  • I'd never heard of this recipe for German Meatballs (Königsberger Klopse) with Lemon and Caper Sauce until I got a request for it. They turned out really well - these meatballs are savoury and well-flavoured, and the creamy lemon and caper sauce is a surprising combination. This meatball recipe is easy to make and worth doing.

    Dear Keef,
My elderly father grew up in New York City, on the edge of an old German neighborhood. He always told me, "The Germans are Great bakers, but poor cooks." He never thought much of German food. "They can't cook."
So I decided that I'd prepare this recipe and see whether I could change his mind. He LOVED it (as I did). He said that I could serve this to him every week from now on. He was shocked when I told him that it was a genuine German dish, which they eat especially in Berlin.
So, thanks to you for preparing and posting this video -- and to Louis Marvick for sharing the recipe.

My late German stepmother would cook something very similar to this with a mustard sauce as a winter warmer. You just jogged my memory Keef. I'll be giving this recipe a try for sure!

Based on my experiments with meatball compositions I recommend a half/half mix of pork and lamb. I don't use beef for meatballs anymore, it makes them tough and dry. The pork and lamb mix keeps them juicy and flavorful.

I'm making them right now. I ended up using my mixture above (1/2 pork and 1/2 lamb); I went the lazy way with the onion and just pureed it in the food processor. They're simmering now, will make the sauce in about 1h just in time for dinner. I'll be using the last of my Maltese capers for that, time to plan another trip there. :)
Update: the Klopse were a big hit at dinner. We do have a similar ethnic dish (meatballs in cream sauce, called "perisoare cu smintina" in Romanian) but they're not as savory, and the lemon/caper sauce definitely makes a difference. Thank you so much.

If you use the smaller grater for the onion and celery it turns them almost to mush which makes it easier to melt into the meatballs.

Cindy French I'm lazy, I use a food processor.

Yes! I was thinking a microplane might make swift work of both the onion and the lemon zest.

Grating onions, celery and carrots makes for a thicker mirepoix in sauces as the veggies melt into it.

Konigsberger Klopse looks nice Keeef. The box grater is an instrument of self inflicted pain, I pride myself on the use and technique off tools but the dreaded box grater vexes and frustrates me every time I use one. Cheers Keef
