The juices from the dressing "cook" the corn as it marinades. Just like when making Ceviche. The acid in the limes & lemons "cook" the raw fish. Ceviche is a technique by which seafood is cooked by action of acid rather than heat.

Looks great but for me the corn and beans would need some cooking.
Aloha! The beans & corn are both cooked before they're canned/frozen, so they're fine to be used as is 🙂
