Looks great! This north of the border(Canadian border) boy married a Rio Valley(Weslaco) girl and had to learn how to do fajitas and pico de gallo the right way. I make my pico de gallo just like yours, but I chop the peppers much finer as I am after all a northern boy! Authentic pico de gallo is hard to find up here and is always the hit of party, love watching your recipes!
If you can get the red Fresno peppers try some..super flavor and very mild..makes a great Vietnamese/Thai dipping sauce by grinding a red Fresno w garlic, sugar, add fish sauce, lime juice, I think water, super tasty..

Exactly the way I make it. I've found that letting all ingredients sit in so much juice for more than a little while can change the flavor. So I let it marinade in the juice for a while and then I strain it and drink the juice :)

He does the salt thing, too, and it is a world of difference. Way better than so many you find in those big chain restaurants.
Tia Julie of Calistoga Califas, always said eat a lot of chilis you will be healthy and she lived to 96! It also could have helped having a husband 30 years younger, it was such a beautiful marriage love you Tia! oh and even living in an apartment she still had planters on the porch to grow a bunch of varieties i still have the seeds and harvest every year keeping your memory alive Tia

I like to use red/purple onions in mine. Also I once worked in a Mexican restaurant and they taught me putting in the salt & pepper then drizzling the lime over top to melt those spices makes a huge impact on the flavor.

about 20 years ago, i used to go to this wonderful Mexican fast food diner, they made the most awesome Pico De Gallo, and they would laugh at me because i would eat that stuff alone by the spoonfull, and were so nice and would always give me a monster sized cup of it to take home with me for free!! Such great memories, they are still there too! Thank you for showing me how to make it, however I have to stick to Jalapeno peppers ha ha

You are so much fun to watch and learn from. When I was in the Air Force I was stationed at Laughlin AFB in Del Rio from 1975-1980. There was this really small Mexican restaurant there that might have had 5 tables in it before they expanded to maybe 8 tables. I think they had some of the best tasting Mexican food that I have ever had.
Tried this for the first time today and I completely understand how you can eat a whole bowl because that’s exactly what I did. I’m going back to the grocery store tomorrow! I added purple onions with garlic powder and adobo. Amazing!
When used only as a dip for tortilla chips, my Hispanic stepmother would also add some diced avocado to the Pico de Gallo. But traditional Pico like Arnie makes it here, is how I make it as the perfect accompaniment to beef fajita-filled quesadillas.

Arnie, I love Pico my tia owned a restaurant back in the 80's and she made it just like yours. Now I make it all the time too, I can't get enough of it with chips. I used your OG seasoning instead of salt came out perfect!
Awesome. I like to add the lime zest also, which give the salsa extra zing. I also use white onion. I may be wrong, but it seems to stay snappier longer than yellow onion.

that's much like the pico my mom has made for ages.. nothing beats it imo. I like how it's not watery but you can chop up some serranos and the smaller green chilies and it makes it all soo good.
Outstanding Recipe, this was better than most restaurants... The only change is I added my to a blender to slightly emulsify it (making it less chunky and a little more watery)...

Pico de Gallo is fantastic! I definitely put garlic in mine and I take the seeds out of the peppers, however I do like to use a combination of jalapeno and serrano and habanero peppers.
I made this tonight for the second time because it's amazing! The first time, I made it just like this, and I used a mixture of serrano and jalapeño. I loved it, but my friend said that they would prefer in between a salsa and pico. This time, I did just that and I hit it with an emulsion blender lightly. I also only did serrano peppers this time, then I added more fresh chunky diced onion before serving and it was truly amazing! ❤ I love it both ways! ❤

Excellent "beak of the rooster" recipe (7:22). From a guero who lived in Tucson and now lives in New England, I miss the Sonoran cuisine. Every summer I make a few gazpacho sopas and salsa fresca, if you can't find it make it.
I use serrano peppers in my pico also! They have a nice citrus peppery heat that works perfect with lime. I like a pinch of salt, just a small amount of garlic and a dash of chili powder too. You are too right about eating pico de gallo at every meal. I could do it!

I'm a whole bowl person too. Pico de Gallo is the reason for eating. I used to buy two large size drink containers of salsa from my favorite restaurant alonf with my take out dinner for my family and I would drink one whole container on the drive home! Love Pico de Gallo.

I literally LOVE pico de gallo! It's great with a lot things in Mexican food! This is a great video! Your little bird imitation was very cute! Plus, you a quite a character-very fun to listen to!
To add to this, waiting 30 minutes before serving doesn't only release the juices but it also macerates the onions. Putting any onions in any sour for 15 to 30 minutes removes the 'dragon breath' and makes the onions taste super fresh and not overpowering. I always wondered how restaurants make such fresh salads without the onions overpowering everything. Try it as a fun experiment when you make this. Take a bite when you just make this and then wait 15 to 30 mins and taste again, it's been such a game changer for me. This works with any onion and any sour (lime, lemon, vinegar, balsamico, wine etc.)
I made this tonight, I have my own recipe I usually make once a week, but this one is killer good. Oh yeah, this recipe is quite picante, but since Arnie uses more salt than I normally would, I can taste the huge improvement all the way around. I love the flowery taste of the serrano's too! Maravilloso!!!

I've been store buying this stuff for years, but you inspired me to make this last night and it was so good. My stomach almost exploded. Thank you! It reminds me a bit of the classic Arabic salad. Just substitute the lime with lemon, the cilantro with mint and parsley, and add cucumbers.
This is an amazing recipe. Made it as a side dish and the family loved it. I would recommend this dish to anyone. Follow the recipe, it's something else.
I love this. I do the exact same recipe aside from two steps. 1) I add a little bit of cumin to mine and 2) after I add the salt, I crush/squeeze everything with my hands the way you would it you were about to lacto ferment a batch of sauerkraut at home.

Hi Arnie, hola from Refugio. I just found your channel. We use pico on everything. Our morning eggs, our cheese enchiladas and our baked potatoes to name a few. It freshens up heavy foods. I make mine just like yours, but we like minced garlic added. When in a time crunch, HEB has a pretty decent pico that I've used, too.
That looks delicious! I make mine similar, but I add minced garlic. My mouth was watering watching you make that. Once you become the pico de gallo maker you learn a few tricks to make it your own. I love the process of dicing everything up. Then add your own special touches and enjoy.

Oh yeah-I love some pico de gallo! One restaurant I used to frequent automatically brought it to me-I didn't even have to order it! Most of the time they didn't even charge me for it. I have made it in a very similar fashion, but this video (thank you Arnie!) gives me some ideas to tweak it up a notch!

Yeah, when we make it as a snack with tostadas, we also add avocado to it. Always delicious with or without though, lol.
Maybe even some cucumber if it’s laying around. It will give a light crunch to the pico de gallo

I chop/cut my onions under the vent fan (with the fan running) above my stove. Haven't had any issues with them since I started doing this.

I'm a whole bowl person too. Pico de Gallo is the reason for eating. I used to buy two large size drink containers of salsa from my favorite restaurant alonf with my take out dinner for my family and I would drink one whole container on the drive home! Love Pico de Gallo.

We love some pico de gallo. It’s one of our absolute favorites with chips… fast and delicious!
To add to this, waiting 30 minutes before serving doesn't only release the juices but it also macerates the onions. Putting any onions in any sour for 15 to 30 minutes removes the 'dragon breath' and makes the onions taste super fresh and not overpowering.
I always wondered how restaurants make such fresh salads without the onions overpowering everything.
Try it as a fun experiment when you make this. Take a bite when you just make this and then wait 15 to 30 mins and taste again, it's been such a game changer for me.
This works with any onion and any sour (lime, lemon, vinegar, balsamico, wine etc.)

I made this tonight, I have my own recipe I usually make once a week, but this one is killer good. Oh yeah, this recipe is quite picante, but since Arnie uses more salt than I normally would, I can taste the huge improvement all the way around. I love the flowery taste of the serrano's too! Maravilloso!!!

It reminds me a bit of the classic Arabic salad. Just substitute the lime with lemon, the cilantro with mint and parsley, and add cucumbers.

I love this. I do the exact same recipe aside from two steps. 1) I add a little bit of cumin to mine and 2) after I add the salt, I crush/squeeze everything with my hands the way you would it you were about to lacto ferment a batch of sauerkraut at home.
For those of you who do not speak Spanish or come from a different country, he was imitating a rooster. Pico de gallo means "rooster's beak" in Spanish.

Hi Arnie, hola from Refugio. I just found your channel. We use pico on everything. Our morning eggs, our cheese enchiladas and our baked potatoes to name a few. It freshens up heavy foods. I make mine just like yours, but we like minced garlic added. When in a time crunch, HEB has a pretty decent pico that I've used, too.

That looks delicious! I make mine similar, but I add minced garlic. My mouth was watering watching you make that. Once you become the pico de gallo maker you learn a few tricks to make it your own. I love the process of dicing everything up. Then add your own special touches and enjoy.

Oh yeah-I love some pico de gallo! One restaurant I used to frequent automatically brought it to me-I didn't even have to order it! Most of the time they didn't even charge me for it. I have made it in a very similar fashion, but this video (thank you Arnie!) gives me some ideas to tweak it up a notch!
