You can use a knife to loosen the short sides...so you don't have to worry about the parchment folds.

    With the first one either use peanut butter that is slightly sweetened or better-use milk chocolate Lillies not semi or dark.

    Condensed Milk is the sugared milk, the reason for this was discovered last century that it tasted more like regular milk when hydrated properly. the condensed milk is different than evaporated milk which has no added sugars.

    Well fudge, I got to try making the condensed milk fudge. I think with a bit a tweaking, it could make a good fudge sauce for homemade ice-cream. 👍👍👍

    Hershey makes sugar free chocolate chips now too and they are about $3.50 a bag compared to $7 or $8 lilliys. I've bought them at pretty much every grocery store Ive been to. So look for those first if your on a budget.

      Just be careful. Unfortunately, Hershey uses maltitol as the sweetener, which is known to cause insulin spikes and is not recommended for diabetics and others eating keto or low carb. Maltitol has a glycemic index close to table sugar, and much much higher than other sweeteners. :-(

    These recipes are a Godsend! I did keto 20+ years ago and the only sweet available was Atkins bars which are ok but to really succeed with keto you need options. One day I snapped and made pancakes with syrup and whipped cream and that was the end of it. Now I have options and many more ingredients available to make some of the foods I used to eat. Thanks so much for testing these recipes. All I need now is to be able to make my own gummy candy.

    I think this would work better with allulose because of its taste profile and caramelization qualities. Not to mention the bad rap erythritol is getting lately because of the blood clot study. I never understood why people ignore allulose. It's great in soft foods.

    I absolutely love your videos! I have been watching you for several years and it has made my Keto Journey so much better by trying out all of these recipes.     Hi Wes! Love your videos you’re humorous and informative. I was wondering about the last fudge recipe. Did you powder the erythritol and what brand did you use? In the past I haven’t had luck with it because it recrystallizes and tends to have a cooling effect. Did you notice that? I would love to have fudge again but concerned about those two things. Thank you for all your hard work trying out these recipes and posting!

    Hey Wes, I liked the idea of the Peanut butter chocolate fudge because of it's simplicity. After seeing your reaction, which I have had eating plain sugarless peanut butter, I decided to throw in like a 3/4 cups of powdered swerve though maybe a cup would have been better. It tasted better and even my kids liked it. However, is there a way to make it 'minty'? I like mint chocolate but I like simple to make recipes or I simply won't make them. Good show man. Keep up the good work.

    I want to try them all :-)
    Started with the middle one. Pretty good, but not really chewy. And I didn't have real fudge ever.. but I know it is supposed to be chewy from vids. Next is the last one but I don't eat heavy cream will try with coconut cream instead.
