Actually, the trendy fine dining restaurants that serve little portions, follow the method of serving a little bit of everything from the menu, from appetizers to dessert. If they were to serve large portions of everything, you couldn't handle eating till the end, and a lot of food would also go to waste. That's in contrast to the inexpensive restaurants that only serve you limited food but in large quantities, that's why most of them are cheap, and also because of bulk cooking.

Alfredo Alcantar I see where you're coming from, but I will also say that Texas is big enough that finding the good stuff is very tricky. Your chances of finding real Mexican food goes up if you go to the flea markets. I don't mind some non authentic stuff... until I get the bill. Real Mexican food should never come with an absurdly high price tag.

I am Mexican and I am proud of the truly traditional Mexican food, I hope the US could try it and prefer it to the tex-mex style that many know as Mexican food
As a Tejano, I love the way our Mexican culture has mingled with Texas culture. The result is amazing food for any and all to eat. But I agree. People think enchiladas and Chile relleno are the main dishes when there’s so much more to it

I can’t believe I haven’t tried this place after seeing it hyped up so many times and only 9 minutes from my house! There’s just so much good food around, it’s hard to try it all but I’ll definitely be trying this one! Great video!

The Cheese from oaxaca, they call it quesillo (ke-c-yo) it's like mozzarella but with a different flavor good to make with quesadillas
If you ever go down to oaxaca they are known for having 7 different kinds of mole and variety of food from different indigenous people.
Cactus is called "nopales" when I was in Mexico, 40 years ago

North Carolina has SO many gas station restaurants. If you come to NC and fill up at a gas station, walk inside. You’re going to find a little mom and pop restaurant. The most bizarre restaurant placement I’ve seen is in the back of a drug store.

reminds me when I went down south. Best po-boys I had came from a little hole-in-the wall gas station in the middle of nowhere in Mississippi, near Picayune I think. Or on the outskirts of Picayune. Something like that.

Corner stores, small family-owned diners, food trucks, and gas station stores are always serving up really good food.

A hole-in-the-wall that serves what looks like gourmet Mexican food. Amazing.
This place lives up to the hype and is one of the best little Mexican restaurants north of the border. If you're in Denver/Englewood do yourself a favor and try this amazing spot.

Good luck now locals getting a table. A food truck up the street from me in San Diego just got named Yelps #1 restaurant in the country. What used to be an easy 10 minute wait for a great lunch is now two hours! Enjoy it while you can- it looks great!

I live in a good food desert. People in this stupid state do not know how to cook. They get into the restaurant business because they want to make money but they put out poor quality. They'd never be able to get away with that shit in California. Seeing good food come out of a gas station in Denver makes me green with tomatillo envy.

One of the best Mexican in Maryland, centered between Columbia & Jessup at that JCT-- also inside of a gas station, next to a strip mall. It almost defies all sense or reason but it is god tier. The Sunday flea market a mile away isn't bad either

Try them pickled in vinegar, they aren’t slimy at all and taste awesome! You can buy them already done in a jar at your local grocery store all you have to do is cook them to your style and liking

Another pet peeve is when people use a spoon to eat food other than soups or cereal. I hate it when people use spoons to eat solid food. And when people eat with one hand and the other hand/arm down on their lap and slouching. I guess I’m picky like that.

Santiago's - Colorado style Mexican food (Try the Mexican hamburger smothered with chicharrones. Hot,mild, or half and half) It's a Denver thing. Westword is a local newspaper that has really good reviews of local restaurants here.
Cheeba Hut is pretty good as well. Especially after you go to a dispensary. LOL.

When I lived in Denver (early and late 2000s) it was El Taco de Mexico (or something like that). Think it was on Santa Fe, near the art district. My office colleague introduced me to it one day and I was hooked. The staff was all women... almost all of them sporting some level of facial hair. (That's how I knew I was in the right place, lol.) Heard over the years, though prices rose, just like many of my favorite cheap eats (like pho) :(

It's not that it's changing, as the owner stated many of these dishes are traditional Mexican dishes. Sometimes restaurants just offer menu items they know customers will buy, items tourists are more familiar with, or unfortunately "Americanized" dishes. Trust me there are hundreds of Mexican dishes from various regions that are not available in the U.S.or anywhere else in the world. Mexicans have been eating cactus for hundreds of years, in tacos, grilled, stuffed, in soups, salads, as a shake etc.

Same here in LA, we have food like this everywhere. I guess you can say the quality does seem pretty good for a gas station place though, it’s more at restaurant level.
The pad (or Nopal), which can be treated like a vegetable. It has a soft but crunchy texture that also becomes a bit sticky (not unlike okra) when cooked. Edible cactus tastes similar to a slightly tart green bean, asparagus, or green pepper.
