- Chef Emma Bengtsson from Aquavit in NYC shares her Swedish meatballs recipe that puts IKEA’s to shame. Emma’s meatballs, made from pork and beef, are rolled small and pan fried, and paired with pureed potatoes, pickled cucumbers, lingonberries, and a sauce made with cream and veal stock. This flavor-packed recipe is sure to keep you warm through the cold winter months.

Please do. They're ruining the image of Swedish meatballs. I mean, IKEA's are more like the Chinese you find in soups and stuff. Bouncy. Uniform in texture. Not a single spice right.

Two years to the day since this was first posted, just before the stuff hit the fan and Aquavit NYC is still keeping on. Chef Bengtsson keeps it strong and authentic, at least according to Scando-Americans. They provide such a wonderful culinary experience. Amazing fare to be had if you can't make it to Stockholm.
Just by the amount of butter she used, I know for a fact that I will fucking love her cooking.

This recipe is bomb! Followed it without making any changes and it was great. It does take time but it’s totally worth it.

Consider that she's from Sweden, not only they don't age as quick but also they don't get much sun, which cause our skin to age more quickly and that's why I love overcast days, they're better on your skin
Really traditional. I usually make mine a lot smaller though. The fancier the occasion the smaller the balls get :P

My favorite food in the whole world.
The only thing I'd do differently is put a little bit more cream into the breadcrumbs and not use panko but breadcrumbs from stale bread at home, feels more traditional and home for me, but this recipe is still awesome!

Warlundrie how do u usually make your breadcrumbs from stale bread?
@@iamLODD put them into a food processor and blitz. you'd have to make sure the bread is dried ofc but that's not very hard :)

@@Warlundrie I find that if I do not have any stale bread, I cut up fresh bread into cubes and make croutons in the oven, Then if I need crumbs, just blitz some croutons. Always nice to make your own.

Moms Swedish meatballs are still the best. (Same way her mother made them )
Finely grated onion and potato (boiled before) instead of breadcrumbs. Much better flavor. (Other parts are the same, some heavy cream, salt, pepper, and a mix of ground beef and pork), or you can use all pork which makes them super moist (and more unhealthy but still ;>)
Being Swedish I tried most ways to make meatballs but this is still the ones I like the most

I make pretty good Swedish meatballs so I'm anxious to bear how u do it. I use a bit of nutmeg w/the Allspice and no mustard. Will try it.

I have read about the allspice being a key component but I thought another ingredient is to add mashed potato to the meatballs to get the right texture.

Would also like to make a good cream type sauce to mix into mashed potatoes for real good taste and texture and add chopped herbs etc

The potato Ricer is the way to go! You can make these even better by using cream instead of milk and also by heating the cream and butter before incorporating them into the potatoes imo 😋

I ate my first Swedish meatball at an Ikea's. Damn them swedes make the best meatball. I did eat a frozen version from the market years ago but that doesn't count since it only said Swedish meatballs.
