    I believe my life was saved by miso soup. When I was attending the University of Minnesota I was so hungry that went to find food. I worked at a Chinese restaurant and loved the food I ate at work. I went to the food court and found nothing appealing or affordable except for Miso Soup from a little stand. I ordered and sat for lunch. My favorite soups all had green onion garnish and good flavor. Miso soup with just Tofu and green onion satisfied my flavor wish and stomach and nourished me for the rest of the day of learning. Miso soup is wonderful, nutritious and legendary.

    When I was pregnant with my daughter, the only food I could consume in the beginning was miso soup! It would relieve my morning sickness/nausea and make me feel full. I'm going to get back to consuming it every day again! Thank you for sharing your recipes-they all look so delicious!

      That was my case too! I didn't feel good all my pregnancy and miso worked perfect for me. That was the only protein I could eat but still the baby was born 4 kg. Also planning get back to miso on a daily basis

    I'm so glad that I found your channel,I have incoming japanese homestay student this month and searching what to make for him just to feel at home.I had a japanese student also who stayed with us for more than a year but sadly I couldn't make him a japanese food all the time because I have a baby.He is moving to another house tomorrow and thinking maybe he is not happy with the food I made.For the next Japanese student I want to make more effort despite of the busy schedule from work and as a mom.Now I think your videos will be a great help for me,Godbless watching you from canada.

    I'm so glad I found your channel. Both my husband and I love Japanese food, so we tried to make some of them ourselves but we didn't really know how to make miso soup. This video is a big help, thank you! I've also been wondering. Are there any recipes using natto? I usually just mix it with rice, raw egg and scallion, sometimes I add air-fried chicken. Would be nice if there are other ways to eat natto.

    I make my own miso at home. I buy kojikin from Japan, and make my three days work to have my Koji done; no paragon with the store bought dried koji to give that flavour to the final paste. Then I add my Koji to the salt and the boiled soy, or most of the times Chickpeas. Sometimes I make large batches, sometimes small ones: 65 kg my largest batch. I got a jewel in my pantry who's 10 years fermenting red chickpeas miso (now black).

    Romanian version of meat ball miso soup is a balkan version. We season the minced meat with parsley, chopped cabbage and garlic, salt, pepper, sweet pepper to taste (and whatever other spices you like, turmeric, green onion powder, just don't add too much, a pinch is enough). We add sour juice to the finished soup (usually we use lots of rot veggies, carrot root parsley, potato, etc)
    Also, we have many sour soups, they go great with meat balls. We usually use borsch (pickled bran juice) for meat ball soup, but it goes great with lemon juice as well. If it's really sour, add some sweet cream to the sour soup, like a small spoon or a full spoon.

      @@JapaneseCookingChannel so my Miso paste came in today, the same one that you use, all the writing is in Japanese, could you tell me about how long will it stay good once it’s open, and do I have to keep it in the refrigerator?       It's wonderful! You bought the same miso as I did. It's Kyo-kaiseki miso right?
      Is there a print on the side of the miso labeled "賞味期限" date?
      That is basic shelf life, but if it is unopened, it can be eaten for six months (some people say even one year) after that time. Please note, however, that its expiration date is only valid if it is unopened.
      And as for storage, if unopened, it can be stored at room temperature. Please keep it in a cool, dark place.
      Always store sealed miso in the refrigerator. Ideally, once opened, miso should be sealed to prevent exposure to air. (Some may transfer the product to an airtight container after opening.) However, I use it up in about a month, so I keep it refrigerated with the miso lid on, without transferring the container.
      Ideally, opened miso should be refrigerated and consumed within 2-3 months if possible. However, I checked online and some places say you can eat them for up to a year if they are kept refrigerated.
      If you want to keep opened miso for six months to a year, you may want to freeze it. They say that frozen miso can be kept for a year. Freezing prevents the growth of bacteria and keeps the flavor intact. Incidentally, miso, by its nature, does not freeze to a crisp even when frozen, so it can be used in cooking without hassle.

    These recipes look so easy and good! I might actually try the meatballs and okra one as an introduction to okra. I don't think me or anyone in my family has ever eaten okra, but if it's crunchy cooked like that then it sounds good. My only addition is a tip for you. I think the first part of the recipe should be making and searing the meatballs in your empty soup pot. You can put the cooked meatballs in a soup bowl you're going to use temporarily. Then you just add your water and scrape the brown bits with a wooden spoon so they can help flavor the soup. Then you can just continue the recipe like normal.

    I never realised miso soup was so simple to make, thankyou.
    In the UK, we can get miso soup in packets as a soup drink but miso paste and fish flakes are very hard to find.

      Regular rice cakes (used for meals that are cut into thicker pieces) can be frozen for long-term storage. However, very thin mochi used for Daifuku are better eaten the same day they are made or the day after. I believe that refrigeration or freezing would considerably reduce the texture.

    I absolutely love miso soup and the first one showed is the one in familiar with, its affordable and I love the taste of tofu, sadly here in Peru might be hard to find some of those ingredients such as Dashi, so idk if someday I'll get a chance for cooking this delicious dish, I'm not sure if it will taste the same without it

      You can make miso soup without dashi. It tastes even better with dashi, but I think you can still enjoy miso soup.

And in the last couple of years, we have been developing the import of products from Asian countries. This year I finally found dashi, Hitomebore rice, and Hagoromo seasoning for rice. I hope I translated the names correctly☺

      You could always add mushrooms too, instead of the meats. I usually bake them with little olive oil(salt+pepper) and use that on my soups. And I will try the last one with coconut milk 🤞🏼🤞🏼🤞🏼 hopefully it tastes good too.

      Dashi isnt vegan but you can find vegan dashi probably, or use vegetable stock together with the miso

    ~When my father got cancer, and said hed rather die than have to eat tofu, i made him miso soup with shittake mushrooms, tofu & nori, all good for reversing cancer, but didnt tell him what was in it till he ate some~He loved it & it opened his mind up to heal his cancer naturally~

      I would rather die too, than eat tofu. I make the traditional miso soup with just wakame and spring onions. And sometimes I add a few slices of chili.

    I love miso soup. Can eat it all day every day. After spending some time in S. Korea I now like my food spicy, so I usually put into my soup whatever I feel like, kimchi, ghost peppers, eggs other stuff. My favorite tho is curry miso soup that I had few times in Japan. Never knew tho that you can make one with milk! That was amazing.
