THE ULTIMATE 7 UP POUND CAKE RECIPE
2 STICKS UNSALTED BUTTER (ROOM TEMPERATURE)
1 STICK SALTED BUTTER "
3 CUPS GRANULATED SUGAR
5 EGGS (ROOM TEMPERATURE)
1 TBSPN LEMON EXTRACT
1 TSPN VANILLA EXTRACT
8 ozs. or 1 CUP 7 UP
3 CUPS CAKE FLOUR (SWAN’S DOWN CAKE FLOUR)
(BAKING) SPRAY
GLAZE / ICING MIX (OPTIONAL)
1 CUP POWDERED SUGAR
2 TBSPNS REAL LEMON JUICE
PREHEAT OVEN AT 350ºF/175ºC
METHOD
USING A HAND MIXER, BLEND THE BUTTER AND SUGAR IN A LARGE BOWL FOR ROUGHLY 4-5 MINUTES UNTIL THE BATTER IS LIGHT AND FLUFFY; ADD THE EGGS ONE AT A TIME AND MIX WELL. AFTER ALL THE EGGS ARE WELL INCORPORATED INTO THE BATTER, ADD THE LEMON AND VANILLA EXTRACT AND MIX WELL.
ADD 1 CUP OF FLOUR AND MIX WELL
ADD HALF OF THE 7 UP AND MIX WELL
ADD THE 2ND CUP OF FLOUR AND MIX WELL
ADD THE REMAINING HALF OF THE 7 UP AND MIX WELL
ADD THE 3RD CUP OF FLOUR AND MIX WELL TO COMBINE.
****SPRAY BUNDT PAN WITH BAKING SPRAY****
POUR THE BATTER INTO THE CAKE PAN, GIVE THE PAN A COUPLE GENTLE TAPS ON YOUR COUNTER TO MAKE SURE THEY ARE NO AIR BUBBLES AND BAKE FOR APPROXIMATELY 60-80 MINUTES OR A TOOTHPICK COMES OUT CLEAN. WHEN DONE REMOVE FROM OVEN AND LET COOL COMPLETELY BEFORE REMOVING FROM PAN. SET THE CAKE ON A STAND OR CAKE DISH AND GLAZE.
IN A SMALL BOWL, WHISK THE SUGAR AND LEMON JUICE AND MIX WELL TO COMBINE. SPOON OVER CAKE.

My family have been making 7-up pound cake for many years. The only difference is we never used one tick of salted butter. I will definitely try that when making my next cake. Thanks for sharing! Your cake looks delish!!! Blessings...

Wow It's crazy that I came across this video. I never use salted butter but I started using a little in my cookies and love it. I just made a 7 up cake tonight with one salted butter. It's for tomorrow. Can't wait to taste it. I use cake flour for all my cakes. So moist
Hey Ronnesha, thank you so much for stopping by; I like to mix things up a bit and to be innovative; even with the flours, If a recipe calls for baking powder I would prefer to use self rising instead of using regular flour then to add the baking powder; I just think that makes sense and if a recipe calls for salt I prefer to use part salted butter and part unsalted; you know what i.m saying. I guess everyone has their way of doing things. I know your cake is going to be delicious; have a blessed weekend.

@@monicaphillips2730 Hello my dear, I am so sorry that your cake did not come out; may I ask what flour did you use. I have never tried it with half the recipe but can I suggest that you try the original recipe and maybe bless someone else with the other half. If you are using regular flour then absolutely you have to use baking powder. I hope that helps and sorry I took so long to respond.

Your cake looks really yummy and moist, did you use any baking powder, or you did not need it because you used the 7 up
You are correct, there is no baking powder when using the softasilk or swansdown flour, the 7 up provides

Hello Carolyn, well, I am not a dietician but I can give you a suggestion for stevia glycerite; you can use half the amount of sugar and a couple drops of the glycerite to bring up the level of sweetness. I know they have other products in the form of sugar but you are not going to get the same results using them just as a replacement. What if I don't have any cake flour on hand can I used regular flour?

I always thought buying cake flour was a waste of money when most people that bake already have regular flour in their house. Cake flour is just flour sifted a few times.
Hi Marilyn and you are absolutely correct; you can definitely do that yourself but for some reason the cake flour always seems much lighter but it is really up to the individual. I appreciate you watching though and commenting. Thank you and blessings dear.
Cake flour is sifted multiple times and has less gluten in it so the cake can be fluffy
Besides having a lower protein (gluten) content, cake flour is more finely milled than regular flour.
Cake flour is flour with cornstarch added. You can make your own, actually. For every 3/4 c. of sifted all purpose flour add 2 T. cornstarch (or arrowroot if you have issues with cornstarch). Sift 5 times before adding your dry ingredients, if the recipe calls for it. There's recipes on how to make your own cake flour on Pinterest and out here on RUclips.

Make sure you use fresh flour! Old flour doesn't rise well at all. Keep your flour in an airtight container.
