How to Make ARROZ CON POLLO | My Abuela's Tex Mex Chicken & Rice Recipe

    This is one traditional Mexican recipe you need to try yourself at home, and my Mom is back in the kitchen with me to share with you all our family recipes and her THREE TIPS to make this dish perfectly.
    ARROZ CON POLLO
    ¾ cup Jasmine rice
    2 cups chicken stock or water, (we use homemade stock)
    1 tbs vegetable oil
    2 garlic cloves
    1 tsp whole cumin to crush
    ½ tsp coarse black pepper or peppercorns
    1-2 tsp salt to taste
    1 dash of oregano or to preference
    ¼ to ½ cup tomato sauce, preference
    ⅓ cup chopped or diced white onion
    2 - 3 deboned chicken thighs cut into 1” pieces

    I grew up in the 80's on rice-a-roni and chicken. You would fry/brown the rice just like this in oil and then add water and a little tomato paste. home cooking. Mama knows!

    Man, I just found you some how!? I love making homemade salsa and rice like your mother and you do! I'm definitely going to try your stuff out! Have only seen the salsa video and the rice video as of now. I'm just a gringo from NC! Love to cook everything authentic! Especially any ethnic dishes! They are very inspiring inspiring for me!     Awesome video, thank you for sharing. I miss cooking with my mom. It was such a special time. We make it similarly except we brown the chicken thighs first, then remove them and toast the rice in the same pan. The rest is the same...maybe a pinch of saffron sneaks in once in a while.

    I got a my first molcajete 2 years ago. Lava rock, seasoned it with rice and garlic for many hours! Bet blender I ever purchased! You have it going on man!

    My mom's family is from Panama and the recipe she uses that she gave me came from her cousin. Super labor intensive. We leave the bones so they flavor the rice. Part-way through, I take the pieces out and strip the meat off the bones and return them to the pot then add sliced green olives and sliced pimentos. This is quick and less labor. I'll have to give this a try.

    I lost my mom 20 years ago man what I wouldn't give to cook one more time with my mom. you are a lucky man and I hope you two have tons of years together. I'm Puerto Rican and she reminds me a lot of my mom the only thing is my mom didn't speak a lick of English. love your videos and will be trying this Recipe.

    I JUST made this for me and hubby for work lunch and let me tell you it is soooo good!!❤️ I did make 1 cup of rice instead of 3/4 cup and I also used regular long grain rice. You want to make sure it’s on a very low setting so it doesn’t burn!

    TL;dr - not an authentic recipe
    Came for authenticity and left for the same reason. Jasmine rice? Why? Funny you can do what you want with a recipe because you come from the background, but if a random Russian or Taiwanese made Mexican rice/Spanish rice with JASMINE? They'd be hung to dry.

    Traditional Mexican? The first time I had Arroz Con Pollo was in Miami at a Cubano restaurant. Did they steal it from the Mexicans? lol Actually arroz con pollo is available all over the world where there are pollo and arroz (most of the world) not just Spanish speaking countries. It's even available in my Italian/American kitchen.

    My husband made this last night and the smell brought me back to my childhood days at Abuela Rosales’ house. I personally did not eat it because I won’t eat meat for ethical and spiritual reasons, but it looked Ike my husband really enjoyed it. I am going to veganize this recipe for myself and use all the same methods except swap the chicken for garbanzo beans amd the chicken broth for Ocean’s Halo No-Chicken Broth. I will still use the mocajete (not sure the spelling is correct) to do my spices.

    This is Great! May mother in law always used Goya Sazón Seasoning With Azafran, and she always knew when I forgot to put it in the seasoning. Great job though. This is one my favorites as well.

    I have my own version too, I got inspired by the Asian culture where they add colour to their friend rice in vegetables! So I love to put peppers, Chili to add a pit of spice, cilantro and the smalls tomatoes sliced in half, (the tomate and cilantro at the end only) to give it that freshness to the food. I do it all the time and people love it!!!!

    Yup yup yup. Fresh spices in the mocajete and bone in chicken. The way my mom made it. The powder spices are convenient but just not the same flavor in the dish.

    Why is this dish not more popular at Mex restaurant’s? This and carne picada con ejotes or peas, or even calabaza con pollo.
