I love making hummus, also. Something I learned from Refika’s Kitchen is to intermittently add ice cubes instead of the water. It makes the hummus super fluffy…really elevated my hummus to another level. I love your addition of non traditional elements like the pomegranate seeds!

There was a flurry of posts about the best hummus in the world which involved soaking them in baking powder overnight and popping them out of their skins which makes no sense to me because I am vegan and appreciate the fiber........ however I did soak them with a tbsp of baking powder, drained and left the skin on and proceeded as normal and got the same light as air quality you did. Will try your method next! TX again.

Hahaha after learning the chili oil recipe I used it in my own hummus. But dry chickpeas soaked, boiled a bit, then mixed with tahini and jalapeños as well as garlic cumin salt. Either way looks great and cheers

I tried the chili oil one this evening. It is really delicious. Little twist that I run out of tahini and used some home made peanut butter instead. Missed the little bitterness of the sesame paste so added a few drops of sesame oil to the hummus. Crowned it with chili oil and just dipped carrot and daikon slices into it. Perfect dinner, easy to make and delicious. Thank you for the idea.

I made the classic hummus last night and found a Mediterranean Barley salad recipe online to go with it. The hummus was amazing! I found making my home made hummus leaving out oil the hummus lasts perfectly for more than a week. With oil added on top it goes off in a few days. Thank you for delicious recipes.

I can't wait to make hummus with Chili Oil... it looks stunning... might add some pine nuts and olives as well (not a fan of seaweed.... A Lebanese woman's family recipe included about a 1/4C - 1/3C whole fat Greek yogurt instead of water... Will have to try your recipe out...
I prefer my hummus to be very creamy. When I have extra time, I peel the chickpeas then simmer them in water (add 1/2 tsp baking soda) for about 20 minutes. Drain the chickpeas then add them still warm to your food processor. However, it's still great without those extra steps.
With some minor tweaks this tastes just like the AMAZING, insanely smooth and creamy hummus I used to get from a local Mediterranean shop that closed. To me it tastes like a perfect tuna salad and it's the only hummus I could eat by the spoonful. My changes were to skin the chickpeas, sub ½ cup soaked cashews for olive oil (probably doesn't effect taste just my preference nutritionally), and replace half the water with AQUAFABA! I just kept thinking if aquafaba can make creamy mayo it should make the hummus extra creamy; I think that's the big secret! This will be a staple recipe for me! 😍
Made the hummus, my husband asked me where I bought it at, it was really delicious. I only made the more traditional toppings-olive oil, paprika with chopped olives and parsley. This was so good I see no reason to buy hummus any more.
the toppings in your first recipe are interesting, I've never seen olives and pomegranate seeds on hummus before. Also I like to mix tahini sauce with a little chili oil, it makes a great spread for sandwiches.
