i like when a product i [finally] like doesn't evolve or get improved or gets discontinued, which happens to me more frequently each year. I miss my Ford Probe.
This was delicious. Made some today and served with some ketchup (or sriracha) because the flavor reminds me so much of hashbrowns. At first they didnt hold together well so I made a second batch that were thinner and i let them cook longer on both sides and that did the trick.
my mom use to make these with left over mashed potatoes after we would have a roast. She would serve them the next day with pork chops :) Haven't had these since I was little. Will have to make these some time this week. Thanks Chef John for reminding me of the good food from when I was little!
A fun and easy recipe- thanks for the idea! I had Idahoan Instant Mashed Potatoes on hand, so I used that. I didn't need the extra salt with this brand and I also had to use a little more of the instant mashed potatoes than what the recipe called for, but it turned out great! I would definitely make them again :D

I tried this yesterday. I didn't use leftovers, tho. I bought instant mashed potatoes just to test. Tasty! :) In fact I added a large shredded potato to it, just to get some real potato in it. The next time I make home made mashed potatoes I will try to fry the left overs. I really like your videos! Thanks!!
One of my favorite memories from my childhood was having these with breakfast at my grandmother's house. She would add finely chopped onion to the potatoes before cooking and the heavenly smell would fill the house. I took things like this for granted back then. Today, I wish I could go back and shake some sense into that little brat.
I always use my instant mashed potatoes for thickening soups and stuff. It lets me make a creamy potato chowder without cream that tastes just as rich. :)
I've never had potato pancakes before, but these look quite delicious, so I may have to change that soon! I EVEN HAVE ALL THE INGREDIENTS! It's a first!

I tried this recipe a week ago and it was great. The fat girl inside me made some tweaks this time: added 1/4 cup of buttermilk, sprinkles of mozzarella cheese and added a pinch of paprika. i LOVED it. i agree this is not healthy but every once in a while its okay. (: Thank you chef for the inspiration to create other dishes.
@chef john, my fiance does that with our left over homeade potato salad. the potato salad we make has potatos, eggs, mayo, mustard, TONS of green onion and TONS of lime. it is amazing when fried up the next day like this as left overs. :)
I love how you keep knockin instamash here and its like my goto mashed potato option. I just use a lot of little things like some cream/egg/mayo and plenty of seasonin to make the instamash more enjoyable. I personally like how homogenous instamash is compared to even the best made homemade mashed.
I was absolutely delighted to find this recipe on my favorite cooking channel because I was looking for something different to do with boring, leftover mashed taters. 😘
@Nur8Nurani because butter has a very low smoke point and oil has a pretty high smoke point, which means if you just put butter it would burn easily but mixing it with oil, it doesn't. and oil has a has a pretty neutral flavour wheres butter is awesome... so basically you get the best of both ingredients, thats why.

Haha, I've never used instant mash, won't start now, but they look good :P I can only eat potato pancaked, no matter what kind they are (though I do prefer the Swedish kinds), with bacon and lingonberry jam... I think everyone should try it at least once ;) It's like meatballs with potatoes, cream sauce and lingonberry jam... A typical example of Swedish food, and absolutely delicious :D

Indonesia have some dishes like this, but they are all deep fried! If it is round and filled with carrot and beef, we'd call it bitterballen. If it is longer, filled shredded chicken, and coated with breadcrumb, we call it kroket. If it is shaped like hockey puck, it is perkedel.

I've found sometimes real cooked spuds get a funny flavor or smell after refrigerating. Anyone have any tips on how to prevent this? I've noticed issues like that with chicken, but found making chicken salad prevents that.
@Tuntee Yeah, I was shocked at this as well. Even though he had it for an ingrediant in another recipe, its good to learn how to make something good from the "cheap stuff"
Most recipes rarely show the instant mash variety, just the normal potatoes. Now I know to use cold water instead of boiling to keep them more firm. Also guess you dont need breadcrumbs or flour either.
ill give these a try next time I make some food. I have a little pan that I use for making egg patties for sandwiches, and the recipe should fit half a batch in the pan. Maybe pop an egg patty between the two potato cakes and make a sandwich

I love your potato pancakes as buns idea! Speaking of thinking outside the box, I modified this recipe. It's in a comment I wrote a bit earlier. Give it a try. It's soooooo tasty.
Very nice recipe. However, like all recipes you can add your own personal touches to modify them a bit. In ours we added truffle oil, which really added a fabulous depth of flavor which turned it from something good into something memorable. Also, a few mashed strawberries and bittersweet chocolate chips, along with two diced figs really set off that hint of truffle, as well as a couple of sardine heads (just the heads, don't wanna get too crazy), and two slices of meat lovers pizza which we blended until smooth in our powerful blender, but I suspect any blender will do. Pizza doesn't blend well on its own, some liquid is needed to get everything moving in the blender, so we added a half a mint milkshake we had left over from the weekend, as well as the meat from a half dozen buffalo wings, and the blue cheese dressing they came with. It was all a bit loose at this point so we folded in some whole wheat flour, mashed chick peas, and roasted lentils. Unfortunately we added too much of them and it became quite dry. But we found the perfect solution, tapioca pudding! We had a gallon of it which never got eaten during our Kwanzaa party a few months ago, so some of that went in as well. Pro Tip: any mold on the surface of pudding can simply be scraped off and the rest is still quite good, though it will smell a bit unappetizing. In the end we had potato pancakes which were so complex, and had such a wide and varied array of flavors, that our guests were speechless. We'll definitely be making these again. ...but absolutely will be adding some pheasant next time.
Just made them for the first time. I like them my dad he’s a picky eater said they’re not great but he ate the whole thing so 😂 I also added some pepper jack cheese to mine I think next time I make them I’ll put bacon

@HyperSensitive88 the butter is there for the flavour, but adding the oil makes it burn less easily, since oil has a higher burning point.
@berukblue He uses oil because it doesn't burn as easily, so he can get a better crust. The butter is just for flavor.

Blanched quail meat really made our attempt at this recipe shine. We also added a crumbled up Snickers bar and some raw leeks. It was divine.
