1/2 tsp baking powder
10 g cocoa powder
1 tbsp instant coffee
4 egg yolks (L)
50 g granulated sugar
1/4 teaspoon salt
60 g milk
50 g vegetable oil
1 tsp vanilla extract
4 egg whites
50 g caster sugar
1/2 teaspoon vinegar
Syrup
80 g milk
15 g sugar
The whipped cream
100 g Whipping cream (1)
50 g semi-sweet chocolate (57.7%)
2 g instant coffee
300 g Whipping cream (2)
50 g icing sugar
a pinch of salt

น้ำส้มสายชู 1/2 ช้อนชา
น้ำเชื่อมพรมเค้ก
นมสด 80 กรัม
น้ำตาล 15 กรัม
วิปปิ้งครีมแต่งหน้าเค้ก
วิปปิ้งครีม 100 กรัม (1)
ดาร์กช็อกโกแลต 50 กรัม (57.7%)
ผงกาแฟ 2 กรัม
วิปปิ้งครีม 300 กรัม (2)
น้ำตาลไอซิ่ง 50 กรัม
เกลือเล็กน้อย

- อบไฟบน-ล่าง 160 C ไม่เปิดพัดลม 20-22 นาที หรือกระทั่งสุก

Very nice recipe! 👍 The coffee ganache cream on top was so yummy, the leftover cream I had after decorating I just ate by the spoonful 🤤
Some tips for people who want to try making this recipe:
1. If you click the button with the three dots under the video, and then click 'Show transcript', all the subtitles will appear in order of the instructions in the recipe. It saves you from having to constantly rewind and rewatch the video. It also tells you exactly when in the recipe you should start preheating the oven for it to be ready in time when you need it. Very convenient 👍
2. If you are heating the milk in any of the steps in the recipe in a glass cup or container in the microwave, be sure to keep an eye on it. It will look normal at first but suddenly get super bubbly and explode everywhere all over your microwave if you leave it in for too long.
3. If you didn't completely dissolve the sugar in the egg yolk and oil mixture don't worry, after adding the hot coffee milk the sugar will melt and the mixture will become smoother.
4. Make sure to use white vinegar to stabilise the meringue mixture (darker vinegar will change the colour). If you don't have white vinegar just use lemon juice and it'll do the same thing, or tartaric acid/cream of tartar if you have it.
5. When folding, use a spatula to "cut" the lump of meringue into smaller sections (I cut about four times) and then use the spatula to scoop batter from the bottom of the bowl to the top. Then repeat this step until the batter is homogenous. Basically, wherever there are lumps of white, cut it a couple times, then scoop from the bottom to aerate the batter.
6. When you're folding the meringue through then cake batter, it's okay not to completely fold it before adding in the next third of egg whites (just like they've done in the video!), but be extra careful on the last folding to get any and all streaks of egg white gone. I missed a spot in that step and after I poured the batter into the pan I realised there was a lump of meringue in one area. I wasn't rigorous enough in getting rid of it so when my cake came out I spotted a white eggy bit in my cake.
7. After you have poured the batter into the pan, put a tea towel or a thick white cloth under the pan when you smack the air bubbles out of it. This will make it not so loud and won't break your bench top or cake pan. A good three-ish smacks should make all the bigger, more unstable bubbles rise to the top and pop. You can leave it like this and bake and the holes where the bubbles were won't be visible after baking, or if you want you can use a toothpick or skewer to swirl all the holes away so it looks neater. If you didn't fold the batter properly like me and you can see there's a little bit of egg white in the batter, you can use the toothpick/skewer to gently mix it away before baking.
8. After baking, invert the cake onto a cooling rack immediately. If you don't, it will shrink weirdly in the pan. (It may still shrink on your rack as part of the natural cooling process, but if you leave it in the pan it will warp as in shrinks and look a bit ugly. 😅) You can also leave the baking paper/parchment paper on the cake and peel it off after it cools down.
9. Semi-sweet chocolate isn't explicitly labelled in the supermarkets where I am, but I just used dark choc chips from a brand I knew wasn't too bitter, and it turned out really well!
10. As for the milk syrup, I didn't want my cake to be soggy like tiramisu or tres leches, but I did put apply a good couple layers with the pastry brush. It barely used up any of the milk syrup, there was so much left. If you're short on milk or sugar, don't fret because you could probably get away with making like half or a quarter batch of that because you won't need much. (Just make sure to make it in a cup with a smaller diameter so that the syrup level is high enough that you can dunk your full pastry brush in.)

So fluffy and tasty! Easy to make and love the fluffy sponge cake. I used brown sugar for the egg yolk mixture and only 45g of white sugar for the meringue. Halved the coffee cream mixture and didn't add sugar in cream as I'm using non diary whipping cream which already sweet. Will make it again
