      I am not Korean. I bought a jar of kimchi at the supermarket and I didn't like it.
      I have a friend that's from Korea and she told me that not all kimchi is the same and to try a different brand.
      I tried several Brands before I found one that I really liked. Sadly it was almost always out of stock.
      I decided I was going to try making my own.
      The first batch I made was too spicy for me so I gave it to my brother who loved it! That led to five or six years of keeping him and I stocked in kimchi.
      I could not find coarse red chili powder so I used the fine which is why the first batch was so spicy. One third cup of fine is way more than 1/3 cup of coarse. Once I adjusted it, it was way more palatable to me.
      If you're going to be cutting up the kimchi to eat it, why not start your kimchi out like that? Rather than doing whole half heads, cut it up into pieces. Easier to handle, easier to package, and easier to eat.
      When I make kimchi I cut the Cabbage up into pieces.

    I love that your neighbor just jumps in to help. This seems so typical of other cultures where neighbors know each other and the community does things together. It even sounds like the community makes Kimchi together because she says there's already a lot and she doesn't know why you are doing it alone.

America is like a microcosm of the world, it'll have a little bad from everywhere. But the level of depravity outside of America can be much worse than you could ever imagine. You should be thankful that you have the ability to type that statement without worry of repercussions. Be thankful for what you have.

    As an US vet that has been overseas to many other countries and has eaten Kimchi made by Koreans, I’ve always favored the homemade Kimchi by far. I thoroughly enjoyed ur video and respect to ur effort and hard work.

      ​​​@@tictactoe325 is fermented so expect a little sourness in it. It could be spicy if you're not used to it.
      In Asian palette, it's a little above spicy for spices in general (e.g. cayenne, black pepper etc.) but for "spicy" category, it's not spicy at all.

    This was awesome! I learned to make Kimchi from Ajjuma's in Seoul! I will never forget! I positively made myself aware of how much I did not know being an American over in Seoul, & I went back day after day until a lady knew I was gonna come back. She took me & showed me how to make it! Her teaching me, showed me & I in turn, showed others. Positivity begets positivity!! I will never forget the care & gentleness & the ease & splendor after making the kimchi! Thank you!!!

    When I was a high school student, my roommate was Korean. I used to go to his family's house frequently on the weekends because he lived much closer than my family did. His grandfather made kimchi at least a couple of times a year. Watching this makes me nostalgic!

    I had the oppertunity to go twice so far in my life and although i didnt get to stay too long or travel too much, what i did get to see was a beautiful culture, AMAZING food 🤤 and wonderful people. The sights were absolutely incredible!! I hope i make it back one day!

    I enjoyed the video and amazed at the hard work it takes to eat well and be healthy. Growing up in Korea, moms gathered before winter weather to make big batches of kimchi since there was no refrigerator and it had to be stored in the frozen ground. I'm surprised such a big batch is still made with modern appliances and refrigeration.

    I had homemade kimchi from my dad's work friend (my dad told him I loved kimchi & he insisted I try homemade- he was a really sweet guy). I told my dad to tell him that was the best radish I ever had, & my dad thought it was silly I was obsessed over the radish, lol... but it got me lots more kimchi because I recognized the quality of the Korean radish. I'm vegetarian so it's hard to find good ready made kimchi, but gosh, it's amazing having it given to you & know you can tailor it (& it still be delicious). Homemade is best!

    Absolutely lovely surroundings… I’d die to be your neighbor… I recently tried kimchi and was instantly ADDICTED… & now can’t & wont live without it & watched MANY MANY videos of how to make your own at home… so YES .. I will be making my own soon but not quite as large a batch as you did here but I think you are soooo good at the process and handled it with much care and respect …. !!! I understand this to be VERY IMPORTANT part of the process… honor and respect.. which I fully intend to do…I just need to find all ingredients ( I love ❤️ spicy 🥵) … on the hunt now for Asian markets for all necessary ingredients… TY so much for this pleasing video… enjoy the fruits of your labor …!!!😊

    AWESOME, AWESOME video. The first time I was offered kimchi by a friend of mine who had been stationed in Korea with the USAF, I was repulsed. I thought there was NO way any human could eat it. Well, things have changed. There is now always kimchi in my house and it is always on my table at every meal. In fact, the fastest way to lose a hand is to try and take my kimchi, lol. My sincerest appreciation to the nation and people of Korea for giving the world the gift of kimchi.

      Thanks for the lovely video. I just subb'ed your channel. I make Kimchi every few months in much, much smaller batches. I only brine the Cabbage for a couple hours. I wash it and salt in to each leaf of cabbage and let it sit for two hours, wash it and then make my Kimchi. Is there any golden rules of salting vs. soaking Cabbage in salt water overnight?

    I was living for 5 years in Ulsan and Okpo, working on several ship yards. I loved the food and the peoples there. Kimchi is my favorite. Since I am back to Germany, I miss it every day of my stay in Korea. But I am still eating Kimchi.

    i am one of those fortunate men who has a great friend (who's wife is Korean) and who makes unbelievably delicious homemade Kimchi. So much work; but such tasty results!

    For me this is reminding me why I need to go back to Korea. Almost think I was a Korean in a past life. Or maybe the food there is a million times better then any comfort food in America. Kimchi or fermented garlic, it all had me falling in love with a culture. To this day I’m still very in love with the culture. And when I go back to Asia I won’t leave!

      Same. I’m half Korean. Never lived in Korea I was just lucky enough to be born in Seoul, but left as a baby to thee states, I wish I could’ve lived in Korea for at least my childhood.

    I have been a chef all my life and when I visited my homeland I tasted something I can't explain that taste I never forgot when I was a young girl I am audit now I tried to make kimchi I remember what I tasted was better than gold or money but I can't get that taste still make me want to cry because I made 100s of times chasing that one taste I long to taste so bad in and in restaurants in the US but fail over and over for that special kimchi I long to taste that kimchi when I was a young girl in Korea I watched utube all failed me I realized you you have to live in my home town to get the only thing I longed for it and its that if you truly want best kimchi in the world you have to go home.

    I actually had the chance to work with Koreans in food service, I was actually a first year sushi student and your first year you mainly do nothing but make sushi rice, it's a art in it's self and the rice has to be just rite, you also work on learning tempura. I was working with a older Korean lady that had recently just came to the US Sunny. She was a great teacher I learned how to make Kimichi and Korean radish soup. That soup is maybe one of the best dishes I have ever eaten in my life! I also can now make great Kimchi.

      @@tabithacollins9657 radish soup is simple a large asian radish some lean chuck then a really rich soy, or magi sauce, so really only 3 ingredients just make sure not to overly salt, one of the most simple and cleanest soups, I'll get you a full bulgolgi recipe but I'm out and about ATM.
