    Im vegetarian what can i add instead of fish sauce

      You can season it with salt instead of fish sauce. To enhance the flavor, it's good to use a vegetable broth. After cooling the boiled vegetable broth, add a little flour to make a flour paste and use it when making seasoning for green onion kimchi. Thank you for the great question! :)

      If you store it in the refrigerator, you can keep and enjoy it for several months. However, if you don’t like overly fermented green onion kimchi, I recommend eating it within three months.😊🙏

    Thanks for your recipe. I have a question. I thought that salt was mandatory for lacto fermentation. Is it salty enough with fish sauce? Sorry for my question...

      The reason for not salting green onions when making pa kimchi is that green onions are soft and wilt quickly. Additionally, fish sauce provides enough salt, so the green onions can ferment and develop flavor without being salted beforehand. Thanks for the good question!😊👏👍

    After 1 day in room temp, then fridge, how long in fridge before we can start to eat it?

      After 1 day, you can eat it right out of the fridge, but if you prefer your green onion kimchi ripe, you can leave it at room temperature for about two days before refrigerating it. Note that unripened green onion kimchi may be a bit spicier. Thank you! 😊🙏
