    I have made your recipe so many times because it’s truly authentic. Having lived in the Middle East for 14 years, I was hard pressed to find any hummus that tasted like the hummus I was used to eating.       She does, doesn't she? She reminds me of a Palestinian Egyptian woman I used to know who made the most amazing food I ever tasted. She would say "I make my food with love, it makes so much difference to the flavour" which is so true and you can see this is true for this wonderful woman here 💜

      All these people talking feeling people's "energy" over videos and pictures and shit lol
      Energy is a physical current. You literally feel it from being in the physical presence of someone else. It's like the feeling you get in a room of people. Or when someone walks in the room with you. before you even see them you feel their energy. It's like the feeling when you try and push the positive end of two magnets together. It's a physical thing. People get energy confused with a "vibe". Vibe is a better word to use that actually makes sense. Vibe has been turned into a work that means more like a person's demeanor, or expectations of what kind of energy that they give off. Millennial "woke culture" is so lame. These kids lack so much self awareness that they don't even know what the back of their hand looks like due to their iphones being in their face 24/7

    My mom was watching with me and said: no one knows the ice cube trick and I told her to wait and see. She didn't believe that you used an ice cube. She thinks that ice cubes or cold water gives the hummus a fair colour. Thanks we enjoyed the video

    I love Turkish food and Hummus and it's not easy to find good Hummus. The way you have made it just by looking it started making my mouth watering. I make myself some time but yours look so delicious. It's not only the Turkish food but every thing about Turkey is so good. I visited Turkey long long time ago and loved it. It is not only mine but this is one of the top destination in the world to visit. It is like whole package deal.     I have been working with your recipe and find it to be perfect every single time!
    Depending on who comes over, I add more or less garlic and paprika before serving.
    Made it today with my granddaughter and she ate it along with the chicken (she literally dipped the chicken into the hummus).

    Just made this (in UK, hottest day of the year so far) - absolutely delicious! And now, with the skins removed, I understand why my previous attempts to make hummus turned out more like a falafel mix! The ice cube idea is great: I found I needed to add a couple more, and little drizzles of water to reach the “loose” texture I wanted.

    Where I live (Souh Africa) Tahini is either difficult to find or stupid expensive. On a whim, one day, I decided to try peanut butter! Obviously, one has to adjust the quantity accordingly, but oh my greatness, what an amazing taste that adds to the hummus.
    As always, Refika brings simplicity and love into the kitchen.

    It is difficult to get good Tahini in the middle of the U.S. so I've ordered some sesame seeds to make my own. Thank you for the technique to remove the skins!

      Believe it or not, peanut butter is a great substitute. You can use just about anything, but the plain, natural type is closest to tahini.

    Been making hummus for years, but never soaked them to get the shells off. I tried it today and it was a great tip…..so smooth and creamy. I added roasted red peppers and roasted garlic, my kids love the sweetness of the roasted peppers. Great recipes. ❤️❤️❤️from 🇺🇸

    Wow!!! That skinning technique is like magic!!! Just like when I found out how to skin garlic effortlessly. Put the garlic cloves in two bowls (making a circle/globe) and shake for 10-15 seconds. Open the bowls and BAM!!!! Skinless cloves! I can't tell you how many of thousands of cloves I peeled by hand (and knife) in my past chef career. If I only knew this secret back then. The chick pea skinning goes right up there with the garlic clove!

    We live in a place devoid of good Turkish food. My Macedonian partner has tried to make humus many, many times without good results. The skin removal and Ice cubes were game changers.     Ooh delicious to the last drop. The lemon zest makes it tangy. Personally, I add garlic paste and chilli on the side. Perfect combination. Never wrong with adding Olive oil. Regards from UGANDA 🇺🇬🇺🇬🇺🇬🇺🇬

    Refika thank you so much for this recipe! I used to always get hummus back in the city, but because of COVID and financial instability, I had to move back to the province. We don't have any restaurants here serving hummus. I made this today and it seriously took me back to my days in the city.

      Hummus came to Turkey from Syria many many decades ago. It's cultural and geophraphyical junction here. Traditions, foods, deserts. Same people living in the southern part of Turkey. So kitchen is common❤

      @Edna Turner yes it is true, but not only arabs and greeks, also armenians, caucasians . Turkish cousine is a well mixture of many cultures. Wheat, meat, spices, vegetables, olive oil, meze,deserts. But we are weak about sea food.

    Crush the garlic and soak it in the lemon juice for half an hour to cook it out.Huge difference.

      Middle Eastern people, love love their garlic! I myself don't like the taste of raw garlic on my tongue 😝 but what I do to tone it down a bit? Put your diced garlic in a mortar and pestle, add the salt that you will use in the recipe, and just blend it well together and that reduces the rawness of the garlic and the pungent taste. But not many middle eastern so this; because they love their garlic. 😆

      @@sylvianolastname6606 Actually what you described was the original Middle Eastern way. When I was a kid (loong long time ago) , before all these kitchen processors, blenders etc.; every home had a set of mortar and pestle especially for garlic. and we used to pound them with a bit of salt, and then use it in the dishes. Interesting that you mentioned that, and in those days Hummus was a special meze, not something we quickly fix in 5 minutes because we used to use a bigger mortar and pestle set to pound the chickpeas (which was time consuming and tiring).

    I ate in a restaurant in Istanbul, very near to the Basilica Cistern, that made one of the most amazing hummus I have ever eaten. They said their secret was browned butter instead of (or complimentary to) the olive oil.

    Best step-by-step I've seen. Never thought of using ice to keep it cool, always ended up stopping short of really smooth exactly because it was getting warm. And yep, taking the skins off the chickpeas isn't just being picky, they do add a bitter after-taste.

    My daughter and I love hummus and the Turkish place we use to get it made some changes in the kitchen. Mama stopped working. The hummus was never the same. We've tried to do it ourselves and it was decent but never smooth enough. Now we know what to do. Can't wait to try.

    Ok. Absolute game changing hummus right here. I made it in my vitamix to cut down on time and not have to peel the garlic and it is just so fluffy and incredible. I made it only 5 minutes ago and have to make several more batches now since everyone ate it all!!
