INGREDIENTS
3 1/2 lbs whole chicken wings
2 tsp Montreal chicken seasoning
2 tsp garlic powder
2 tsp onion powder
2 tsp salt-free lemon pepper
1 1/2 tsp paprika
2 cups long-grain rice
1/2 medium onion
3 cloves garlic
1 1/2 tsp ground cumin
1 tsp cracked black pepper
2 dried bay leaves
2 Tbsp tomato chicken bouillon powder
3 Tbsp tomato paste
4 cups water

50 years ago I lived in a heavily hispanic part of Southwest Detroit. My neighbor across the hall from me was Puerto Rican and she took pity on me and taught me to make soffit. She spoke no English and I spoke no Spanish. But when it comes to doing things from the heart, you have no need for words. From sofrito came Aroz con poillo. With my first try, came peels of laughter as several other neighbors knew this was my first try and again, knowing very little English I had about 6 very good cooks tasting my meal. It was terrible! But, with all the hugs, laughter and them patting my hand..it got better.

I love chicken and rice. Cheapest cuts of chicken you can find at the store, whatever seasoning/flavors you like, and barring absolute intentional malpractice it comes out good.
Never had it bone-in. Might have to try.

I saw this yesterday and decided to make it. Last night I had a dream I was making it, but couldn't find all the seasonings. LOL
I can't wait to make this, I'm going to substitute boneless chicken thighs for the wings.
Arroz con Pollo
Mexican chicken and rice
Simply Mama Cooks
3 1/2 lb chicken thighs
2 tsp Montreal chicken seasoning
1 1/2 tsp paprika
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1 1/2 salt free lemon pepper
2 cups long grain rice, rinsed
4 cups water
2 1/2 tbsp tomato paste
2 tbsp chicken tomato bullion powder
1/2 onion chopped
3 cloves of minced garlic
1 tsp crushed cumin
1 tsp ground peppercorn
1/2 dried bay leaf
cooking oil
Use your hands and manually mix the chicken and spices together for a good coating.
Preheat a large pan, add cooking oil and brown the chicken pieces on both sides, lower the heat and cover with a lid, cook for 10 to 12 minutes. Remove the chicken pieces.
Over medium low heat toast the rice until it's a light golden brown color.
Add the chopped onion and dried bay leaves. Continue to brown the rice and saute the onions.
Add the cumin and black peppercorn, add a teaspoon of cooking oil, add the tomato paste and mix with the rice.
Add the minced garlic and give a quick saute and chicken bouillon powder until fragrant. Combine and mix everything with the rice
Add the water into the pan and gently stir and combine removing the fond from the bottom of the pan until simmering.
Add the chicken back to the pan cover with the lid lower the temperature cook an additional 18 to 20 minutes do not lift lid while cooking.
Turn the heat off and allow to sit for 10 to 15 minutes, fluff the rice.
Garnish with chopped cilantro.
Serve with refried beans and tortillas
I prefer thighs as well. Much deeper chicken flavor.

Why do you cut off the little chicken tip?
The chicken wings I have purchased seem to have lots of feathers. After rinsing and cleaning, it's just easier to cut off the wing tips. 😬
I pull the skin off of chicken and use it to render the fat for cooking, then to gently turn the skins into chicken chicharones. I hate the mouth feel and texture of boiled chicken skin. My method gets rid of that and turns the skin into a delicious side treat.

I prefer the toasted rice without much seasoning, just a little onion, garlic and saffron. Served with peas and chicken cooked separately. It was one of the first dishes I learned to cook in Spain.

My late mil was an excellent cook, and often made arroz con pollo (along with chicken fricassee and pernil). Her son, also an excellent cook, makes this dish about once a month (I’m a mediocre cook, but he loves my pernil!). One of our favorite meals.

When I visited Mexico City , I learned to make arroz con pollo . It’s very simular to how you made it but just one difference . They added 2 cups of beer and 2 cups of chicken broth . 20 years later I’m still making it. I can’t wait to make your version 😋

It’s not complicated at all I had all ingredients on hand well except tomato paste I don’t buy it. Tomato Bouillon I do so it worked out tasted delicious. I followed her steps n cooking time wowza was a big hit. Try it you’ll love it.

I love that you showed ways to substitute the tomato paste for tomato sauce in a rice recipe. I've never successfully done this because I never considered the tomato chicken bullion. That's what I've been missing! You make your recipes with whatever you have on hand and it's so genuine and authentic to being a real mom cooking dinner for your family. Arroz con pollo is a classic comfort food!
