I've really come to love your videos. I love how your mom measures, "as much as I put"! My dad worked in Mexico for 15 yrs. The beautiful women taught me to make empanadas, I was a very lucky 9 year old gringa! Never measured anything, while preparing the masa. It was all in how it feels. They had me make it over and over again, over several visits. "No!" They would say, "make it again"! I think at some point I got it right, but if they were teaching me something so special, they wanted to make darn sure. So I was looked over while I practiced and practiced. Then I went home and practiced more to make them proud. My family ate a lot of empanadas that year😂 I don't measure when I make it, I use my Mexican love heart, the only measurement needed ❤️ Thank you for sharing such wonderful foods.

It almost got to me see you cook with your Mom and put a Smile on my face. because me and my mom used to cook together sometimes before she passed away. take every chance you can get to cook with Momma and that's what I tell my sons because some day you will no longer get that chance. would love to see more vids like this wonderful to see family's enjoying life and food that brings us all Home. I learned how to make this dish from my Abuela. For our version we lightly coat the chicken in flour so it thickens up the caldo a little. For my own twist I add some cilantro after it's done and let it rest for a few minutes. Serve it up in a bowl with a lime wedge and some corn tortillas.
I tried your recipe to the extent of no measuring (same as my mom did) like your mom.and it turned out great. I'm glad you and your mom are sharing this with the world. I listened to many of mom's cooking instructions but missed many. One thing I do remember is to stretch the meal for 9 family members was to cube a couple of potatoes and it was also great.

Love you two. I make this differently. As an old white woman, I guess it's OK. I use pork, squash, green chili, onions, garlic, pepper, chicken broth, and hominy. When it's done, I grate cheese over it. Yum.
Just a little tip that my mommy taught me we would add two whole Chile Serranos when you cover the Calabazita with the lid that way when you want a little spice, you just grab one of the chile Serranos cut it up in your dish bowl and we serve ours with Mexican rice because it goes Great with the Calavasita broth Yum Yum 😋😀👏♥️🌻🌹
Mi abuela used to make a fantastic calabacita con puerco. I wish I had paid more attention to her method, I was a young man in college then. I do recall comino was the primary note. I’ll try your Mom’s method subbing pork and see how it goes!
