    Chris Cooking Nashville’s mom here. Thank you for the support of him and great review! I agree about the “potatoes”. They are incredible - and not that hard to make once you’ve done it a couple of times. One secret - if you let them off-gas for awhile after they’re made, any slight residual egg flavor goes away, and they’re even better the next day if you reheat them gently. Hope you enjoy them.

      I'm not sure that I understand what off the gas means? And do you mean the cooked egg whites off the gas or the finished product off the gas?

    You can use hard boiled egg whites. I just pulled out the yolks and used about 10 egg whites to make half a recipe. (I don't have a large blender so I do half.). The egg whites were cold so I blended them first, until they became so finely chopped that they then came together as a ball. Then I added all the dry ingredients and mixed well again. I then put the wet cheeses, the 1/2 stick of butter and about a quarter cup of heavy cream into the microwave and warmed everything up until it was pretty warm. I then poured this into the blender and mixed everything until smooth. It came out perfect! Much easier than the skillet method.

    I was a skeptic. After years of hearing how roasted radishes taste just like potatoes (they don't), and cauliflower mash is as good as potatoes (they aren't), I didn't think this was going to take like potatoes. Finally, I was wrong! Thanks for showing us this recipe, Wes, and thanks to Chris for inventing it!

      @@jimw7578 We detected a bit of an egg smell at first, but not an egg taste. I ended up eating most of it as leftovers and there was zero egg smell and still no egg taste. The end result is pretty amazing.

      I always think, why try to make fake foods, much like fake meat and cheese for vegans. But Wes's reaction really made me appreciate this recipe. Maybe some day, I will give it a go.
      BTW, I've been eating mashed cauliflower long before keto way of life. They're just good and delicious.
      I have eliminated many food groups from my diet, for the most part. Grains and beans, for one. And no potatoes. But if I go to someone's for dinner and mashed potatoes are on the table, I will have a small spoonful. Really. 🤷‍♀️

    At the end you mentioned cauliflower mash, and the "tang". Potatoes are a starch, and they have a hint of sweetness. The secret to making cauliflower mash taste far more like potatoes is to add a couple teaspoons of powdered Allulose, or a couple drops of liquid sucralose. This removes the bitter cauliflower "tang". I also add powdered Allulose to cauliflower rice, as it removes the bitterness and makes it taste much closer to white rice.

      Cauliflower and all members of the cabbage family have sulfur compounds that are very healthy but can stink a little. Eggs can have the same problem. That's why you have to really dry the cauliflower and the eggs to remove that sulfur taste

      I do dry my cauliflower for my rice and there's no bitter taste or smell when I add other ingredients

      If you cook cauliflower for too long, it does become bitter. I like to take riced cauliflower and bake it until it just barely browns. This makes it nice and dry, not bitter.

      @@hollycrocker923 I have yet to try it with my lower carb diet. And I have in my freezer the rice cauliflower from Schwan's and a fresh head of cauliflower from the food bank last week so haven't fixed it yet never have prepared fresh cauliflower before.

    Tried this recipe. As they say here in the South, “Man, you won’t believe this shit, so let me tell you!”
    They - do - taste - like - mashed potatoes!!
    The KEY is to SLOWLY cook off ALL the liquid as you cook the egg whites. Condensation will cause more liquid. So I used a colander to remove the little bit of water that remained rather than risk burning the egg whites.
    Once you complete the entire process, I served this with a little keto gravy.
    On the left overs, I heated up and just added a little butter.
    Again, the KEY is cooking off all the water.

    I found Chris's recipe for potato salad using the recipe for the mashed potatoes. He bakes the "potatoes"in the oven and cubes it. Adds bacon, eggs, mustard and his butter mayo. It is fabulous. It was lunch today. Thanks for showing this website to me. Wes, you are fabulous!

    These are even better reheated the next day. I have made them repeatedly. Some hints, have all ingredients at room temperature, you can cook off the water in the butter at a slightly higher temperature then reduce it and add the egg whites. Make sure the egg whites are dry. I use a stick (immersion) blender in the serving bowl it works great. The next day I reheat by 30 seconds in microwave stir repeat til it’s the temperature you want,

    Thank the lord above because I can't stomach cauliflower mash any more. I grew up in a traditional southern household where mashed potatoes were a staple and miss them the most on lowcarb. You speak with your eyes and when they lit up, I knew I had to try this recipe!!!

    I love them, as mashed, as potato salad, as rice. What a creative man Chris is.
    Sourcing egg white powder is difficult so I found whipped egg whites dehydrated works.
    They freeze well for a few weeks anyway, I make half recipe which still gives me several meals.

    I just found his channel by chance a few days ago and ordered the beef protein to make his refried beans recipe, As a Mexican American I cook many mexican dishes but couldn’t believe his "refried beans" also uses bologna! Haven’t tried it yet but his wife’s reaction convinced me, lol!

    I am so glad you reviewed this recipe. @ChrisCookingNashville has amazing recipes. I recently made his carnivore pizza and brought it to a pizza party (for myself) and did not feel left out. I liked it even more the next day! I was so impressed I decided I am going to make a bunch of crusts and freeze them for when my family has pizza. I can easily take a crust out of the freezer and make one for myself and my mother!!!!

    I made this recipe 3 weeks ago and it is a winner for the hubby and I. We love them. I also used my food processor, not my blender and it made the blending process a breeze. So much easier than using a cramped blender!

      Adds *eggs* and *cream cheese* to a blender (add 1 oz cream cheese for every 1 egg).
      Add 1 teaspoon sweetener (such as allulose) for every 2 eggs.
      Blend.
      Pour into skillet with melted butter and let it sit on medium heat for 2 minutes, then flip it.
      I topped mine with a little Lakanto Maple Syrup. Couldn’t believe how delicious it was!!

    I'll have to try this. I don't like mashed cauli (but Mexican rice seasoned riced cauliflower is lovely). I've got to get some weight off my hubby and he a true meat and potatoes man. If he likes this recipe then he can have dishes that I thought were off the menu such as Swedish Meatballs and gravy with a side of "carnivore mashed potatoes" on a regular basis.

    I've made them twice and love them. The texture is mashed potatoes and the flavor is close. It really plays a trick on your brain. They are worth the time, but they are at their best if served as soon as possible. 🌻❤🌻

    Suggestion to pour the cooked egg whites from the pan to the blender. Use a flexible cutting board to make a large makeshift funnel. Looks like it would work.

    If you have a garden, could consider growing Mashed potato squash. Its a hybrid acorn squash with white skin and white flesh. It is actually better than mashed potatoes. With this squash, and another called delicata, i dont even miss mashed potatoes.
    The mashed potato squash can be stored as long as a regular acorn squash. The delicata is a bit shorter, maybe 2 months.

    You are looking so much healthier! I found Keto kept my A1c below 6 but I could not loose weight. Suspect overdoing it on nuts and cheese

      Yeah, many people find that sharply reducing dairy really helps to get out of a weight loss plateau. Which is not surprising because milk is used by animals to allow their babies to grow fast

    I made these last night. They were so so good. Definitely was very similar to potatoes in taste and texture. Next time I'm going to add a little bit more cream cheese to make them hold together better. After sitting and cooling a while they became a bit jiggly and separated a little. Adding heavy whipping cream at the end of the blending would probably have helped with that also, but I forgot to do it then and just mixed some in while in the serving bowl. Will for sure be making these again.

      @@micah1754 didn't taste eggy to me, and I'm fairly sensitive to that taste. I think the cheeses masked it. To me it had a cauliflower taste just a bit. But with that being said, since I had COVID and my taste came back with everything tasting wrong, I may be completely off track with how it actually tastes. Thank you COVID for screwing up my love of food!

    Hi Wesley, glad you tried these. I finally made them today. My take on them is this. Lot's of work 😆. They have the texture of mash taters but you can still taste the eggwhites. I didn't think the toasted beef gelatine made any difference. They are pretty ok with a white sausage gravy on top. I took them over to my sons house who is keto. He thought they were disgusting. My six grandkids 6-16 didn't like them either. Two of the 6 thought they were ok, but didn't ask for another bite.
    Now, having said all that. I think if you add more mozzarella and leave out the garlic powder they'd be better tasting. I hope the egg taste is gone after overnight in the fridge like the boiled egg pudding does.
    I was thinking why not use the whites of boiled eggs like the pudding and add one yellow potato with cream, butter, mozzarella etc. In blender, Might be easier to make. I was hoping these would be a game changer but no.

      Glad to see more honest reviewer. Some keto recipes are really disgusting and I am tired of trying some of the recipes after great expense and time to find out just how bad they really are. This diet is expensive as it is, and then wasting all the money on terrible stuff really annoys me. I don't like all his reviews either. I notice many people in the comments just gushing over someone they think is some sort of celebrity without actually MAKING the recipes themselves. Thank you for the frank review. I greatly appreciate it. I will not be spending money to make this and hate them as I know I would. And some of us with blood sugar issues really need low carb recipes and not get suckered into spending a lot of money to make inedible food.

    I made mashed fauxtatoes by blending cauliflower (with water squeezed out), egg whites, butter, and sour cream together, and then cooked the liquid batter in a double boiler. 👍

    If you can get farm fresh eggs, I highly recommend them for this recipe (and a carnivore chocolate pudding i make too!) Because fresh eggs have very little "egg stink" flavor... probably because it's the sulfurs in eggs that increase with age, if you have fresh eggs, they just taste... FRESH
