- Today I’m going to be showing you how to make an easy Arroz con Pollo which is a skillet Chicken and Rice recipe that comes together quickly. I used sofrito and sazon to season the chicken and rice, which will give you the best arroz amarillo -- yellow rice. All you do is season the chicken, brown it, then toast the rice, and steam cook it in a skillet until it’s fluffy and ready to eat. 3 tbsp Homemade Sofrito
2 tbsp Chicken Bouillon Cube (Sopita)
½ tsp Cumin
1 Lime
1 tbsp Sazón con Achiote
Olive Oil

2 cups Long Grain White Rice
½ White Onion
½ Cubanelle Pepper
2 Garlic Cloves
1 tbsp Chicken Bouillon Cube (Sopita)
2 tbsp Tomato Paste
1 tbsp Spanish Olives
Fresh Cilantro
Olive Oil
1 ½ - 2 cups Water

I made this recipe with the giant rice pot because I doubled the recipe knowing that I would want to be a glutton and used boneless chicken thigh pieces(for my husband and toddler) as well as the bone in leg and thighs (for me)!!! @@supanami2241 been pescatarian for 4 years for fitness and overall health reasons. I workout regularly and maintain a lean physique and 6 pack abs. Fish is easier to digest and agrees with my body. It’s also great for your skin tone and complexion. Best choice I’ve made.

I love that you do it this way. Toasting it was the only way I was able to learn to make it right. My grama tried to teach me boiling the water then adding the rice way but I always messed it up. Hello Pretty Lady, I made it this recipe this evening exactly like yours I didn’t change a thing and I usually do to all recipes. For one, I always add picante in every main dish with meat. 😊 Your recipe was so delicious I think the lemon adds that extra something. My palette was stimulated and bursting with flavors. So I came across your video after my failed attempt at Spanish chicken pot rice. Made your version tonight, and GIRLLL. Omg. Let me call you Sis. Because this came out AMAZING!! I used bone in chicken thighs for this recipe with the skin on. The rice was perfect with the crispy bits on the bottom. Everything full of flavor in every bite. Even my picky boyfriend loved this. ok, I'm Peruvian and we have a very different style of "arroz con Pollo", our rice is green and super delicious and we even use dark beer for its preparation, Peruvian Chile. I liked the video!.

Hey chef zee thank you for all your recipes! I am a hit or a miss when it comes to rice with additions (chicken, peas, beans, etc). What if rice comes out crunchy but looks moist? What went wrong! Thank you for any feedback

So I pull the skin off my thighs (supposed to) and render the fat from them (like cooking crispy bacon) I then pull out the fried skins plus a lil fat for the sofrito and rice, I use what's left in the pot to brown my pollo rubbed w/ Adobo, I've got the "ARROZ con POLLO" song in my head lol (cafe con leche, arroz con pollo, cafe con leche)
I also drop a 15 oz can of either petite, regular diced or crushed tomatoes in my joint after I toast my rice (right now i havea case of petite diced toms so you can guess what I'm using) ,... I use an iron frying pan for my sofrito and rice and transfer it into the iron Dutch oven over the chicken thighs and follow with the can of toms then some chicken stock (easy with the liquid)... it helps a bunch to keep from totally scorching the bottom of my Arroz con Pollo and guarantees the chicken will cook through,... damn good...chicken thighs, red bells and white onions are on sale today,... gonna do it gonna kill it as I'm singing the song

The cubes don't contain MSG (at least the ones that I use) however you can substitute with regular kosher salt (I do this all of the time) or you can use a low sodium chicken stock that comes from free range chickens.
