This is an amazing salad, perfect side dish, dip or full meal. There is no doubt that this salad is on top of my list when barbecuing, grilling burgers or when I need a potluck dish because it's always a hit, i use it as a garnish in our meat tacos or a a topping in our burgers. My Ron always asks for it. When entertaining friends i like to set out an assortment of chips and serve it as an appetizer dip, then I watch it disappear quickly. If you're a vegetarian, and looking for a perfect meal this is it, just leave out the cheese and your set, you can make the perfect lettuce tacos, always crunchy and delicious. It's always best when eaten the same day, or your avocado can turn brown, this BLACK BEAN AND CORN SALAD, is easy to make and it's loaded with nutrients.
INGREDIENTS
3 ears of corn
1 Tbsp salt (for boiling corn)
2 Cans black beans (drained and rinsed)
1/2 med purple onion (diced)
1/2 large orange bell pepper (diced)
1 pint cherry tomatoes (cut in half)
1 Large jalapeño (seeds removed and diced fine)
1 large garlic clove (finely minced)
zest of 1 lime
med/large bunch chopped cilantro
COTIJA cheese 1/3 10oz. package (crumbled)
1/2 -3/4 C. Zesty Italian dressing
1 large avocado (cubed)
salt to your liking
• you can leave out the cheese if vegetarian
• best if eaten the same day

This looks yummy. I like your choice of dressings I had it somewhere and it had kind of a sweet lime vinaigrette and I didn't care for that but I think I would like the tangy and I would certainly like it wrapped in the lettuce leaves in midsummer when it's hot

Rachel I love all your videos I want you to know that very very much I just don't like Peppers or onions only cooked onions I've been that way my whole life and I also have acid reflux disease I wish I could cook but I have a disability I used to cook for my kids when they were little but one day they said your food sucks and I haven't cooked since and my kids are 22 now many blessings to you Rachel and much love to your whole family
Is there a good substitute if I can't find cotija cheese?
I use cotija because it has a good flavor and just the right amount of salt but you can substitute, Queso fresco, Feta or parmesan.❤️
We really do "eat with our eyes", so who wouldn't love this salad, especially in our hot Texas summers? Yummm!
I'm about a year late with my comments, but I make a version of this "black bean salsa" with canned Rotel tomatoes and no cheese. The juice from the tomatoes serves as my dressing. I plan on trying your salad this July 4th! Looks fantastic! Thanks!

Here in the South, we call that Texas Caviar and we eat it with Fritos Scoops. I don't add the avocado, because I like to let it sit and soak for a few hours in the Italian Dressing, and that would make the avocado very mushy and brown. We save our avocados for guacamole.
Agreed, I DON'T like Avocado with Italian Dressing at all...that's Avocado Abuse and it should be outlawed.
Oddly enough my Mom made "Taco Salad" with cooked ground beef, tomatoes, grated cheese, diced onions, diced lettuce, black olives, AVOCADO and Fritos and used a little bit of French Dressing, seriously a little bit of dressing... it was AWESOME one of my favorite dinners as a Kid.
Looks delicious. I think I’ll make my own dressing as the bottled stuff has sugar in it.

I've spent hours watching your videos and copying down your recipes. Last week I made your potato salad and everyone loved it even more than mine, which everyone has always loved. Your's was the bomb and will now be my "go to" potato salad!! Two days ago I made your Black Bean and Corn Salad - the second of your recipes I've tried. OMG! My guy doesn't like it when I put corn in anything but he LOVED this salad! Whenever I've made this before, I made a honey-lime type dressing and I doubted yours would be better. I was wrong! And so easy, no need to gather a bunch of ingredients to make the dressing, just open the bottle! Can't wait to make your Warm Potato and Sausage Side dish tomorrow! So I just made this dish & left it in a fridge for about 3hrs. Then had it for dinner & oh my, it is delicious. I followed the recipe exactly as stated. I used feta cheese, because I could not find that cheese that Rachel suggested. Otherwise I followed the recipe 100%. This is a keeper. Thank you Rachel.
I always soak the onions for about 5 minutes before using. Takes away the sharp flavor in salads. Yummmm
Rachel, I found an excellent recipe that I must share with you. It's on Beverly Black page Easy Pineapple cake. Made from scratch and is easy as well as wonderful! I hope you try it. And anyone else reading this. It bakes up so nice.

I saw the method of cutting the corn off by putting on a Bundt pan. The middle holds the corn & the pan catches the corn. 😁
I’ve been making this salad without the Italian dressing. I use olive oil and red wine vinegar instead. I also do not put cheese in it. I do add green onion and cilantro to freshen it up. No lime zest. As an option; just the juice of a lime or lemon.
No cheese for me. I’m allergic

Another way of cutting cherry tomatoes, place a bunch of them in a flat plate and with another flat plate on top of the cherry tomatoes, run the knife in between the plates, but make sure the knife is sharp so it'll be easy to cut them in half without pressing too much on the tomatoes
I was trying to remember that technique!

I made your carne guisada, mexican rice and this salad for the fourth of July, everyone loved it all. Could not find the cotija cheese in HEB, but got queso de rancho instead. Love your videos
Thank you Rachel ,made this recipe today - it was my second time. I left out jalenpeno the 1st time and it was a bit bland - this time it was excellent (really delish) followed all your directions.
I made this over the weekend and is delicious, I did not have Zesty Italian so I used Lemon Herb and I loved it. The garlic, cilantro and the zest of the lime are key to this salad. Buenisima Rachel!

Ron is a lucky man! I just made this and it was beyond delicious! I didn’t want to waste the lime after I zested the peel, so I squeezed the fresh lime juice into the salad and it was SO good! I love your channel and will be making this recipe many more times! Thank you!!!

I love watching your channel. You are beautiful & so organized. This salad was so beautiful that I had to make it! I used can corn, no cilantro do not like the taste. I used red & orange bell 🫑. I forgot the jalapeño. Used lime & lemon juice & a little Italian. I forgot to zest. I took this to our Thanksgiving dinner. It was a hit! No left overs. I watched many videos on this salad & came back to yours. Next I want to make your posole. Do you make a green posole?

A take on the Texas cowboy caviar- but I make my own italian dressing (cruet)-(Respectfully, store bought is too sugary and always has odd flavor , especially Kraft. Alternately you can do Good seasons packe t n the cruet.

This was great except for the zesty Italian salad dressing. I didn’t think it helped at all. I substituted juice from the lime, a few tbs of cider vinegar and two tsp of juice from a jar of pepperoncini.

2. Salad is very large. Can it be made smaller portions. Can leftovers be kept in fridge? If so, for how long? 1 day, 2 days?
It looks so delicious, I would love to try it, but I hate to waste food.
I use to make this salad every Sunday when the kids would come to dinner ! But we all stop eating corn and carb , so no more that salad ! Unfurtunetly it won’t taste the same with out corn and black beans ! I used green onion all of it and lots cilantro lemon and olive oil and avocado, garlic . That was it , couple hours in the fridge to marinade good and ready . I wonder if I put all other thing you just put in and just skip the beans and corn 🤷♂️🤷🏼♀️is that fresh cheese or feta ?

I made this with one can of black and one can garbanzo chi chi whatever you call them, I love them and I make my own dressing. Need to have lime cause I used lemon cause that’s what I had on hand. Need to try that cheese! ❤

Rachel that salad looks delish can’t wait to make it. I like zesty dressing, but my fav is viva Italian. viva dressing is hard to find at times so I do buy the zesty. I can see this being served with tacos would save on all the little bowls. lol

We make something similar as a salad or chip dip. We use oil and lime juice for the dressing. Can't go wrobg with this salad!
