  • How to make Soft Puffy Roti/Chapati/Phulka (Indian Flatbread) For Beginners
In this video I showed all the tips and tricks possible to make soft roti/chapati. A recipe can only give you ideas but it is experience and practice that will make you better when it comes to making rotis. So please do not be disappointed by just a few tries as you've got to give that time and patience to make chapatis.

    Ingredients for making roti/chapati -
    * 1 & 1/2 cups (standard measuring cup) whole wheat flour (chapati flour or atta)
    * Little less than a cup of hot boiling water. Use the same cup to measure water in which you measured your flour. Please do not stick to this proportion of water strictly. Depending on the quality of the flour used you may need more or less water. Keep a bowl of warm water by the side while kneading. Dip your knuckle in the water and then press out the dough as shown in the video.
    * 1/4 th teaspoon salt (optional)
    * 1 teaspoon oil (optional but it helps to keep the rotis soft)
    * I like brushing my rotis with little extra virging olive oil as soon as they are taken out of the tawa. You can apply ghee or butter or skip this step entirely but the oil keeps the rotis soft even if you want to store them for 2 days.
Store the leftovers in an airtight container in the refrigerator. Right before eating you can warm them up in a pan over low heat. You can even brush them with little water and microwave for 20 to 30 seconds.
Serve rotis with any curry of your choice or lentils.

People in the USA have been waiting for decades for someone to give them this type of detailed instruction. Some things you just can't do from a cookbook, however fine, alone. We have to SEE it being done. Bumbi takes a lot of the tension out of making Indian-style breads, with her gentle, patient style of instruction. Thank you, Bumbi!!

Thank you so much for the best Roti tuition video I've ever seen on YT. I've been making Roti for 20 years and I'm still learning. I only eat them now and then, so I need to keep practising! I am a vegetarian and I love Indian veg food. I've made Dal for my dinner with a couple of Phulka. I'm 70 percent there, so I'll keep watching your video and I'll get there. I actually enjoy making them, but when they haven't puffed up, I've been disappointed :(.There's so many steps.. correct amount of water, rolling evenly, tawa hot but not too hot.. Thank you for a most excellent video :)

It’s true that making roti gets better and better with practice but not all rotis puff up so don’t be disappointed if you don’t see all of them puffing up. They will still taste good. It’s always nice to know that I am providing useful content. Thanks a lot for your kind words and for your lovely feedback. Really appreciate it. Keep making rotis and soon you will be very satisfied with the results.

and I have seen many youtubers using round lid of a steel container and put it on a uneven shaped rolled out roti to look it round and all are of same shape once they are cooked on tawa. yes, easy short cut, but making such a round shape while rolling has its oen charm. While I was in school, I had heard my grand ma telling us that when you prepare daugh of roti, one should be so efficient to collect all stick particles in the bowl and one can not make out you prepare dough in that vessel. Also chapaties should be of same thickness each one and all of them. I value her correcting us kids at that time!

    Dear Curries with Mumbi,
Thank you. I came to your video as I was out of practice with making Roti, Paratha, and the Breads in the Style of India. "I am learning the Hindi language and other languages I'm sorry if I offend but doing my best, I will not try to speak". I did at one point engage or help in the process, and did my best. Your video engaged me. I cannot claim to be any expert on the Indian cuisine, or bread, unfortunately. But my background is I am interested in cuisine, local and of the world, and in my University days I had the GREAT fortune of getting to know and live with some Indian guys. I am Irish! Those guys were all international students, amazing Indian people who have all gone on to great things. And I tried my best to help them in the preparation of meals. And they too, they helped me prepare many Traditional Irish dishes. I love your style of cooking and I realised at the end of your video this has been 20 years in the making! I was going to ask you Curries with Mumbi how you don't get the Roti's coming out hard and flat like Tortillas!! Then I knew my kind oh so kind Indian friends gave me the easy job of when the dough was rolled and the work was done I could tend it over the pan! Gas works so well (we had gas), and I relate to you saying adjust the temperature. That is not so possible or delayed with electric hobs. I also realised from your video some of my flaws. I used too little flour when dusting and such a great tip you said to flip between palms to remove the flour. Thank you so much. And as a Mathematics graduate and Computer Science Masters Graduate,
अरे बाप रे!!lol I am so not feeling so bad about the circle being an ellipse!
I suppose, Curries With Bumbi, I shouldn't feel so bad about it. But, then, having thought about it, I suppose, because I cant make perfect Roti that is ok. I can make the bread. In an Irish way. and we are very much based on potato diet so lots of our bread incorporates potato. And bread too. But to be fair the skill level in your making of bread is far higher. I know it is not a competition.
But I absolutely LOVED your video and subscribed!
I love your wisdom and experience. And I can see how the main meal, be it in India, in Dublin, New York, London, anywhere in the world, is so important.
I thin you have "nailed it", as in it takes a lot of work (My Brother is an accountant Curries with Mumbi, yet he loves making bread. Honestly. He worked for the Bank of England, in London, he moved with his wife to Yorkshire, in North England. But he is so into the BREAD!!! He has a dough making machine, he makes his kids help, etc lol. He has even sold loaves at the local fair Curries with Mumbi,
    But.....He can't make Roti either!!!
I am so sorry I am just realising what a long and too long this message was. I apologise, and obviusly no need to reply. I just liked your video and although Irish I have a strong Indian friend history and felt a need to connect, isn't that what the internet is about?!
Your skills amaze me!! YOU ARE AMAZING!!!!!!!!!!!!!!!!!!!

You explain very clearly and in detail. Fantastic. In the end you boble up on an enectric stove. That is nice. I have only electric stove.🎉

I have been these for years but I did not succeed. Thank you for sharing this receipe how to prepare roti and also guiding us by telling not to get disappointed if the roti does not puff up because a lot of practice is needed. God bless you .

Thankyou Bumbi, I have been trying to make chapati puff for 5 years. I made so many with different recipes and directions, and only had a few bubble slightly.
I can even do circular rolling but no puff for a layered chapati.
So I was going to try again following your video.
6 out of 8 puffed! It was like magic!
I think my problem was too hot tawa or overcooking the first couple of flips.
But thank you this was a big help, the best chapati video!
