    On the side of a box grater there is a slicer or use a mandolin slicer to help it go faster and a little easier on your eyes for those onions ❤

    If you par boil the potatoes for 3-5 minutes it will take most of the starch out of them. I drain them, rinse them, and the let them cool off in an ice bath!

    Tamara, I love that you can food for your family! I think I would chop up the onions after you dehydrate instead of pulling them apart. It sure would be quicker!

    Great job ! I don’t can but I love watching you,I’m very intimidated by canning. Everything looks beautiful ! I chop onions and celery and freeze them separately. Just throw those dried onions in a pile and chop them up with your knife 🔪 so you don’t have sore fingers 😢thank you for sharing 🫙🥔🥕🧅🫙

    I saw you said you cry when you peel onions. If you put them in a refrigerator for a couple of hours or overnight you will not cry. Makes life so much nicer. Also you can use the bags the onions come in to make into a scrubby.

    Tamara I sure hope you see this I wish more people knew. If you refrigerate your onions before you cut them up, they don’t make you cry. I just keep my onions in the refrigerator all the time but if you at least put them in there overnight, you won’t have tears

    I have asked Santa for a pressure canner this year! Also, I have my eye on a shelf system that I can fit in my closet to hold stuff. You have to get inventive as a single in a small apartment.

    You got quite a bit accomplished. Prepping is the most time-consuming part of any meal so it is a big relief to only have to do it once. Winston was really taking his job as Top Assistant seriously. Good job!
    The look on Max's face when you gave him the carrot 😂. Poor baby. I hope he got one of his favorite treats later.
    Looking forward to seeing more canning videos. I haven't done carrots yet, but want to. I saw where someone canned them with Lipton Onion Soup Mix. That sounds good!

    I went to a big box store to stock up every few months. They did not have everything so my husband still did a small Walmart haul for us. I do try to use everything without wasting anything. Another great video. Thank you for your content and thoughtful way you explain everything.

    Just a suggestion, I canned some potatoes in homemade veggie broth and they were amazing! I threw them in the air fryer. Home canned potatoes are one of my favorite things!

      @@jenniferbrown483 the texture was great! The air fryer made them like roasted potatoes. I cut my potatoes into larger pieces than commercially canned potatoes, so I think that helped the texture too.

    I have lots of carrots (food pantry), but I have more room in my freezer than shelf space, so tomorrow I'll blanch & freeze them.
    I have gotten lots of zuchini from my neighbor & the pantry. I shredded them & froze them in 1 cup portions. Good idea about the peels & end pieces. I'll start doing that. Many years ago I made apple peel jelly from apple peels. Mmmm.

    Hi Tamara. Love watching you can/prep. Winston looked so serious peeling his potato-what a big helper. Sweet Max--my Gideon likes carrots but he will not eat them in chunks. I have to make them smaller or he will do what Max did and just drop them at my feet LOL. Hugs.

    We hate canned store carrots but was curious about canning my own and I did a small batch of both baby wholes and large chunked regular carrots and I’m sold! Yes, they’re soft but not tasteless and mushy like store bought. I added homemade onion soup mix to mine. I also can potatoes, Yukon and reds, and they’re always fantastic! So versatile.

    Good to know about the texture of the carrots being different as chunks. Earlier this summer I had gotten 10 bags of baby carrots for free that I canned up. I haven't eaten any of them yet. Now I'm anxious to see what their texture is like. Like you, I'm always watching for deals on things I can preserve. One thing I tried with onions is I had a bowl of water right next to where I was chopping the onions and it really helped with the fumes and my eyes. I have no idea why it worked, but it did. I have onions in the freezer, and I've heard they weren't as potent after freezing. I'm going to have to try it. I can put them in my dehydrator in my basement. Oh and by the way, your hair looks beautiful!

      I hope you aren't disappointed but baby carrots don't come out the same as regular carrots as well as not lasting as long on the shelves. Open one jar & try them then move them to the front of the line for use.

      I’m not a tutorial channel, just share my love for canning. There are loads of videos on RUclips, tiktok and even blogs online. I google every thing. Timing can be different depending on your altitude, so I just don’t go into detail on that stuff.

      I have some books, but don’t use them a lot. I have some linked in my amazon store front. My electric pressure canner linked as well. I just watched a lot of “how to” videos on RUclips and tiktok. Pinterest for recipes, etc. I’m not a canning tutorial channel, but you can find so many “how to” videos online. Just remember to do your own research. Timings are different depending on what altitude you are in. Google is my best friend when I comes to looking up times. Some stuff is water bath canned and some stuff is pressure canned! Keep researching and you will be ready soon! It’s such a blessing!! Happy future canning! ❤️

    The one time I canned baby carrots they were mushy. I may try again. I like the idea of chunks. Do you think that they’re holding their shape better than sliced?

      No. I don’t add cost for lids or jars. Jars are reusable and I get the lids for free since people use my commission link I use that money to buy them.

    I use the ball brand fruit fresh produce protecter powder when soaking my potatoes before canning. It says it prevents browning in the jar. Are yours fine without it? Just asking because I never tried without it. I also heard you can use crused vitamin C tablets to prevent browning. I'm actually going to try canning the french fry style potatoes for the 1st time this weekend!!

    Potatoes, green beans, carrots and some others can be dry packed & canned. They retain texture & flavor much better. I know it isn't an "approved" USDA method for canning but not everything has been tested here or approved for the general public. Also, if you use a little calcium carbonate (pickle crisp) in your soak water, it helps with the potatoes diced or sliced for fries.

    I just got an electric pressure canner as a gift. I was wondering if some of the water comes out of your jar when you can? Have you canned any corn? I did some in August it seems a very long time to can, 85 mins.

      That’s called siphoning. It can happen. Just make sure your rings are on good to help from it happening, but it’s common. As long as the liquid is 3/4 full in the jars you should be safe. I have canned corn. We love it! It’s 55 minutes for pints and 85 for quarts in my area.

      When you can your potatoes, do you just use russet? Also, how long do you put in the pressure canner?

      No, you can use any potatoes. Even sweet potatoes. Please google for timing. Every area is different depending on altitude.

      Thank you for all your input. I really enjoy your videos. My homemaking is like yours, canning, cleaning, cooking,and taking care of family. Now that I'm a grandmother, things shift a little. I also know about going to sporting events with my boys. Again, I enjoy and wait for your videos. Keep yourself healthy and always take time for yourself, I don't do that for myself.
