All the comments above are correct but not the main reason. The main reason why it's not chopped is because depending on how you eat, the sizes change. Let's say if you eat kimchi as just side for main meals like rice, soup, or ramen, you chop it small (this is the most common way, and you probably thought about this). If you eat food like steamed pork, AKA bossam, you cut it in big pieces. It's like a cheese. They ferment it as whole piece and chop or shred after.

Youre gonna be left with alot more cabbages to transport with it being cut so its cut after the marination to save time
And more importantly it's not marinated but fermented. ❤
Traditionally it is fermented whole it is Pogi kimchi the chopped one is Mak kimchi
If you store it as whole kimchi, it won't sour quickly, and you can store it longer and more deliciously
