  • Popular Latin Rice Dishes is our new cooking series, and we're starting with Cuban Arroz con Pollo, which I believe is the best version of this dish! There are probably like 10 different Latin cultures that are waving angry fists at me right now, especially my fellow Boriquas! LOL! Which I understand because Arroz con Pollo is popular in many Latin countries and each claims to make the BEST! One of the reasons why I love this version so much is because of the different layers of flavor that this dish is built upon. There is one particular ingredient that I feel makes this dish, and that is the addition of Achitoe or Annato. Annatto is an orange-red condiment and food coloring derived from the seeds of the achiote tree and is often used to impart a yellow or orange color to foods; also for its flavor and aroma. In this video, we'll show you how to break down a whole chicken to use in this dish. I believe that all the versions of Arroz con Pollo are really good, but the Cuban version is my favorite!     My parent used to put beer in the rice in place of chicken stock
