I stumbled on your RUclips page by accident - and it was the BEST accident EVER!! My Mother-In-Law taught me how to make this dish (she was Hispanic), and it was Exactly how you just made it. We had a fire several years ago and lost everything, including our house. My recipes from my own Mother and Mother-in-Law were also lost. I'm slowly getting some of them back. This was one of them. I cannot thank you enough for this video - it brought back wonderful memories of her teaching me all her family recipes. Thank you so much - You now have not only a new Subscriber, but a new Friend! xxx
My step dad, Michael was from Mexico and him mom made the best Mexican rice. Your food reminds me of her. Michael died in the late 80's but I'm reminded of them through your wonderful meals. Thank you 😊

So I have made this at least a dozen times now. It is my go to recipe and I am Puerto Rican and have tried so many recipes. Nothing as flavorful as this!
I just want to tell you… I made this and it was so delicious! Even my picky kids ate a large helping. The next day, the leftover were even better. We shredded the chicken and put it on tortillas.
You never disappoint! And just when I was trying to figure out what to do with a pack of chicken thighs I bought Update: I made it that night and my whole family LOVED it. I even doubled the recipe and there were still no leftovers to be found the next day. Thanks so much! 😊

All of your recipes look amazing, and I love how you have alternative ways to make some of your recipes. And a lot of the spices you use are things I already have! This is the first one of your recipes I have tried , and it was amazing!
@Willis Huerta all the elements are there she's fucking on point with the cuman and tomato sauce she just changed a few things I would add some cayenne and some peppers to go with the onion and garlic also I would've used cilantro instead of parsley also I wouild've used Sinaloa rice for arroz rojo but like the spices, she said you don't have to use shortgrain but morelo rice or some other short grain is just fine U have to start looking at cooking as more like algebra and less like arithmetic
example usually I would say for this dish, let's call the final spice "x" normally I would say x=cilantro but x=parsley also totally makes sense, they are very similar

Those large chunks of onion, well this kid will eat those! Great dish, and the cool thing is almost every culture has chicken and rice! So the flavor profile is endless. Put that in your cookbook!
My mom made this. The trick to delicious Mexican rice is to use chicken stock. My mom usually boiled the chicken and used the fresh stock while using the shredded boiled chicken in things like tacos and enchiladas. To add a punch of green and color, she added peas. She also used large chunks of onion so we kids could remove it. Yummy. I tried this recipe and to save on calories, didn't brown the rice in oil drippings before. Just added rice to the liquid. Not as colorful, but still a very nice flavor and came out well.
Made this tonight and it did not disappoint at all. The key was letting it sit for 10 mins to let the rice soak up all the liquid. So much flavor in the rice.
Appreciation Story time : My mother recently passed this year in February & i found myself crying as i realized one day that i will never get to cook with her or learn how to or even call her to get instructions... But with this video i was able to answer all my questions and even get her seasonings just right im happy crying as i look at the meal i made. Idk if youll read this but many thanks to you

To bloom your spices for more flavor add them when you are toasting the rice.
