Reverse Sear Ribeye on the Weber Smokey Joe

- My attempt at cooking a ribeye using the reverse sear method with my Weber Premium Smokey Joe kettle grill. I replaced my older smokey now with this newer model for the big haul and it's always proved to be an excellent cooking vessel!
This cook was during our stay at Grand Haven State Park. I'll have a followup video showing more of the park and our time there.

If you just need to sear 1 steak, BBQ dragon makes a cooking grate with a handle that goes right on top of the full size charcoal chimney - It's a pretty intense sear. I've also seen people put their Grill Grate aluminum grate right on top of a chimney. And if you use that upside down you get more surface area for a crust - almost like a flat top. Just some optional methods if you're interested.
When you cut into the steak, I thought I was going to die of hunger. It looked amazing.

Just wore out my original Smokey Joe and replaced it with a Jumbo Joe. Really loving the slightly larger grate surface area. Same construction and portability, just more capacity especially for indirect cooking.

Since using my little Pit Boss smoker and our Blackstone to reverse sear our steaks, I don't like restaurant steaks anymore haha. Reverse sear is the way to go. Great video!
Excellent cook off. Had you called me earlier in the day I would have driven out to see you guys and help you finish off that steak. Going to check out that new weber grill. My old grille has finally seen the end of its life. Enjoy our Michigan, Grand Haven was a great choice to stop. If you are trekking north on US 31 you may check out the lighthouses we have here. Not going to lie...Thermapen for the win. Blows away all the other thermometers I've ever used.
As for charcoal...the struggle is real. I bought my first Webber Kettle earlier this year and have done a few cooks. When I get it, I get it...The kettle is hard for me to get the temp "just right" for anything I'm doing. I'm using a FULL chimney to get the grill fired up, but sometimes I can't get the temps to hold for a long time. I'm just using the BASIC system for now (bottom charcoal grate, top grate, and that's it. Many have said "Get the charcoal baskets, you really want those", but others are "nah, just get that thing hot and rock and roll. Currently I'm using one of my temp probes to get the grill temp (no temperature gauge on the base model), and usually a full chimney gives me about 375F of indirect heat, but it's very 'fluid' as the temp seems to jump up to 450F by just moving the probe 2" nearer to the coals (yes, expected, but I don't like moving the steaks because everybody loves the grill marks...LOL). :)
Good stuff here Adam. We too will buy a Kroger Steak when in a pinch, and properly seasoned??? They are pretty good. The biggest issue we find? INCONSISTENT CUTS (1" at one end, 1/2" at the other ... or worse).

I have a junk gas grill I converted into a charcoal grill it works really good and I don’t have a penny in it lol it’s lasted me 3 years now and it’s probably 15+ years old thanks for sharing buddy safe travels praying for everyone in Florida hope your place made it through ok
Great tutorial! I think I went through about 3 of those little grills, until I finally bought an offset and then a full size webber kettle. Now that I've seen how you did it, I can pull my little webber back out and take it camping or to the beach.

one method ive had success with for my sear after sous vide is lighting a full chimney, then placing the cooking grill directly on the chimney for an extreme heat.

Awesome little grill. I just bought my second one.
It was a difficult decision recently to choose which portable grill Weber makes for a new purchase. Never had one of these portables although I have had a Weber 22" kettle for 35+ years, the same kettle too, but now there's just the two of us to cook for. Decided to check them out and found all 3 of them have their benefits to cost values. The old original was my first study then I checked into the premium smokey joe and finally the jumbo joe, an 18" version of the premium but the vent holes in the kettle half are located in the bottom as most Weber kettles have. I wasn't so sure on the side vents being up higher and having to scoop out or pour out the ashes. Ended up with the Jumbo joe as its not that much bigger but enough for 4 folks when the time comes. Also, I preferred the vent system and overall features vs the two smaller ones. The jumbo joe has a better cooking grill as it has handles and openings for adding charcoal, a heat shielded upper kettle handle too. Nothing major but those two features were the tie breakers. Plus, I installed some handles on the vent openings so I can adjust them open/close without having to use a mitten or the tongs. So now, we can charcoal BBQ and use less of it per cook, is the plan plus the portability vs. the big 22" kettle on wheels.

Your about 20 to 30 minutes from my house. Would have loved to be part of a meet and greet. Enjoy your time in Michigan where we may have cold and snow season, but not hurricanes ; ). Everytime you and Abby go on a Big Haul, hurricanes come to Florida, or so it seems.
For my RV I got the smokey joe 18Inch portable . Great size has bottom vents and ash pan .
I love those Webber Smokey Joe grills. I have burned up a couple of those and one of the Webber large grills. And the best way to get the charcoal started is with the charcoal chimney.
