However you can never have consistent results in your product if you never measure; this is the difference between a professional and an amateur. Trust me when I tell you that the best Okpa makers in Enugu measure their ingredients as I learnt from mama wawa who has a business in Ekulu Enugu. She measures everything! If one wants to elevate their cooking you must measure. If you want anybody to subscribe to your cooking you give them something to work with. It is a big big myth that the typical Nigerian dish money no dey get measurement. Ndi Yoruba who get and make the best Akara (I grew up in Ibadan) measure all their ingredients. This is why oyibo cooking where every thing is measured is at a different level and ours is still infantile. You will also get more subscribers if you actually had a recipe with measurements. Ka.
