    Finally a small grill like mine, I bought a 15 inch, 15 dollar grill from Walmart. Now I know they can work. The only thing I'm missing is a thermometer but we will see how I can get my ribs done

    That customized Smokey Joe looks brand spankin’ new! You’ve done this before haven’t you! 😅
    Re: Silver Skin; if you’re buying the Swift Premium baby backs from Costco, they’ve already taken the silver skin off. Not positive, but I believe they only do this for Costco and I’ve never seen any other brand do this.
    A half rack fits perfect. Good cook!

    Not enough Smokey joe videos so thanks for this one!!
    One thing you didn’t mention is once you lit your lighter cube how the coals burnt. Any comments in that regard?

      Weber cubes do not smell. Great for starting charcoal

    I have had a Smokey joe for years but it seems to cool the fire way down when you put the top on. What is the aluminum pan for? Does the grill come with the thermometer ? 30 coals lasts 3.5 hours ?

      Thanks for Watching! Pan acts to separate the charcoal and create the indirect side as I stated in the video. The grill does not come with the thermometer

    Does the lighter cubes not taint the food? They smell like gasoline are totally unnecessary.
    Also ... Is lumpwood coal not preferable to briquettes since they don’t have additives added to bind them?
    I’m a total novice with BBQ so just trying to figure out what’s what.

      Dmcc Mac Thanks for Watching! The cubes are wax not lighter fluid, I don’t notice any taste, Regular Blue Bag Kingsford works great for me, you can use lump it works well also. Good questions!

    I need some help how do you cook fish on a charcoal grill today I try cooking some fish but the aluminum foil got stuck on the fish and got all hard smh also meat comes all hard the only thing that comes out good is Hotdogs, Hamburgers, Chicken and Corn the I suck at it I need some help or tips how to cook fish and Meat 😏

      djknight_bringin'_back_the_old_skool_style Thanks for Watching! Can't help you with the fish, I don't grill fish, try doing a small rack of ribs like I did in this video. It sounds like you may be overcooking some of your meat, get a food temp probe and start there. Also if you notice I cook indirect quite a bit, it gives you better control over the cook. Hope this helps, send questions at anytime!

      I'm new to this so I'm learning and thanks I'll do what you said I'll buy I'm missing and I won't put the meat over the the charcoal I'll put half charcoal and the rest of the grill no charcoal so that the meat and the rest of the food won't get burn

      fish can be tough, but doable! First, don't use foil. If you really want the help, the copper grill mats like the Yoshi are actually fantastic. They do let you have grill marks. Just lightly oil them, then put fish on, on top of the grates. If you want to do it the hard way, on the grates themselves, keep reading. For a beginner, make sure to get a firm fish, smaller pieces (not a whole side). Salmon is a pretty good starter - just get uniform thickness. If it has a really thin flap - cut it off, it'll just burn otherwise. I prefer skin on, as it insulates the meat from burning and if you lose it stuck to the grill, it will be fine. Start with a really hot grill with hot grates -- but don't cook the fish over a high coal or it will just burn before being done. Make sure the grates are really clean, then oil the grates when hot, and oil the fish skin. When you first put the fish down, give it a little shake as it slides on. That should keep it from getting an initial tight stick as the skin reacts to the heat. Then the fish will stop sticking when it is ready to release -- don't try to force it early or it will all fall apart! good luck!
