    My gran made us fluffy pudding - a packet of jelly (mixed with 200 ml water & allowed to cool, not set) mixed into beaten & slightly sweetened evaporated milk. Can be poured on top of a base of biscuit pastry to turn it into a fridge tart. Can be served topped with sweetened whipped cream and / or cold custard.
    I like this recipe too though - added to my recipe book! Thanks.
    I'm plant based so I make my own jelly using agar agar.
    It gets very hot in my country; fridge tarts are a staple in summer (especially over Christmas).

    Very elegant but simple dessert. Could use almost any variation of fruit with corresponding jelly powder. Looks like a crowd pleaser.

    I remember making these types of desserts in my school cooking class in the 1970's in a country town in Queensland. It was called jelly fluff and we used evaporated milk instead of cream.

      Me too, can of evaporated milk and jelly whisked together, one of the first things we did in cookery classes

    This was a huge hit as a Thanksgiving dessert. We might try other flavour combinations also...strawberry? Raspberry? Peach?

    An egg white mixed in with the crumbs and par baked will allow for a much thinner layer of crumbs that is crispy.

    Tip: mix in some melted pure chocolate with the butter and the crumbs (use a little less butter). My family's favourite (cheese/yoghurt) cake bottom in combination with mandarine, strawberry, cherry or whatever. The use of jelly powder instead of plain gelatine is brilliant. Thanks!

      Thanks for the tip. The jelly powder or even the jelly cubes melted puts that faint flavour through there. This is open to so many variations with fruit and different flavours its one to keep in the mind for a quick light dessert. Best, Rik

    I've just discovered a class of recipes aka "struggle foods" that developed, as far as I can gather, during the usa great depression. The recipes use minimal ingredients & innovative techniques - quite fascinating!

    Our recipe uses chilled canned evaporated milk. We whip it with mixer for the volume. We make it with lemon lime jelly mix. My sister in law's recipe has philedalphia creamed cheese in it too. I like it both ways.

    Would never have thought of mixing jelly with cream. Love jelly cubes raw....got a gazillion blackcurrant. Will give it a go with those. Looks amazing 🤤

    My mom makes something similar but uses whipped cream and mixes the jello and oranges through out. Not mixed to much and puts into a bowl and chills a nice light treat.

    Merry Christmas Rik, I tried your strawberry one for Christmas day. Mixed result my fault I forgot to line the tin. I found the base a bit thick for my liking so I'll cut down on the amount of crumb, tasted good though my Mrs enjoyed so happy wife happy life all the best.

    Here in the States, we need to know the American equivalent of a 'digestive' biscuit. I'm thinking I could make the crust with graham crackers, but your biscuits look much lighter than a graham cracker. Maybe vanilla wafers?
    The 'jelly' powder is, I'm sure, what we call gelatin (brand name Jell-o). I'm thinking pineapple flavored would go well with the oranges, but WOW! 'As is' this is the ultimate 'cream-cicle'!

      You know this can be made with those jelly cubes that you pour boiling water on - it's basically the jelly mix you pour into the cream that makes this set up beautifully. Best, Rik @@GaryRance
