    I fry the onions in butter separately. Fry the liver (patted down with paper towels) in lots of butter. When liver is almost done, just a few minutes on each side, I add the onions in. Yum.

    I love liver- always have. But I was always taught to salt beef liver after cooking, to keep it tender.

    I usually opt for calf liver and soak it in milk for 30 mins to an hour before cooking (gives it a more mild taste). Cook it in bacon grease and/ or butter and top it with bacon slices. Yum! 🤤

    Cassie I see you know the trick too! I was anemic as a kid. Dr gave me iron pills which made me double over in pain. Grandma told my mother to throw out the pills & make liver for me once a month. My mother's liver was the only one I could eat. She said the secret was not to overcook it! 😉

    I love liver... Where I live, it is only available frozen at the Supermarkets, or if I want it fresh, I have to pre-order it from the specialist Butcher... This is small City Vancouver Island reality. When I was growing up fresh liver and kidneys were available where ever meats were sold as well as tripe and tongue... all delicious, by the way... If you have never had beef tongue, you are really missing something.

    That looks amazing! I just had lamb liver, seared in ghee but pretty rare. It was very mild and really enjoyable. I immediately felt really good after eating it. It's such a nutritional powerhouse.

    I tried liver once, when I was young. Haven't tried it again in decades. It looks so good in the video, that it makes me wanna try it again! Maybe I'll be brave and get some.🙂

    When I was a little kid in the 60's my mother asked what food I wanted at my first party. I said lamb's fry (liver in Oz) and salad with Italian dressing.
    I got in trouble and she made my brother's favourite. Spaghetti Bolognese and coloured ice cream. I sulked all through that stinking party.

    Will have to try that. Since trying liver carnivore crisps I've been too afraid to cook liver since the crisps made me gag. But I do have plenty of liver in the fridge from feeding my dog. Have you guys ever tried it partially frozen and raw? Some people like their organ meat that way.

I have a quick question Cassie, I only have Staub pre seasoned cast iron, do you think that will that still work for this and your roast recipe?

    I buy mine frozen in 1/4 lbs individually wrapped. I thinly slice and dice so that there is less fibers. Then I fry in bacon grease. So, so yummy 😋

    Okay, this was the best recipe I’ve seen. Another creator suggested maple syrup. I wonder how maple bacon grease would taste?! Wish me luck, and thank you for the idea!

    When I was little my mom was cooking what I thought was steak. It smelled amazing! I asked her for a bite, which she gladly gave me, and I nearly threw up. She got a good laugh out of that, but I was traumatized, haven't been able to look liver in the eye since. That last part is a joke, I have tried it since but I just can't do it. For someone with thalassemia too much iron can actually be damaging so I'm going to go with: God gave me taste buds averse to liver to prevent that kind of damage 😂

    The only way I can eat liver if it's super well done and absolutely SMOTHERED in onions...and ketchup...lot's of ketchup. Of course I'm not eating onions anymore because I'm mostly carnivore...maybe I'll just buy those liver pills I saw Dr. Chaffee talking about in that Carnivore documentary on Dr. Berry's channel.

      Seoreh My mother made liver & onions too. Trick: don't overcook the liver. It goes from creamy texture to grainy and stronger flavor if overcooked.

    That’s how I like my liver done…except I’ll marinate it overnight w/some hickory liquid…I add real bacon, onions, garlic, pepper, salt, & butter! Yummy🤙🏾

    That looks really good. Haven’t tried liver or any other organs, besides beef heart. And beef heart is just basically steak to me. I didn’t see a huge difference. Lol. I’m going to have to try some liver soon though ☺️

      @@lindaa2437 Yes I am. I got mine in a large package at the ChefStore (used to be called Cash & Carry), it’s a restaurant supply store with food and other items. Anyone can shop there though, not just for restaurants. There are locations in other states too, so you may have one. They have a website you could check ☺️

    That’s TRANS fat. I love cooking at high temps- but if the oil is smoking it has turned into trans fat and is toxic. Get a thermometer- cook at 375, right before smoke point to get the best sear.

      I dont think that will stop Cass from grilling, she's pretty paranoid about things and this has never been a concern that's she's voiced. She's a cancer survivor and I don't think some smoked meat raises any red flags for her. Appreciate your concern👍

    To me this is the best. Soak liver in milk for 1 to 4 hours. Get your pan really hot. Add a bunch of butter and bacon grease. Sear each side of the liver for 60 seconds. Eat it immediately. It’s amazing

      @@CarnivoreQuest I've only tried liver a few times in my life, pretty new to the carnivore scene but have had pretty good results with keto while I was on it, looking forward to this new journey. Will give liver another go but only an ounce every few weeks, I hear that's really all that is needed and can possibly go much longer without it. Ty 😁
