    Hey hey! I forgot to mention a few things in today’s video 🫣 just a few🤣
    Practice, practice and practice! It might take some time to get the shaping down, but you will get it! Don’t give up just because your hot dog bun looks like a dog bone 🤦🏻‍♀️🤣 It doesn’t have to look perfect to taste good!
    Your homemade breads aren’t going to look or taste like store bought! So try not to compare them! You are using less ingredients, but good ingredients! No additives, etc! So they won’t be the same.
    Blooming yeast: temperature of water should be 110-120 degrees. If it’s too warm/hot it will kill your yeast. Blooming yeast before helps insure that your yeast is active and helps incorporate better into your dough because it is already dissolved. If it doesn’t bloom in 5-10 minutes then it probably bad/old yeast. Best place to store yeast is the fridge or freezer!
    Be careful adding salt directly to bloomed yeast, because the salt can kill it as well. If I’m adding salt to a bread recipe I add it to the top of the flour, so it’s not directly on the yeast water. For both bread machine recipes and non.
    For the Dutch oven loaves: The recipe I used doesn’t have directions for baking it in a Dutch oven. But I loved the recipe so much I tried it and I’ve been making it ever since. I preheat my Dutch oven in the oven at 425-450 before adding my loaf. (Everyones ovens bake differently, so test out what temperature works best for you) If you want a darker/harder crust for the Dutch oven style take the lid off for the last 10-15 minutes of baking and that will help get some color on the crust. For the same recipe, but not in a Dutch oven. If you add a small oven safe pan with ice in with the bread as it bakes it will help make for a beautiful crust and a soft inside! 🤩 promise!
    When you find a recipe you love don’t be afraid to play around with the shape and bake of it! I use a lot of base recipes and make several different breads out of it! You can also add in extra ingredients to the base recipe. I’ve made a pepperoni and cheese loaf and it was delicious! You can do sweet or savory. Baking is definitely a science, but you can have so much fun with it!
    Baking all of these this past month has brought me back to baking class in culinary school! That was my favorite class I absolutely loved baking breads! If I could have only done baking I probably would’ve been more likely to stay in school, but if I had of stayed in school I probably wouldn’t have started a RUclips channel and have 27.1k friends to share my homemaking life with!     Oh, my Heavens... those bagels?! I imagine they'd freeze beautifully if you made a double batch & wanted to keep some for later. And those hamburger/hotdog & sub rolls looked perfect (hamburger buns didn't look overdone to me). Best part of this whole video was hearing the happiness & joy just bursting from you as you shared these delicious recipes.

    Those bagels look amazing! That is one thing I've never tried before, but you made them look easy. I need to try this. I've made hamburger buns not too long ago, but I'm going to try your recipe. You make all these look so easy and make me want to get in my kitchen and bake.

    I’m SO impressed you can do all this baking from scratch! I’ve always been intimidated by yeast (my mom could never make anything with yeast). I now live alone… so baking all the bread products doesn’t make sense. 🙂

    Love this video Tamara! A lot of people are afraid to deal with yeast but it is pretty easy like you show. I just keep my yeast in the freezer and it lasts forever. Oh I remember you saying in another video that your recipe made too much Amish sourdough starter. I just half all the ingredients in the recipe and it works just as well without having too much to deal with or trying to find friends that want it later. Thanks for inspiring me to bake bagels they looked outstanding. I find the same enjoyment out of baking breads and making it a bit more special like adding garlic and cheese to them. YUM!

    This video inspired me to make bread again. I used to make everything from scratch while my children were young, and got away from it now that they are grown. However, I made the bread today using the base recipe. It was really yummy! I don't use a breadmaker, but have a kitchen aid so it did the initial mix for me and I kneaded it by hand after that, simply because it was a cold rainy Saturday here and we had a fire going in the fireplace. After a rough week there was something comforting about making bread from scratch. :) So thank you for the inspiration! My kitchen did not get as warm as I wanted so it took a little longer to rise but it is ok, it turned out beautifully and my house smelled so cozy. xoxo will be using this recipe to try pretzels or something else next.

    My first time making bagels and it was soooo easy...awkward, but easy! When I split my dough in half, I added raisins and cinnamon to one half and blueberries to the other half. They were a little funky looking but tasted awesome! I'm guessing you can use this same process to make pretzels, which is next on my "to-try" list. Thank you for sharing!!!

    Stopping back in to say today I attempted (and pretty sure I succeeded) in cooking the milk and honey loaf! My first time ever making bread and my house smells INSANE 🤤🤤🤤. I got a bread machine for 10$ at a resale store and used it to knead and proof the dough before baking it.

    Its been one of my stretch goals for 2023 to move towards all homemade breads. I'm making all our sandwich bread and hoagie rolls and pizza dough but I still need to expand into things like bagels and english muffins and tortillas and burger buns. I'm finding it hard to get a routine going each week that's manageable for keeping up with it, I don't want it to feel like a gerbil wheel but sometimes it does. Maybe I just need to make ahead and freeze more. The result is so much better tasting than store bought though so I'm gonna keep pecking away at it.

      I try to do all my baking for us on Sundays, so it’s ready for the week. I do make another loaf of sandwich bread midweek. I’ve not tried freezing them yet, so I don’t know how it would be thawed. You will get a schedule down! ❤️

    Hey Tamara! I commented last week that I was trying your bagel recipe & have been making the milk & honey bread for a while. I followed your directions to a T but my bagels came out a bit flat. They were delicious, great bagel texture with a little bagel chew. But not nice & browned & fluffy. Should I have let them rise once formed like I do with the bread (when I put it in the loaf pan about 30 min before baking?) I just took the dough out of the bread machine, formed the bagels and put in my boiling water with the baking soda. They were great, but yours looked so much bigger and better.

      Hey! I don’t let them rise once I shape them, but I don’t see why you couldn’t try it. If they are getting a “air” crust on them before you are boiling them it could cause them to not fluff up. You can always keep them covered with a towel while you are working on them in batches. So the dough isn’t getting that crust while they are waiting to be boiled. If that makes sense 🫣🤣

      @@SouthernWifeEverydayLife that does make sense! I formed 1/2 the batch into a smaller loaf than usual in a smaller pan for bread for the week. THEN formed the bagels with the remaining dough and kinda took my time. I'm going to try setting out a sheet pan & covering as I go next time & then let them all rest under a clean towel for 30 min.Thank you!

      They won’t rise like raw dough after they are boiled. But you can shape and rise then boil!

    Hi! I have been watching g and using your breads recipes.. yum. You have mentioned using one of them for cinnamon rolls… is that your milk and honey one? Can you make ahead? Do you have a video for cinnamon rolls by chance? Sorry for all the questions, lots of videos to search through… ty!!

      I have made cinnamon rolls a few times on here, but don’t remember what video. I do use my milk and honey loaf dough recipe. Use that, roll it thin, add butter, brown sugar, and cinnamon. Roll them up and cut. Bake 325

    I just looked and your bread recipe is for the bread machine, but you did say I can make it without using a bread machine and use the same amount of ingredients? I have a bread machine, but it isn't as big as yours and I can't see 6 cups of flour fitting in it.

      Yes! You can half the recipe or just make it in a mixer/by hand. Mix it till it forms a dough ball nothing sticking to the sides kneed it for 5-8 minutes. Let it rise on the counter covered and then shape and rise again then bake.
