Authentic Puerto Rican Arroz con Pollo | Rice with Chicken | Amazing Recipe

  • Arroz con Pollo - a staple dish in many Puerto Rican households that is affordable, easy, and HUGE in flavor! Enjoy!
    Ingredients:
    3 1/2 cups long grain rice
    2 - 3 lbs lightly seasoned chicken (chicken sections, deboned)
    1/4 cup vegetable oil
    1/2 cup chopped white onion
    1 oz of either beef summer sausage, chopped pork bacon, or diced cooking ham
    1/4 cup sofrito (I have 2 sofrito videos on my channel!)
    2 garlic cloves, mashed
    1/2 cup tomato sauce
    2 tbsp diced pimientos
    Spanish olives or "alcaparrado"
    1 1/2 packets Goya Sazón
    1 chicken bouillon
    1/4 tsp oregano flakes
    1/2 tsp black pepper
    1 bay leaf
    1 tsp salt
    About 3 cups water (NOTE 🚨- If this doesn’t seem like enough water for 3.5 cups of long grain rice, remember, the chicken will continue to release moisture as the rice cooks! Therefore, adding less water for this specific rice dish will help prevent a mushy arroz con pollo! 🚨)

    Hola Mari, I made your Arroz con Pollo and it was just delicious. I don't cook as often as I used to because I lost my husband last year and it make me sad. But , it's a cold night tonight in the bay area and I needed some comfort food so I opened a bottle of wine and made your Arroz con Pollo and it was just pure delicious comfort.     This is a recipe I’m keeping forever because it tasted very authentic! Tasted just like my mom’s! I made habichuelas from another RUclipsrs recipe and the combo was 🤤🤌🏽
    Keeping the rice on low took longer to cook so I changed it to medium low instead!

      @@mariscookingpr thank you. I’m going to try to replicate it. She was old school from the Bronx and cooked in restaurants. She used tocino as a base and I remember her cooking the the sofrito, tomato paste, cilantro etc in a small frying pan then added it to the chicken being cooked separately. The other thing was her beans!! With calabasa!! 🥰🙏

      @@mariscookingpr Pulao in South Asia uses Masala, that's the only difference, one common spice being cumin / jeera with Pollo, the rest are different LoL

    Hello. I'm Afro American and I ate this the entire 9 months of my pregnancy. My friend is Spanish and she really knew how to kill this dish. Now I live in GA and cannot find a place that knows how to make this dish taste even close to my friend. I'm really not a cook or do I like to cook. But I'm trying to get it together 😊😊😊.       Same as electric, but just a smidge lower. I find that gas stoves are hotter than electric.

      Hi! I always recommend to use a combination of both the red (tomato based) sofrito and green (recaito) sofrito! If you can find the frozen Goya sofrito, then even better. 😊
      I do have 2 sofrito videos on my channel in case you’re interested. A traditional version and a more practical one. 🙏🏽

    Use chicken thighs juicy flavorful meat.Without all the tendons.

      Great idea! A lot of people also use a whole, cut up chicken but keep the bone in and they simply debone as they eat. Whatever your preference!

      @@mariscookingpr some was cooked, some was hard. It was just a tad bit undercooked, I added water, and then it became mushy. I started over and then it came out delicious!!!!!
