Here's an idea. Egg lecithin is an emulsifier. Add egg based lecithin, which will keep the oil and water in suspension without separating. Try with and without the gelatin.
@@lorenamcgovern I don't add water to mine either. No need if they are stored in fridge and don't get too hard. Also, water will make them go rancid faster, so skip that or you will have to store in freezer.

I pop em out of the silicon cups onto a plate when first removed from the freezer. Then into the fridge. This avoids the too-soft-to-get-out-of-the-cup problem.
I tried brown butter but didn't like it enough to spend that much time on making it. I make bites with one stick of unsalted butter with 2 ounces of coconut oil melted together, mixed with one serving of Keto Chow. I used the Pecan Sticky Bun flavor and it was amazing. I put them in the freezer to start and then put them in a shallow pan with a lid in the fridge. I will give the gelatin a try but maybe not as much, to see how I like it. Texture might be an issue for me. Thanks for showing your experiment.
I made some with LMNT Chocolate Caramel, so just the butter poured into molds, sprinkled on the LMNT, first batch, turned out so well, the next batch I added tiny pieces of crunchy bacon I fried up. very good. ooh coffee sounds good.
My first batch just didn’t taste marvelous like everyone was saying it would. I figured I didn’t brown it enough. I was afraid it would burn. But what to do with them? I ended up putting them on my steaks and fish as I cooked them. It worked!

I am the same as you - I don’t like the feeling of eating a chunk of fat. That’s my main problem with brown butter bites. They have to be very solid for me to enjoy them. I found the texture depends on the brand too - some brands are greasier and some are creamier.

I love the english toffee in mine too~ so good! Sometimes I add a scoop or two of salted caramel MCT powder, some flavored collagen, or even protein powder for a change of pace in flavor & texture. *I'm avoiding nuts right now, but toasted pecans w/the toffee sweetener is really delicious too.
Did you switch from using cream in your coffee to using these brown butter bites, Khalima? I'm trying to get off the heavy whipping cream dependency - could use the encouragement 🙂
@McBeth I still use heavy cream or Half & half. I was trying to cut the dairy but unless I'm fasting, I can't do it. I have also been putting a little chocolate salt electrolytes from LMNT. Stay encouraged. You can do it!
Whipping the brown butter when it cools to a soft solid and then adding some cinnamon and caramel stevia or maple, then putting them in molds in the freezer makes them much easier to eat. They kind of just melt and remind me of butter cream frosting. I wonder what would happen if you put collagen powder in them?
I've added various flavored collagen, MCT powder, & protein powders for different taste & texture~ all of them winners for us👍 *One exception I just remembered was when I tried adding in chocolate nootropic powder~ no beuno☹~very bitter & gritty.

I made some bites with the chocolate mint salt and it wasn’t minty enough so I added peppermint extract and it changed the texture to chewy like a Kraft caramel consistency! I don’t know if this would happen every time or if it was just a fluke!
Maybe try peppermint essential oils that are safe for consumption, because they don't contain any alcohol. Young Living has a fantastic peppermint oil. But it's VERY potent, so you likely wouldn't need much.
Interesting. My biggest question is how do these taste without the addition of any sweetener. I think true caramel works because it has sweetness (using keto sweeteners, etc). :)

Question: does the Stevia in the LMNT not bother you? I've had major blood sugar drops from using Stevia. I would love to do the LMNT but I'm hesitant because of that.
@@imahermit i see. I recall on the blood test, there was some magic number like 90 (fasting glucose) on the upper end but don't recall anything on the lower end. I guess it's just as bad when it's too low, or they just don't look for that because it's expected to be low when fasting.

You should use swerve sugar replacement. It’s not real sugar. It taste about like real sugar. It looks like real sugar. It feels like real sugar. You can actually take chocolate unsweetened and add this sweetener to it and actually make chocolate. And not be off the carnivore diet because I see a lot of recipes that use cocoa and a carnivore recipe and I see another lady who uses this sugar in a lot of her recipes, especially her pancakes, her carnivore pancakes.

i have done the butter bites twice now..once in sauce pan and once in the oven. Each time i expected "caramel taste", NOT. :/ I guess I'll have to keep looking for a recipe to make the butter bites taste a bit better than straight up butter

Maybe try 1 T. gelatin, 1/2 C. coffee, and 1 C. butter, no LMNT?

I whip in 1/2 scoop Perfect Keto MCT salted caramel to 2 sticks browned butter slightly solid and freeze. Eat right from the freezer.

You can't avoid the foam whether salted or unsalted because it's the water and milk solids separating out and the water portion cooking off.😊

Great experiment. I sometimes add a little english toffee stevia or the cinnamon to mine but without gelatin. I use them in my coffee everyday.

Perhaps reduce the water and the gelatin too (by just a little bit)
Could you not mix in the gelatin directly into the butter after taking it off the heat source? Then there's no water at all.
