    My Korean mother in law taught me how to make kimchi amongst other dishes. Everything you explained was almost to the T to how I was taught. Now that mom is older and can't cook, I make this and all the dishes she taught me. It's an honor for me to cook this for her. It makes my day when a batch comes out good and she says so. Thank you for teaching people this!

      Hi! Much like me living in deep south-eastern Latvian forest. I'm an Aussie & a life-long kimchi addict. Due to irregular supply of some ingredients, I've "invented" the BALTIC KIMCHI, using herring & anchovy as catalyst. All the best & enjoy THE BREAST OF NATURE, as we say in Latvia.

    Watching this, it felt like a mom teaching her daughter how to make kimchi (in the best way possible). Especially the part about trying a bite.. reminds me of my mom every time she makes kimchi for me 😆

    I always use your recipe to make kimchi and its honestly the best kimchi I've ever had! Living in Europe though it can get difficult at times to get Korean radish especially during the pandemic. I've used kohlrabi + kohlrabi greens and even the regular spicy white radish (piccolo) that's available here everywhere as substitutions and both work amazingly. Although I have to say that kohlrabi is probably the closest in taste and texture to Korean radish. Sharing this in case anyone else has a hard time finding Korean radish ☺

      Did you ever try daikon? I'm in France, so no Korean radish. And do you know what the white radish variety is in English or French so I can look for it? Thanks.

      As for Korean radish substitution, I recommend those small round pink/red radishes that u can easily find in supermarkets. You can use the green stems of these radishes as a substitute for YeolMu (baby radish green leaves). Daikon (Japanese radish) tends to be bitter and less mild/watery in taste. I never had kohlrabi so I can say anything about it but if u r happy with it, then pls do continue. There is more on Kimchi making tips/info on my written recipe link above.

      As an African American woman I work in a Vietnamese community specifically but does include other Asian ethnicities as well and I have learned a different culture with wonderful cuisine. I have learned to love kimchi among my favorites, I ove this recipe and hope i can do justice to it (don't want to embarass myself) so thank you!

    Hi Helen! Thanks for this video.
    At first I really don't eat kimchi. I'm not into fermented foods but just last year, I had a terrible severe acid reflux/GERD/bad bacteria overgrowth/ulcers, crazy gut problems. It was awful. I tried all sorts of diet and medications, been to several doctors but none helped. I was sick for months and I couldn't eat anything aside from banana and squash. All other foods would give me reactions as i developed food sensitivities too and i couldn't digest properly.
    Then I discovered fermented foods. I started with Milk Kefir (Fermented Milk out of milk kefir grains) and that helped me heal. Aside from that I incorporated other fermented foods like kimchi, miso soup, sauerkraut and kombucha (fermented tea) to my diet. Natural fermented foods are great source of probiotics. The good bacteria from fermented foods are essential to our gut ecosystem and can heal all sorts of gastrointestinal problems.
    Until now I ferment my own milk kefir and kombucha and now i will start making my own kimchi so i don't have to buy and buy and buy jars from groceries. I started to love kimchi and I eat it almost daily with my meals. Thanks a lot for this video and i hope my first batch of kimchi will turn out good 😊🙏

      Hi Rozz. Sorry to hear about your stomach issues! Glad to hear that you are well on your way to recovery, especially with fermented foods. Korean nutritionist recommend eating like our grandparents, eating fermented foods daily. The foundation of Korean cuisine is based on fermented foods. Fermented soybean paste/doenjang, red pepper paste, soy sauce, and 200+ varieties of kimchi. And tons of other fermented foods, like salt preserved fish, and vegetables fermented with doenjang and soy sauce...SO YUM😋.

The fermentation and tanginess of kimchi is very personal to each person/family. I personally love it at week 2 & 3. My husband loves it at week 4 when it is more tangy/fermented.
      BUT when ur kimchi gets extra fermented (i.e. too tangy to eat as is), you can make kimchi dishes using the extra fermented kimchi. We, Koreans, make so many kimchi dishes using extra fermented kimchi.

    Thank you Helen! I tried your recipe and rewatched the video 10 times, and happy to report that my kimchi turned out perfectly! I'm glad I took your advice to look for Korean solar salt, I must say it really made a difference compared to my previous kimchi made with normal salt. Thanks again for all the detailed advice.

    Update on my last comment here: I MADE YOUR VERSION!! You have so many great tips. My batch turned out FANTASTI!! I'm mildly stunned, still, to contemplate how well it turned out. Thank you so much. This is the best kimchi tutorial, certainly for a smaller batch and the critical little tips are explained really well. Every other video just doesn't have ANY of these particular tips. Thank you and I will link and recommend this to everybody who is interested in making kimchi at home.

    I miss my mother's kimchi. She is no longer here and it is wonderful to watch you make kimchi like I used to see years ago when I was young. Families gathering to make the traditional batch for burying in the ground in the large kimchi urns. I miss the homemade kimchi. Kimchi made with care is kimchi at its best. Kamsa hamnida.

Yes, I remember when I was a little kid, and my uncles working hard to clean out the enormous claypots that were buried in our grandmothers yard.     Thank-you Helen for this fantastic video. This came out so well that I'm making a second batch :) For my first batch, I followed this recipe with slight alterations and even though I messed up a bit of the process...it still came out absolutely amazing. I am now enjoying my homemade kimchi more than store-bought! I have not made the vegan version yet but looking forward to it. If anyone is on the fence about giving this a shot, definitely go for it!!

    I love Kimchi, I have only had the store bought kind and living in the city it was easy to find, since moving back home to Wales it is so much hard to come by, I've no Korean stores around me but I am determined to try and make my own and I can't wait, I'm super intimidated but super excited.     Yummy! I can't wait to make my own batch. I really love kimchi, but watching how passionate you are about making and eating your kimchi helps me appreciate the food even more. I love how passionate you are about it! You seem to have really gotten the art of it down. My Mexican mother always told me that food is better when it is made with love, so I know your kimchi has got to be some of the best. Thank you for teaching me how to make it.     Helen, just an update. I went to a traditional Korean restaurant and they brought out some Kimchi as a side dish as usual. I have to say that the Kimchi I made using your recipe tastes 100 times better than what the restaurant served us. I'm so glad that I cam across your channel.     I have probably seen about a hundred tutorial videos to make Kimchi and this is honestly the best one. I haven't tried making it because it seems really complicated. But because of this video, I think I know Kimchi better.
    It has never crossed my mind before, but this certainly made me realize that Kimchi is not supposed to be made the same way.     Thank you for this beautifully detailed how-to. I went out immediately and bought a napa cabbage, gochugaru, a pear and salt-brined shrimp and made a batch. I had to use daikon though as Korean radish is not easy to source in NZ (or at least my city). The kimchi turned out great and I was surprised at how easy the process was. Honestly though, I don't think it will end up fermenting for longer than a week as we'll have gone though it by then haha.

      Ha! I laugh with delight.Your recipe is fabulous. Only thing is, the Napa cabbage is rather hard to source here (Australia). Our local supermarket Coles actually sells but it is so old and flabby looking. I travel to get it. Then it cost $18 for one. (Good and heavy though) What!!
      Our other thing is I am Caucasian and my hubs Chinese. IT IS TOO HOT FOR HIM! What! We laugh.

    I am SO doing this. When I feel really down, kimchi jigea always cheers me up. It's amazing. It's superpowered food. So emotionally rewarding. Whoever invented it.............an angel. It truly is such a special food.

    I made the white Kimchi a few weeks back and fermented it in a gallon jar and it was fantastic. I bought the 3 gallon Kimchi Fermenter and I am going to try the spicy recipe tomorrow. I just hope mine turns out half as good as yours looks. Thank you for the great video.

      Kimchi is one of the Best Korean Traditional Foods in South Korea. There are over 200 kinds of Kimchi, each has its unique taste and flavor!! 😍 I started making my own Kimchi at home since 2005, absolutely love it + health benefits!! Cheers

    In rural Korea they bury the kimchi in the ground for three months. When the village unburies it you can smell it for miles. At least that's how they did it in the 70's.

      Where I used to live I hated the smell of kimchi. 40 years later I love the flavor! One of my kids love it too! So good.

    Today I made a really delicious kimchi spread for putting on baguettes/crackers using some of the kimchi I made from Helen's recipe: I mixed kimchi and Ssamjang with cream cheese - hmm, super good 😋. And yesterday I made kimchi sundubu jjigae using the same kimchi batch - also uber delicious. Kimchi is surprisingly easy to make, and once you have it in the fridge, it's so versatile!!

    I always go back to this video of yours everytime I make kimchi, because I love this recipe, me and my family loves how the kimchi turns out! Not all ingredients are available here in our place, but still I follow this video as much as possible and it's perfect!
