Salt-baked seabream (Shiogama-yaki)

  • This time, I made shiogama-yaki (salt-baked seabream). It is said that this dish originated with Toyotomi Hideyoshi when he wanted to gift freshly caught seabream to his mother, so he wrapped it in salt to keep the fish moist and flavorful. By wrapping the fish with salt, it steams the fish evenly and keeps it very juicy. This type of dish is often served at a ceremonial events in Japan. The cooking process is actually pretty simple, so if you get a chance, please give it a try!

    【Ingredients】
    1 lemon
    2-3 sticks of rosemary (or any herbs you like. I also used sage, thyme, basil)
    1 whole white fish (I used seabream with the scales still attached. If your fish is already de-scaled, use more kelp to cover the fish so the salt doesn’t directly touch it.)
    1 sheet of kelp
    1kg coarse salt (mine was $5 for 5kg/1$ for 1kg)
    3 egg whites
    1tbs flour

The cooking process is actually pretty simple, so if you get a chance, please give it a try! ご視聴、ありがとうございます。今回は鯛の塩釜焼きです。日本における塩釜焼きは、豊臣秀吉が九州の玄界灘で獲れた鯛を塩で包み、母に贈ったのが始まりと言われているそうです。九州に住んでいるのに、最近になって知りました。塩で包み、水分を外へ逃さず蒸し焼きにする事ができので、身がとてもジューシーに仕上がります。祝いの席などでしかあまり見かけませんが、調理は意外とシンプルです。塩も安い粗塩(1kgで100円弱)を使いましたが、とても美味しくできました。ウロコがない魚を使う場合は、昆布を多めに使い、塩に触れる部分を減らしてください (それでも、長時間放置すると塩辛くなるのではやり出来立てが1番美味しいです)。

    I'm always amazed how calmly the cats watch you cook. Even Poki lets you keep the fresh fish in front of him! Meanwhile my little guy won't even let me eat a sandwich in peace.

    you can tell how trusting the cats are of Jun. He hammers the fish open in front of Poki and Poki doesn't even flinch despite it being pretty loud. My cat flinches if I sneeze near her XD

    I never really had a role model to look up to, or even just a person who I feel like I would want to grow to be like, but you have become of of the first people ive started to look up to. Even just the way you present your self and how the stuff around you is, it almost feels like a dream that I had as a kid.
