This is a GR8 intro to charcoal cooking!!! I started out with a Weber 18" YEARS ago without any of these type tips...was a LONG learning curve! Now have a SNS 22" kettle & a Weber 22" with a Santa Maria set up on it and BAM!!! they are FANTASTIC to cook with especially with the Slow N Sear system they have in them!!! I use all these tips now that I had my "learnin"! Love charcoal cooking! Although I'm a die hard B&B charcoal user, but did start out with Kingsford!

For slow smoking i typically leave bottom vent fully open and top vent open slightly. If top vent is fully closed your charcoal will eventually go out. Another method is to keep bottom and top vent similar. But both need to be open to some degree to allow airflow
To avoid accidentally swallowing a lose metal bristle, even when using a high end grate brush is to use an onion. Cut an onion in half and after the brush has been used, go over the grates with one half of the onion to pick up any left behind bristle, plus it add a great aroma to area. The other half you can throw some butter lemon pepper seasoning and wrap it in aluminum foil. At the end you will have some delicious grilled onion.
What I do after scrubbing the grate: Fill a bowl with high temp oil/olive oil. Soak paper towel in it and rub the paper towel over the grates. Less chance to have your food stick and grate will be very clean.
Good video! I've bee cooking on a Weber Kettle for decades and I personally believe it is the most efficient means to grill the widest variety of foods.

I have a small Weber kettle, about 18 inches which is fine, but I bought a twenty two or four inch one last year, and no matter WHAT I do, I can't get a long lasting or consistently hot fire. I have the chimney starter and the grates, and I clean my grill grates and use Kingsford briquettes. I have NO idea what else to try, but I'll give it another shot. Great video. I’ve been using a pellet grill for several years, and it’s been a while since I’ve owned a Weber kettle. Well cold winters up north mean pellet grill goes thru too much pellets each use, so Weber is a great seasonal option for sure. This video is a great refresher for me!
I have been a professional chef most of my life. That makes me a very good cook. I love my copper Weber kettle grill. I live in Ohio and use it year round. Your tutorial is excellent and enjoys my full endorsement. I slow cook, roast and smoke on it. I also have a Camp Chef smoker. I use that for the big briskets, pork shoulders and spatchcock turkey, but that weber is my baby. Good video.
I use Kingsford aswell. it seems consistent. the consistency of the same coals allowed me to dial in my vents for temp control. speaking of temp control expect the temp to fluctuate +/- 20°.

Easily the most thorough video I've seen on using the Weber Kettle, man. I have two and they're all I use on my channel. This grill not only took my grilling and smoking to the next level but the things I had to learn to use it properly are skills I can use on any charcoal grill. We recently went though a year-long home renovation and had to stay with family. My brother-n-law had a grill I'd never cooked on before. Using basic knowledge like two-zone cooking and vent settings I was able to cook on his grill just like I'd owned it for years. I'd venture to say most people who cook on another charcoal grill couldn't go cook on a Weber kettle without some training. Oh and B-roll will fix that pesky wind-chime problem. :)

I prefer "Charcoal rails" to the basket. They're a little more affordable and much more versatile. They clip onto the charcoal grate on any of the rungs. One thing worth mentioning is that when you're doing single-zone cooking with the lid closed, you should have the vents over the protein on the cool side. This pulls the smoke over the protein and improves the flavor. Unfortunately, that also puts the lid thermometer over the hot zone. The result is that the lid thermometer will read as much as 100 deg F warmer than the area that you care about. It's well worth investing in a thermometer that clips to the grill grate near your protein, and rely on that thermometer while you manage your airflow. I use Kingsford classic briquets for pretty much everything. I use wood chunks to add smoke. Most modern grill grates have sections by each handle that lift up. If you position the handles so that one is over the hot zone, then you can flip the grate open to add wood (or even additional charcoal for long cooks). One thing that newcomers might not realize is that you only want a few (like 3-4) wood chunks on your fire. If you put on too much wood, you'll over-smoke the protein -- it can get bitter and doesn't taste as good. I like to do reverse-searing for thick cuts of beef, pork, and lamb. A trick that I find really helpful is to use insulated gloves and just rotate the grate (using the handles) 180 deg when you're ready for the sear. You don't have to move the protein at all, and it only takes a few seconds. If your searing zone is really hot, this lets you get all the protein onto the sear zone at the same time. Let it sear for 30 second or so, turn the protein and sear the other side another 30 seconds, and you're done. Thanks for a great video.

Buy all Weber brand products and you can't go wrong. I wasn't sure what to think with the wind chimes and the occupy mars t-shirt but this video is a perfect starting point for charcoal grilling.
I tried lump charcoal for a while but any bag I bought had maybe as much as 20% small broken pieces that would fall through the starter chimney or the lower grate in the grill. So I was paying for some I couldn't use. I just use all hardwood briquettes now.

I love the Beer can chicken , we always have to make two at a time . One gets devoured before it comes off the grill . Part of being the cook and testing the food for doneness . Recently I was introduced to Kamado grills , excellent way to cook also . If it's a BBQ count me in !!!
Then surely you know that beer can chicken is inefficient (center of the chicken takes longer to cook), does not impart any beer flavor, and is a waste of a beer.... but ok
I have a high pressure washer to clean my outdoor cookers with. Makes the job a cinch. Cleans the heat barriers of the propane grill, smoker gratings, grease traps and the three-burner propane stove's floor pan grease and over-flow catchers under the burners. If you keep these things clean immediately after use, they'll be ready to use at a moment's notice.
Good Video. I like to add that people should wire brush the grill grate after they are done cooking. The grate is still HOT and debris will clean off easily.

I am doing a 40-50 person cookout tomorrow with two charcoal grills one of which is brand new. Thank you for pointing out the burn off time, I have never cooked this way and didn't know how long that took. Works out since I only have one chimney but two grills

anything with similar, cisco, grapeseed, sunflower seed, veg oil. I usually dont use any and just let the grill do the work at 550 degrees for 20 minutes.
I've been doing this for a while, but I really don't use so much charcoal or the baskets tbh and have had fine results although I feel I could be working more efficiently. Why should you always get high temperatures (450) and use a lot of charcoal to start off with? In my view that doesn't make sense for low and slow?

Grill grate cleaning: There are also some great wood paddles that fit to your grates when you scrape them when they’re hot. I also use a citrus spray and heavy duty scrubber before I start the grill. Keep those gates clean!
I had a fire once in a propane grill in a carport next to woodpile that I blew out...it was frantic but never used one again...and I thought I burned off/ cleaned off grease.
Great summary of the fundamentals. I love using my kettle but must admit I'm guilty of starting to cook before coals are fully lit.. Gotta be patient. For low & slow, I like the snake method to get long cook times.
I clean my grate with an SOS after each use. I also wash my frying pans. It just makes sense. If you control your heat and remove the grate after cooking the clean up is easy. I also use the 14" Smokey Joe. The smaller grate is way easier to clean. Sear with a clean oiled grate then lower the heat and cook. You put your grill away for the winter? I grill year around. I love my Solo stove.
Own a 2005 Weber performer Great tips here in this video. Cheapest best way I clean grates is to heat em up, grab a piece of aluminum foil, crunch it up into a ball and using some tongs just scrub it clean with your ball of foil. Easy and fast, cheap too.
You can even do some baking on the weber. I did some cinnamon rolls for the hell of it. Also did pizza and bread. Apple wood smoked cinnamon rolls. Everyone loved it.

I was just given a Weber Kettle a friend was no longer using! Used the snake method and made my first smoked pork butt! Seriously SO good! And the air smelled like hickory smoke all day. This girl is hooked on charcoal grilling!

At the 14:25 mark, I see how the indirect heat is set up. About how long should chicken legs/thighs be grilled over the indirect heat on each side before searing? Should the lid be open or closed when grilling chicken legs/thighs?

Don’t underestimate these little things, I learned to cook on one. I used to fire it with small wood splits and while it’s a lot more work then a proper offset smoker you can get the same results! Honestly for quick stuff (less then 6 hours) for just one person it’s not bad the only problem is you have to use really small wood splits to get a clean fire and keep temperatures under control in these so your adding wood every 5-10 minutes. My advice is leave the dampers wide open and just add enough wood to get the desired temperature. The folding grates are there for a reason. The food should be on the opposite side as the fire and the fire should be right under the folding part of the grate as close to the side as possible. It takes some practice but these webers will work as long as your not cooking for more then yourself.

I have an offset smoker that I use when I am smoking lots of meat, or bigger pieces. But I’ve had a Weber kettle for nearly 20 years now (I just got my second one as the first was starting to rust after being left outside for that many years), and I smoke more on the Weber than the offset. I few have suggested the onion method. Only concern I have is that I grill a lot. 3-4 times a week. That’s a lot of onions lol.

Buy all Weber brand products and you can't go wrong. I wasn't sure what to think with the wind chimes and the occupy mars t-shirt but this video is a perfect starting point for charcoal grilling.

I tried lump charcoal for a while but any bag I bought had maybe as much as 20% small broken pieces that would fall through the starter chimney or the lower grate in the grill. So I was paying for some I couldn't use. I just use all hardwood briquettes now.

I love the Beer can chicken , we always have to make two at a time . One gets devoured before it comes off the grill . Part of being the cook and testing the food for doneness . Recently I was introduced to Kamado grills , excellent way to cook also . If it's a BBQ count me in !!!

Then surely you know that beer can chicken is inefficient (center of the chicken takes longer to cook), does not impart any beer flavor, and is a waste of a beer.... but ok

I have a high pressure washer to clean my outdoor cookers with. Makes the job a cinch. Cleans the heat barriers of the propane grill, smoker gratings, grease traps and the three-burner propane stove's floor pan grease and over-flow catchers under the burners. If you keep these things clean immediately after use, they'll be ready to use at a moment's notice.
Good Video. I like to add that people should wire brush the grill grate after they are done cooking. The grate is still HOT and debris will clean off easily.

I am doing a 40-50 person cookout tomorrow with two charcoal grills one of which is brand new. Thank you for pointing out the burn off time, I have never cooked this way and didn't know how long that took. Works out since I only have one chimney but two grills

Hey Tom, if I don't have access to canola oil, what could I use instead, to rub residual chemicals away from my kettle right before the initial burn-in?
anything with similar, cisco, grapeseed, sunflower seed, veg oil. I usually dont use any and just let the grill do the work at 550 degrees for 20 minutes.

I've been doing this for a while, but I really don't use so much charcoal or the baskets tbh and have had fine results although I feel I could be working more efficiently. Why should you always get high temperatures (450) and use a lot of charcoal to start off with? In my view that doesn't make sense for low and slow?

Grill grate cleaning: There are also some great wood paddles that fit to your grates when you scrape them when they’re hot. I also use a citrus spray and heavy duty scrubber before I start the grill. Keep those gates clean!

I had a fire once in a propane grill in a carport next to woodpile that I blew out...it was frantic but never used one again...and I thought I burned off/ cleaned off grease.
Great summary of the fundamentals. I love using my kettle but must admit I'm guilty of starting to cook before coals are fully lit.. Gotta be patient. For low & slow, I like the snake method to get long cook times.

I clean my grate with an SOS after each use. I also wash my frying pans. It just makes sense. If you control your heat and remove the grate after cooking the clean up is easy. I also use the 14" Smokey Joe. The smaller grate is way easier to clean. Sear with a clean oiled grate then lower the heat and cook.
You put your grill away for the winter? I grill year around. I love my Solo stove.

Cheapest best way I clean grates is to heat em up, grab a piece of aluminum foil, crunch it up into a ball and using some tongs just scrub it clean with your ball of foil.
Easy and fast, cheap too.

You can even do some baking on the weber. I did some cinnamon rolls for the hell of it. Also did pizza and bread.

I was just given a Weber Kettle a friend was no longer using! Used the snake method and made my first smoked pork butt! Seriously SO good! And the air smelled like hickory smoke all day. This girl is hooked on charcoal grilling!

Glad I came across this excellent video, subscribed! I have a Weber 18-inch Kettle and I have not been able to cook chicken legs/thighs correctly. At the 14:25 mark, I see how the indirect heat is set up. About how long should chicken legs/thighs be grilled over the indirect heat on each side before searing? Should the lid be open or closed when grilling chicken legs/thighs?

Don’t underestimate these little things, I learned to cook on one. I used to fire it with small wood splits and while it’s a lot more work then a proper offset smoker you can get the same results! Honestly for quick stuff (less then 6 hours) for just one person it’s not bad the only problem is you have to use really small wood splits to get a clean fire and keep temperatures under control in these so your adding wood every 5-10 minutes. My advice is leave the dampers wide open and just add enough wood to get the desired temperature. The folding grates are there for a reason. The food should be on the opposite side as the fire and the fire should be right under the folding part of the grate as close to the side as possible. It takes some practice but these webers will work as long as your not cooking for more then yourself.

I have an offset smoker that I use when I am smoking lots of meat, or bigger pieces. But I’ve had a Weber kettle for nearly 20 years now (I just got my second one as the first was starting to rust after being left outside for that many years), and I smoke more on the Weber than the offset. It works great! Look up some RUclips videos. It’s fun!

If it's a heavy gauge steel brush, you should be ok. Keep an eye on it and make sure to toss it after its been heavyily used (6 month to 1 year)

What about high altitude cooking with charcoal? I’m running into the problem of the coals not last and going out before I’m done cooking
you may need a fan control made by BBQ Dragon or other brands to help regulate airflow. Also add more fuel. High Altitude grilling is challenging.
