I made this back in April with green onions from my garden. It is absolutely spectacular. I've been enjoying it for almost 2 months now and it just keeps getting better. It's my favorite kimchi by far and it's so easy to make. 😊

I made it but i used paprika boya insteaf of something else. And i taste it and doesent taste amazing at all. More amazing is romanian food, like onion with a little salt, oil, and vinegar. I dont understand if boya is different or not but is a simple taste for me.

If any of you have access to the thinner "tree onions" or "Egyptian onions"(Allium × proliferum, known as 쪽파/jjokpa in Korean), you can use that instead (cutting isn't necessary in that case). Tree onions are the standard type of green onions used for pa-kimchi in Korea. However, this type which uses "Welsh onions"(대파/daepa) has also become popular in the recent years, especially after Kim Soo-mi showcased a recipe using daepa.

It’s really difficult to get pa kimchi here in malaysia, and they sell it for $4 for 150gm online! Maangchi, I have been waiting for this recipe for a long long time. Thank you for sharing. These white part of the green onions, you can can them into two to three inches long with the root, and you can regrow them in your window sill. You don't need to buy them again next time :).

i agree maangchi. we have some friends for certain times. we wish we could stay in touch with all of them all the time and stay in those moments. but it’s just not possible. as we grow older, this good memory is precious. we remember those good times.

Thank you very much for your channel. It's very usefull and I take a lot of your tricks to my own cooking. Yesterday I prepared regular half-year-volume of kimchi by your old recipe : ) And decided to share of my special ingredient. I use chanterelles mushrooms in my kimchi. Chanterelles are raw eatable mushrooms so I use it without pre-processing. First, I prepare powder from dried chanterelles and add to usual spicy pasta, and after a day add some whole dried chanterelles to kimchi when it already got some liquid. And dried mushrooms absorb that excess of liquid and become chewy spicy kimchi chanterelles. In other case I added some separately pickled (without vinegar) mushrooms to kimchi to mix tastes. Hope you will test and joy it and show us your way of cooking kimchi mushrooms ;) Thank you.

Yesterday I prepared regular half-year-volume of kimchi by your old recipe : ) And decided to share of my special ingredient. I use chanterelles mushrooms in my kimchi. Chanterelles are raw eatable mushrooms so I use it without pre-processing. First, I prepare powder from dried chanterelles and add to usual spicy pasta, and after a day add some whole dried chanterelles to kimchi when it already got some liquid. And dried mushrooms absorb that excess of liquid and become chewy spicy kimchi chanterelles.
In other case I added some separately pickled (without vinegar) mushrooms to kimchi to mix tastes.
Hope you will test and joy it and show us your way of cooking kimchi mushrooms ;)
