    You dont add maggi to okpa...this is not the enugu recipe

    My sister I applaud your attempt but I will be very critical here.
    First make I ask una; why una no dey put measurements down in your recipe?
    Secondly upon wetin you talk your red scotch bonnet still separate go sit down for corner in your okpa!
    Finally who puts seasoning cubes in okpa bikonu?
    Ndi Wa Wa dey vex big time for you!!

      I'll answer your questions:
      First a typical Nigerian dish no dey get measurements, we eyeball and I said it in the video that you add oil till you get that consistency and for the recipes that needs measurements I do write down the measurements and that you'll find in the description box below.
      Secondly, the peppers will separate even the ones we buy from the local market in Nigeria the peppers settles down even those that add chopped vegetables does same, what I meant there is the okpa itself and please cook as you want, take off what you want and add what you want also, it's not a must to add seasoning cubes to yours as I'm the one that will eat it. Just do what you like with yours and we don't always have to do things the stereotype way there's always room for changes. Thanks

      My sister let me explain to you where I am coming from.
      You are right Maggi and other additives are personal and at the discretion of the cook and I have no problem with that.
      However you can never have consistent results in your product if you never measure; this is the difference between a professional and an amateur.
      Trust me when I tell you that the best Okpa makers in Enugu measure their ingredients as I learnt from mama wawa who has a business in Ekulu Enugu.
      She measures everything!
      If one wants to elevate their cooking you must measure.
      If you want anybody to subscribe to your cooking you give them something to work with.
      It is a big big myth that the typical Nigerian dish money no dey get measurement.
      Ndi Yoruba who get and make the best Akara (I grew up in Ibadan) measure all their ingredients.
      This is why oyibo cooking where every thing is measured is at a different level and ours is still infantile.
      You will also get more subscribers if you actually had a recipe with measurements.
