Sitting down for a real lunch is so challenging as a mom for me too! It’s not just the cooking, but the time it takes to eat and clean up make it even more difficult. I do a lot of avocado toast too (with a fried egg on top bc I’m not vegan) and it’s not the most filling but at least I’m getting some nutrition and not just eating snacks all day.
Everything looks so delicious! I'm a mom of a 3, almost 4 year old. I pretty much try to make food that will have a lot of leftovers, or have 2 pots of food going at once to make time for lunch food. When you have time to make fresh yummy food like this, it's a bonus. Leftovers are good too.
Great recipes! All things I love. I remember a video you did with your sister where you meal-prepped large Mason jar salads. I'm a working mom with a long commute. I never have time, but grabbing a large Mason jar salad or soup for work would be so helpful. If you're looking for a future video idea, that would be amazing!
The struggle is real when you’re a mom lol. My go to lunch is either a green smoothie with 6 tightly packed cups of kale, 1 frozen banana, 1/2 cup frozen mango, 1/2 cup frozen pineapple, 1/2 cup chia or flax seeds, 32 ounces of cold water, & 6 ice cubes, blend in the Vitamix for 2.5 minutes (I like my smoothies really smooth ever since being pregnant my gag reflex is crazy). The other one I do is make a huge cabbage salad with avocado. I take a big 16 ounce coleslaw trio bag from Walmart. Pour about 1/2 the bag in a big bowl. Then sprinkle with nutritional yeast, pepper, Braggs aminos, chipotle chili pepper powder, smoked paprika, sometimes I add a squirt of Dijon mustard, then mash up 1 to 2 avocados. It’s spicy, but I love it. It’s a savory salad, but you could use any dressing you want. I can eat this salad so fast. I got both of these recipe ideas from Dr Brooke Goldner.

Oy! Yep. I always try and sit with my toddler for meals, but lunch for some reason is hard! I usually end up just eating his leftovers because I hate food waste and I’m too tired to make food for myself 😂
I like your honesty 😊 not playing super women but talking the truth that it is not easy with two children 😊 sometimes I feel like failure because women here are showing how they do everything perfect with many kids around… working, healthy eating, relaxing, working out… with one child and full time job from home I dont find time or wish for everything and feel like looser sometimes… thank you for being honest.
I appreciate seeing the evolution from a more "extreme" high carb low fat diet to a more balanced diet that includes things like a touch of olive oil. Nothing wrong with an evolution!
The library is a great place to find plantbased cookbooks if someone is wanting to try new recipes but not spend money!

It’s also okay to not eat oil, I personally don’t eat it, because I don’t like it, never have, to each their own though. 🤷🏻♀️
