    Today is Day 26 of our 30 day, whole food plant based challenge!
    "Put Your Veggies Where Your Mouth Is!"
    We want to improve our overall health and what better way to do that then to challenge ourselves to eat the very best foods for our bodies for 30 days strait! Come along with us as we share our journey and the results with daily vlogs!
    The rules:
    -Only Whole Food Plant Based Options
    -No Oil
    -No Refined Sugar
    -No Heavily Processed Foods
    -Drink at least 1 gallon of water per day
    -At least a 15 minute intentional walk
    -No eating after 8pm

    Rosemary would definitely be awesome! I got thinking about transitioning out of this challenge, I’m guessing that you will slowly add other foods back in?
    You are also giving me ideas for our $50 Feb challenge with the breads.

      Well, for the most part we're planning on continuing a lot of what we're doing now because we're both improving a little bit at a time! We're just going to be a little more lenient on some things, like some of the gluten free flour and pasta that Mike can eat, but I love the green smoothies in the morning, the celery juice seems to be helping Mike's stomach a lot, removing oil and processed foods and adding in more healthy whole foods is helping me to lose weight and reduce inflammation, so I'm hooked!

      It tasted better than I expected! Lentil flatbread bread is still my favorite though, lol.

      Thank you! Bread has definitely been the biggest challenge for me through this because I typically grab gluten free options for Mike and there's a lot of processed ingredients in gluten free bread and flour.

      The lentil flatbread from day one still remains my favorite and I have continued to make it multiple times. It has been really handy to keep in the fridge and just slap some peanut butter on when I'm hungry and in a hurry. 😊

    What positives changes in your health and body have you noticed after 26 days?

      Increased energy through the first portion of the day has been the most noticeable change and so far I've been going much longer between migraines.

    That bread looks pretty good! I had my "green" smoothie this morning but added blueberries so it was more of a brown smoothie 😂 It still tasted good though! ❤

      The celery juice tastes terrible but it really seems to me helping Mike's stomach. He has reduced his antacid medication from 4 pills a day to ONE! We'll put up with the flavor, lol.
      Yes, his tuchus is doing much better now. 😆 Still walking a little crooked but he's way better!

    I think it looked so good!!! I'm loving all the different bread recipes because it gets me thinking to be more creative with breads. I always just make dinner rolls, sandwich bread or French bread!

      Surprisingly, not using regular flour has been the biggest challenge for me because I usually make things gluten free for Mike because he's sensitive to some gluten (we still haven't completely figured that one out because he's not entirely gluten intolerant). There's usually a ton of processed ingredients in gluten free options though, so that has been a bigger adventure than I anticipated. lol

      @DiggingForHealth I can so relate. For 3 years, I was GF cause we thought it was gluten. I got better, but I still had issues. It turns out it's the synthetic vitamins they put in enriched flour. Which enriched flour is in literally EVERYTHING. So once I realized that I quit GF baking for me & did regular baking for the family & just made sure I was buying organic flour.
      It's so crazy all the stuff that is in everything. It's really infuriating I think.

      @@littlefootranch4410 it happens with organic flour as well. It even happened with the einkorn flour that so many people swear is better. 🤷‍♀️ But the super processed flour tortillas and English muffins don't bother him. I don't get it.

      @DiggingForHealth oh dang! That is interesting?! I can't do Tortillas or anything store bought unless it's Ezekiel or David's bread. And I love English muffins but those are so time consuming to make homemade lol. So I just stick with the 3 basic ones, which gets so boring 😆

    Yooooo !! Have you ever used lentils for sprouts ? We did them last winter, and they're super easy and delicious!!

      I've never sprouted lentils! Sounds yummy! I'm in love with every cashew recreation I've made lately, lol. Creamy Cashew Honey Mustard dressing, Cashew Ranch, Cashew Cream Cheese, Cashew Mayo! I'm going to eventually have to make a video because everything I try has been so satisfying for a plant based alternative and they're all easy to make!

      Before baking it, I was almost ready to throw it away, LOL! It both smelled and tasted good after cooking though. The lentil flatbread that we tried on day one remains my favorite of what we tried during the challenge!
