My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I cooked my first pork shoulder yesterday. I used the snake method but it took a long time to get up to the 200-250 degree temp. I learned a lot! I saw when the meat went through the sweat stage for a few hours. It took 12 hours to slow cook. I kept checking to make sure the vent at the bottom was not clogged. I got the meat up to around 180 internal temp. I think I did pretty good for my first time. The fat was rendered and the connective collagen melted into nice gelatin. The pork tasted like the turkey legs at Disney Land! 😂. I built my pot using your video. But there’s also a guy that gave a review on the Walmart site for the IMUSA pot. He used the pot lid and created a better seal and left more room for charcoal in the bottom. He used pop rivets to connect the lid to the bottom of the pot. I combined both methods to build the smoker. What temp. Do you finish at?
Hey Jose, I don't cook using internal temps and cook entirely by look and feel of the meat. I finish in oven at 275F once wrapped. Please see my numerous pork videos for my black belt tips. Thanks for stopping by

Glad you love to experiment. I think it is a cultural thing as many people in America do NOT want work outside the box. You have something simple, effective, and straight forward. I have an large gas grill but might one of these and experiment with more BBQ.

Harry, greetings and BBQ love from the Jersey Shore.
Would something like this work with a 18.5 WSM barrel section on a Weber 18.5” kettle? I know it’s not as good as a WSM, but for what it is going to cost me, free, wold it be worth the effort?
Or am I better off putting the middle section (barrel) on a Jumbo Joe, and lowering the center of gravity? How long of a burn time can be expected from that type of set up.

I am a cook and not too much of a DIY guy since I'm busy building datacenters in my day job. I think there is a home business opportunity here for a crafts person.
There are a lot of great videos on RUclips on how to build one. I used techniques from a few and built one. Fun project, used it twice and than took it camping and pot was crushed in caravan by sons bike🙄

Harry do you use a gasket for any of your weber smokers or weber kettles to keep heat and smoke from leaking? If so what product do you use?
No gasket needed. Save money.

I use the Minion method. Be sure to start with less coals.

My first build was a FrankenBrinkmann. Modding is addictive. Ive modded a mini WSM a 22 kettle and am making a mini UDS. Im acually entering a local competition with my modded Kettle and my FrankenBrinkmann
MY NOT CHIMMICHURRI SAUCE
4 garlic cloves chopped
2 birds eye chilies seeded and chopped
1 cup parsley chopped
1/2 cup coriander chopped
3 spring onions - green part only and chopped
3 tbsp fresh thyme and oregano
1/4 cup red wine vinegar
Salt and pepper
Honey to taste
Blend the heck out of it. Once blended add a bit of olive oil to bring it all together and give one last blend without emulsifying

Why the vent on the top so hard to turned?
You use a metal rod like a screwdriver to turn. The grease clogs the pin but after the top heats up, the grease melts and the top damper is easy to turn. When cold, I just bang on the sticky damper with something metal
