      I grew up in a house where if you made any noise during dinner you better be actively having a life threatening emergency... so it sounds like normal. Just kinda like we were so broke you cleaned the entire plate whether you liked it or not.

    I stumbled on your RUclips page by accident - and it was the BEST accident EVER!! My Mother-In-Law taught me how to make this dish (she was Hispanic), and it was Exactly how you just made it. We had a fire several years ago and lost everything, including our house. My recipes from my own Mother and Mother-in-Law were also lost. I'm slowly getting some of them back. This was one of them. I cannot thank you enough for this video - it brought back wonderful memories of her teaching me all her family recipes. Thank you so much - You now have not only a new Subscriber, but a new Friend! xxx

    My step dad, Michael was from Mexico and him mom made the best Mexican rice. Your food reminds me of her. Michael died in the late 80's but I'm reminded of them through your wonderful meals. Thank you 😊

    So I have made this at least a dozen times now. It is my go to recipe and I am Puerto Rican and have tried so many recipes. Nothing as flavorful as this!

    I just want to tell you… I made this and it was so delicious! Even my picky kids ate a large helping. The next day, the leftover were even better. We shredded the chicken and put it on tortillas.

    This recipe, I cannot even say it enough how this is one of my all time favorite recipes. It’s definitely become a staple in my home. I’ve been making this recipe for quite some time now and I’ve never mentioned how much I love it. So easy to make, so flavorful, and I make double the recipe so I have leftovers. 10/10 recommend. ONE OF THE BEST! Thanks again, lovely! You never disappoint.

    I grew up eating dinner at my best friend's house many nights and his grandma made amazing arroz con pollo (like grandmas tend to do.) When you lifted the lid off at the end, it looked so good, I could SMELL it! Can't wait to make my own now!

    im 23 years old a mom & wife and being a wife im new too all the cooking and my husband is always wanting something new bc im always cooking the same things over & over so im happy i found you’re channel so can start cooking new things for him especially since he’s a picky eater & our daughter as well is a picky eater so hopefully new meal will have them stuffing there face & quite lol can’t wait too make this today

    All of your recipes look amazing, and I love how you have alternative ways to make some of your recipes. And a lot of the spices you use are things I already have! This is the first one of your recipes I have tried , and it was amazing!

      @Willis Huerta all the elements are there
      she's fucking on point with the cuman and tomato sauce
      she just changed a few things
      I would add some cayenne and some peppers to go with the onion and garlic
      also I would've used cilantro instead of parsley
      also I wouild've used Sinaloa rice for arroz rojo but like the spices, she said you don't have to use shortgrain
      but morelo rice or some other short grain is just fine
      U have to start looking at cooking as more like algebra and less like arithmetic

      example
      usually I would say for this dish, let's call the final spice "x"
      normally I would say x=cilantro
      but x=parsley also totally makes sense, they are very similar

    My mom made this. The trick to delicious Mexican rice is to use chicken stock. My mom usually boiled the chicken and used the fresh stock while using the shredded boiled chicken in things like tacos and enchiladas. To add a punch of green and color, she added peas. She also used large chunks of onion so we kids could remove it. Yummy. I tried this recipe and to save on calories, didn't brown the rice in oil drippings before. Just added rice to the liquid. Not as colorful, but still a very nice flavor and came out well.

    Made this tonight and it did not disappoint at all. The key was letting it sit for 10 mins to let the rice soak up all the liquid. So much flavor in the rice.

    Appreciation Story time : My mother recently passed this year in February & i found myself crying as i realized one day that i will never get to cook with her or learn how to or even call her to get instructions...     Oh my gosh!!!! Made this!!!! Used 8 pieces of chicken, 2 cups if rice, 4 cups water, because we are 5 hungry peeps! No other changes made, and it smelled and tasted great!!!!!!! Thank you!

    Made this twice in a week. First for my husband and kids and another just for me to eat for a few days. Smell so good cooking it and the taste really good. Love that it's one pan meal, simple and uses cheap cuts of chicken. This recipe is a gem especially for families. Please keep sharing your recipes and more one pan meals, please. Thanks!
    I used shallots instead of white onions for a slightly sweeter taste to balance the spices and made the chicken stock using B than B paste.

    Thank You,as i type this in my pollo is close to being done.I like the recipe.I kicked it up by adding a few top ingredients.Roasted a large california chili,peeled and some San Marzano italian certified tomatoes.If only you can smell it now,I am blessed,thank the lord....Bless Mama also,,

    My 7yr old can be picky sometimes and he doesn't really care for mexican rice. But he looved this dish!! He ate his entire plate!

    Making this for the second time tonight, last time I made this every single drop was eaten. My hispanic husband loved it, and all the kids loved it as well. I think my man had 3 servings the first night ! They have been asking me to make it again, and i love the clean up, super easy. I used boneless chicken thighs and it was perfect
