I think cream cheese mixed with cheddar cheese would be a good center for the bacon and jalapeno recipe. Roll the cheese mixture into small balls and freeze them then cover them with the parmesan/egg/jalapeno/bacon mixture. The fry them

I’ve used this mixed with ground chicken or fish (salmon or sardines) to make fish sticks or nuggets. It’s a very useful recipe! ❤
Ok this is complete insanity but it actually worked. I had no egg whites but I had egg beaters. I mixed it with some store brand Parmesan made a few balls and put them in my air fryer doing something I do to roast pecans ( put in a small loaf pan and hit preheat) one minute before preheating is done I will take out my pecans and they are nicely toasted. I did the same with my balls (ouch 😂😂) my Parmesan balls that is and they are crunchy and delicious. Go figure!! No seasoning at all just cheese and egg beaters. And no mess with oil

400 for 10 minutes
I tweaked it a bit and added garlic powder and chef prudhome pizza magic seasoning. They came out golden brown and delicious.
Just doing the preheat did not work as good as preheat the air fryer and cook for 8-10 minutes at 400 degrees

Read the ingredients on the cheese. Cheaper brands often include lots of cellulose (wood, basically).
Actually cellulose is fiber. Naturally found in fruit and vegetables. Not just trees.
You’re right. Cheap Parmesan is full of fillers, better to avoid it.

Would swapping the grated cheese for almond flour work to make a sweet version instead of savory, and maybe add cinnamon and cream cheese in the center
I think you might need a bit of oil or melted butter to make it hold together... I have a feeling that almond flour and egg white would break apart...

I think these would be great if you put a mozzarella cheese ball inside and put Italian seasoning in the mixture, then serve with a marinara (with lots of garlic). Yum! You could also put a sausage chunk inside. Oh, double yum!
I used to make an appetizer all the time called olive cheese puffs. It was a cheese and flour dough wrapped around a single black olive and bake it (orig recipe called for green but I don't like those). I think you could wrap this ''dough' around an olive and it would do great. They turn out about the same size as yours.
I used to have the green olive ones as a kid - one of the many appetizers my mom served at Christmas. SUCH a great memory! I want to try that now!
Maybe try a mixture of the two cheeses.

You could also reheat in an air fryer to re-crisp.
That was easy enough & very tasty...used an air fryer instead of grease/oil...10 minutes gave a nice golden crust...👍👍

So i just tried these last night two ways, but Both with the cheap parm. I did a traditional, like yall, & also... (drum roll....) a *Sweet Version! 😋
Once it was out of the oil, i had a plate ready with swurve brown sugar & cinnamon to roll them around in; & then i made a batch rolling then around in swurve powdered sugar. ( thinking of the donut holes i use to get).
The cinnamon sugar type was 10X better! (The ones in plain powdered sugar were eh, ok, but not fantastic like the cinnamon kind).

I saw your video today and I IMMEDIATELY ran into the kitchen to recreate what you made.
We had Trader Joe’s parmesan ( grated cheese) that I used…no jalapeños in house but hey we had banana peppers!
I know we have Old Bay Seasoning ( but I couldn’t find it) but I found the Creole Seasoning ( so I used that) and I also added freeze dried chives and some pepper.
I must say they were ABSOLUTELY Amazing ( and crispy in the outside and gooey on the inside)….I only cooked 2 balls ( spheres😜) and put rest in fridge and will cook a couple at a time each day.
SUPER Yummy and ohhh so satisfying!

I would add some rehydrated dried minced onion to the corn and maybe use those tiny whole corn that is food processed. Or maybe just mince some fresh onion.

I have done very similar but I added salmon I fry them in avocado oil. They were delicious. I have some in my freezer for if I want to take them can warm them up in the microwave❤😊

You can always use Jalapeno powder. Yes, there's a powder form you can use and I like to use it in moisture sensitive recipes.
May try feta cheese with kalamata olives as side for greek salad.

Parmesan fish fry is awesome!
I would try bacon, and a small chunk of cheddar inside it with a sour cream dip. It might mimic a loaded baked potato.
Sweetcorn or cinnamon with creamcheese in middle.
Use the spoon that you have and drop half the batch in at once. Can have them all in with just 2 drops. Less babysitting with you timing.
Their name could be Parmesan Hushpuppies NOT balls. What ya think?

Wes on Highfalutin Low Carb did this recently and he thought the cheap parmesan turned out better. He added 5 drops of corn extract to it but he said when he did it again he would add more.
