INGREDIENTS FOR THE BATTER
DRY INGREDIENTS
Almond flour = 110 g (3/4 cup + 3 tbsp) (OR Coconut flour = 30 g (1/4 cup)
Baking powder = 4 g (1 tsp)
Unsweetened cocoa powder (sieved) = 10 g (2 tsp)
Instant coffee powder = 5 g (1 tbsp)
Monk fruit = 50 g (1/4 cup) (OR any keto friendly sweetener)
Salt = 1/4 tsp
WET INGREDIENTS
Egg yolks = 4 large
Coconut oil = 60 ml (1/4 cup) (OR any keto friendly oil)
Vanilla extract = 1 tsp
Hot water = 60 ml (1/4 cup)
INGREDIENTS FOR THE MERINGUE
Egg whites = 4 large
Monk fruit = 50 g (1/4 cup) (OR any keto friendly sweetener)
Cream of tartar = 1/2 tsp (OR white vinegar / lemon juice)
INGREDIENTS FOR THE FROSTING
Cold whipping or heavy cream = 240 ml (1 cup)
Powdered sweetener = 40 g (5 tbsp) (I used Allulose but you can use any keto friendly powdered sweetener)
Unsweetened cocoa powder (sieved) = 13 g (2 3/4 tbsp)
Instant coffee powder = 5 g (1 tbsp)
Hot water = 7 ml (1/2 tbsp)
DIRECTIONS
1. Preheat the oven at 320 F or 160 C.
2. Mix the instant coffee powder for the batter with hot water. Stir until dissolved then set aside.
3. In a big bowl, add the egg yolks and sweetener. Whisk until foamy and lighter in color. Then add the coconut oil, vanilla extract and coffee mixture. Whisk to combine.
4. Add the almond flour, sieved cocoa powder, baking powder, salt and whisk to combine. Set aside the batter.
5. In another clean and dry bowl, add the egg whites, cream of tartar and beat at medium to high speed. Add the sweetener in 3 batches and beat until stiff peaks.
6. Add the meringue into the batter in 3 batches. Fold gently to combine. Do not stir or mix as it will deflate the meringue. The volume of the batter should increase significantly, and the texture is smooth, light and fluffy.
7. Transfer the batter into a 9x9 inch square pan lined with parchment paper. Spread evenly.
8. Bake for 20 to 25 minutes. Test doneness with a wooden skewer. Once the cake is done, cool completely on a wire rack.
9. Meanwhile, make the frosting. Freeze the bowl and beaters for 30 minutes. If necessary, use another bowl and fill with ice cubes to help with the whipping process. This is optional unless you live in a tropical climate like me.
10. Add the instant coffee powder and hot water in a cup. Stir until dissolved then set aside.
11. Add the cold whipping or heavy cream, powdered sweetener, sieved cocoa powder into the cold bowl and beat at low speed to combine. Then add the coffee mixture and beat at medium to high speed until a firm texture. Chill the cream until needed.
12. When the cake is completely cooled, start the frosting. Transfer the cream onto the top of the cake and spread evenly. Then chill in the refrigerator for 1 hour.
13. Trim the sides of the cake (optional). Slice into 9 or 18 servings. Dust with unsweetened cocoa powder.
14. This cake can be refrigerated for up to a week.

Update on the tiramisu cake: it's amazing how you managed to get the textures and flavors of a traditional tiramisu without lady fingers or coffee syrup. It's so much more practical to make this way and waaaayyy much tastier! I just used mascarpone instead of cream cheese and for the frosting I used half of the eritrithol as it was sweet enough for me. I'll be repeating this one for sure. This was very enjoyable after it was cold from the fridge. I used allulose and stevia drops to sweeten and butter for the oil. I didn’t put coffee in the cream on top. I would make this again if I had that craving.

This turned out very delectable! Thanks for the recipe! I used regular coffee, as I didn't have any instant. Also I split the batter into two springforms, and made it into a two-layer cake. Added a bit of cream cheese to the frosting. The cake was gone so quickly! 🥮

I just made the dry ingredients measurements for your tiramisu cake v.2 one hour ago ! This is very similar but seems lighter! I usually make ahead the dry measurements for when I need I just have to get the wet and put in the oven. I was looking for tiramisu recipe of yours and I guess it's one of your most beloved and popular recipes so that's perfect for me! When I make it I'll probably try this one next and see the comparison. Thank you for your wonderful recipes! Have you some recipe for salvaging keto baked cakes? Like some sort of no bake biscuit cake or cake pops? Sometimes I mess up and don't want to waiste food and I try to make cake pops with homemade keto Nutella but if you got some recipe for rescuing cakes it would be nice 👍
Mocha cake is a mix of coffee and chocolate so the ingredients may be somewhat similar to tiramisu cake. However, this mocha cake uses meringue so it's much lighter and softer. Also, the frosting for tiramisu cake uses cream cheese whereas this one use whipping or heavy cream. So glad that you're going to make the tiramisu v2.0 cake. Please let me know how it turns out. Sorry, I don't have any recipes for salvaging keto baked cakes. Thanks for sharing!
Yes I'll tell you when I'll bake it! I've got to make this one next and I have also your panetone in my wish list but need to buy some ingredients for it! So far I've been making lots of your recipes and none failed me, except one which fault was not because of the recipe itself but the almond flour was off, out of date. Other than this, everything has been perfect! Today I made again your lemon mousse but tried a twist on it putting strawberry flavored drops because every week I've been making it. I have made the lemon version and tried with coconut flavored drops and today was strawberry. Very very good 👍
Great question for using up either leftover cakes or cakes that didn't turn out the best! My go-to is always cake pops (using sugar-free frosting, not the best, ik), or my favorite is parfait! Just take crumbled pieces of cake and layer it with berries or chopped fruit and whipped cream in a cup or bowl, super easy and tasty!
Never thought of making a parfait! Thank you for your suggestion! I usually make the cake pops but before I do keto diet I had a brownie recipe for cake failures but with keto baked goods it's different and now I don't have much options. I almost attempted a chocolate salami thing or a no bake biscuit cake using not biscuit but cake leftovers/or failed bakes. I don't want to waiste food and sometimes it's just a matter of creativity. I will try your parfait idea, seems very flexible as I can flavor the cream with anything combining with what I've got in the moment 👍 Thank you!

Yes you can do that provided the amount of liquid does not exceed the recipe to prevent the cake from being too soggy. I am not sure how much of coffee flavor you prefer but most people prefer it a little on the stronger side.

Just out of curiosity, what is the depth of cake when it's done baking? Just have it cooling, but it doesn't seem very 'deep/tall'. Smells amazing though, and super easy to make :)
The height of the cake is only about 1 inch and frosting about 1/4 inch. If you want the cake to be taller, you can use a smaller pan maybe 8x8 inch.

In the video, I used Almond flour
when i made this the yoghurt berries cake it deflated.
That could be due to the meringue deflated either during mixing or whisking process. The folding method is very important.
@@lowcarbrecipeideas is cream of tartar better to use? i used lemon in the recipe to stiffen the meringue. I will try this mocha cake and just gently fold the meringue from scraping outside then dropping in the middle. hope this works because i want a cake texture to this recipe and not a brownie texture.
@@lowcarbrecipeideas the cake is puffed up nice almost double the size and i also only used 3 eggs i had on me. now to wait and see after i let it cool on the bench top it does not deflate while cooling.

I am making this case using coconut flour (weighed everything) and the batter looked so thick and dry. Doesn't seem to be rising either. 😢
Some coconut flours are more absorbent than others, so you may need to add more liquid. I suggest you try other brands, and once you get the right one, then try to stick with it.By the way, how did it turn out?

Yes, you can use espresso or any suitable coffee. The reason why instant coffee powder is used is that it dissolves easily with no residue. If using non-instant ones just ensure that you sieve it before adding to the batter.
