Whole chicken cut up
White rice
Bell peppers 2 Red 1 yellow chopped
5 cloves garlic chopped
2 onions chopped
1 cup chopped fresh cilantro
garlic salt to taste
chicken broth flavoring cube or powder
water
1 jar pimento stuffed olives
Bijol for color optional

With all that is going on with the world today...this did my heart good.
I remember my very first time eating this I was 12 and my Puerto Rican friends mother invited me to eat . I looked at it and it was thigh and leg together something I’ve never had it looked weird as a kid but when I finally dived in Holy shit the flavor was unbelievable, I’m 47 now and I eat it all the time my wife is Colombian their food is real good but I still favor Puerto Rican food they make the absolute best Spanish food out of all the different Spanish Cultures hands down..... look at her dish it’s popping with color and (((( Flavor )))).........!!!!!
My college roomate was PR every weekend she'd go home to Brooklyn. Sunday her parents would bring her back with dinner for us. My other roommate was Jamaican. Dam I fell in love with all the food. My favourites to this day (that was 50 years ago) ARROZ CON POLLO N PAELLA💗💗💗

And Puertorricans are Americans by nationality. Su ciudadanía es Americana, no Puertoriqueña. Hay diferencia entre nacionalidad, ciudadanía y origen étnico. Nacionalidad es donde naces y no toda persona Estadounidense es de dicha nacionalidad pq hay personas que se naturalizan de otros países. Te lo explico con manzanas si quieres.

And we lived off base so we could experience the culture I was 6 when we went and 9 when we left.And was so home sick . I was ready to go back . Am still ready .and we left in 1967
I used about 2 1/2 cups of rice since I used about 5 cups of water all together. (3 cups from the chicken broth.. 2 cups from the tomato can) IT CAME OUT GREAT!!! thanks so much

I totally feel you & it makes me so emotional reading your comment. I was so spoiled rotten 😭 ...I was 2nd grandchild, & I was born in 82. My 1st cousin (The oldest grandchild), was older, but still in Alabama where my dad's side of the family is from & very disconnected from OUR FAMILY. Long story short, it basically afforded me to be the "OLDEST GRANDCHILD" born & raised in Florida, with a SLEW of cousins & siblings after me😂...I was her baby & I feel like so, I was called in the kitchen to taste this, taste that, here is the cake bowl to lick clean, lol...Nobody eats until ANT eats...UGGHHHH😩😩😩...I miss her so much & I know for a fact, as good as a cook as my granny was, I would be a Master chef had I paid a lil more attention & not took those JEWELS for granted 😢

I remember my 2nd grandma married to my dad’s father, Grandpa Elliott came from Madrid, Spain and Grandma Pepita came from Puerto Rico, she used to make this yummy dish whenever we visited our family in New York. Definitely a favorite of ours. 🫒 🐓 🌶
