Like other types of kimchi, chili pepper kimchi also develops a sour taste as it ferments. The sour flavor in kimchi comes not from vinegar but from natural fermentation. If you want to speed up the fermentation process, leave it on the kitchen counter for a few days until it becomes sour, and then store it in the refrigerator and enjoy.

This morning I prepared my first own Gochu-Sobagi, I got very nice green peppers at a turkish store, and I think it will be delicious! I had a lot of fun making it, the korean style of preserving vegatables is one of the best possible ways I think. The german way is made with vinegar, that´s also not bad, but I prefer the korean style. Thank you again Maangchi! :-)

this looks really delicious, it makes me really hungry even though I just ate 😩. This recipe reminds me of my grandmother's mirchi bhajjis (deepfried stuffed peppers)' mostly because the chilis loook a lot like ones we use when making them. They are stuffed with tamarind, garlic ginger and some spices and dipped in chickpea batter. 👌👌👌 It makes me think that it might be good idea to try out this recipe and deepfry it like a fusion cuisine 😆
